My niece introduced me to this colorful recipe some time ago. I make it when I have buffets or large gatherings because it can be prepared hours ahead. This is a wonderful way to use a bumper crop of tomatoes. -Myrtle Matthews, Marietta, Georgia

3 large or 5 medium fresh tomatoes, thickly sliced
1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon salt, optional
1/4 teaspoon pepper
1/2 garlic clove, minced
2 tablespoons chopped onion
1 tablespoon minced fresh parsley
1 tablespoon minced fresh basil or 1 teaspoon dried basil

Steps:

  • Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.

A great tasting fresh tomato side dish for breakfast, lunch or dinner! I am looking forward to making this in the summertime, with fresh garden tomatoes (a combination of red & yellow heirloom tomatoes is my fav). From The Great Tomato Cookbook.

3 tablespoons olive oil
2 tablespoons lemon juice (or vinegar)
1/4 teaspoon ground cumin (optional)
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 teaspoon sugar
1 pinch turmeric (optional)
3 tomatoes, sliced
1/4 cup chopped green onion (or chopped or thinly sliced regular onions)
2 tablespoons chopped parsley

Steps:

  • Combine oil, lemon juice, cumin, salt, pepper, sugar and turmeric in screw-top jar. Shake well to blend.
  • Place sliced tomatoes on serving plate. Sprinkle with onion and parsley. Pour dressing over. Let stand at room temperature 1 hour, then chill well.
  • Makes 6 servings.
  • Note: Cook time is stand time, and chill time.

6 large tomatoes, cut into wedges
1/2 cup thinly sliced green onions
1/3 cup olive oil
1/4 cup red wine vinegar
1/4 cup minced fresh parsley
2 garlic cloves, minced

1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon coarsely ground pepper

3 extra-large tomatoes (about 2 pounds)
1/3 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons finely chopped red onion
1 large clove (or two small cloves garlic, finely minced or crushed)
1 tablespoon minced fresh parsley (plus additional for garnish)
1 tablespoon minced fresh basil (plus additional for garnish)
1 teaspoon salt
Freshly ground black pepper (to taste)

Steps:

  • Cut the tomatoes into 1/2-inch thick slices and arrange in a single layer in a large, shallow dish. Measure the oil, vinegar, onion, garlic, parsley, basil, salt, and pepper in a jar with a tight-fitting lid. Shake vigorously to combine and evenly pour over the tomatoes in the dish. Cover and marinate for 2 to 3 hours on the counter, or 12 to 24 hours in the refrigerator. Bring chilled tomatoes to room temperature before serving. Transfer tomatoes to serving dishes, spoon juices over the tops, and garnish with additional chopped fresh herbs, if desired.
