Grilled Short Ribs and Lettuces with Mustard-Orange Dressing image

You should be grilling flanken-style short ribs this summer: They're an affordable, quick-cooking weeknight dinner option. The ribs benefit from a bittersweet and mustardy orange marmalade marinade, and those flavors reappear as a dressing on grilled romaine and radicchio. It's a completely new spin on steak and salad-and perfect for a family feast.

1 tsp. crushed red pepper flakes (optional)
1/2 cup plus 1 tsp. orange marmalade
2 Tbsp. plus 2 tsp. whole grain mustard, divided
3 Tbsp. white wine vinegar, divided
1 tsp. freshly ground black pepper, divided, plus more
3 lb. (1/4"-1/2"-thick) crosscut bone-in beef short ribs (flanken style)
3 1/2 tsp. kosher salt, divided, plus more
2 garlic cloves, finely grated
1/4 cup plus 2 Tbsp. extra-virgin olive oil, plus more for grill and drizzling
2 romaine hearts, halved lengthwise
1 head of radicchio, quartered through core
Crusty bread (for serving; optional)

Steps:

  • Stir red pepper flakes (if using), 1/2 cup marmalade, 2 Tbsp. mustard, 1 Tbsp. vinegar, and 1/2 tsp. black pepper in a small bowl.
  • Place ribs in a glass baking dish; season all over with 2 tsp. salt. Pour marinade over and turn ribs to coat. Let sit at room temperature at least 15 minutes and up to 1 hour.
  • Whisk garlic, 1/4 cup plus 2 Tbsp. oil, 1/2 tsp. salt, 1/2 tsp. pepper, and remaining 1 tsp. marmalade, 2 tsp. mustard, and 2 Tbsp. vinegar in a small bowl or measuring cup.
  • Prepare a grill for high heat; oil grate. Grill ribs until lightly charred and crisp around the edges, about 2 minutes per side. Transfer to a platter, season with salt, and let rest 5 minutes.
  • Drizzle cut sides of romaine and radicchio with oil, then season with 1 tsp. salt. Grill, turning occasionally, until lightly charred and warmed through, about 2 minutes for the romaine and 5 minutes for the radicchio. If using bread, grill alongside radicchio until lightly charred and warmed through, about 2 minutes per side. Transfer to platter with ribs.
  • Pour dressing over charred lettuces and ribs; season with more salt and pepper.
  • Do Ahead: Marinade and dressing can be made 1 day ahead. Cover and chill. Ribs can be marinated 8 hours ahead. Cover and chill then let sit at room temperature at least 15 minutes and up to 1 hour before grilling.

2 lb Miami-cut Beef Short Ribs
1 cup plain yogurt
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon coriander
½ teaspoon chili flakes
½ teaspoon cumin
1 teaspoon sriracha
1 teaspoon honey
½ bunch fresh cilantro, finely chopped
2 limes, quartered for squeezing

Steps:

  • In a large mixing bowl, make your marinade by whisking together the yogurt, olive oil, paprika, coriander, chili flake, cumin, sriracha, and honey. Add the short ribs, and coat the beef in the marinade well. Wrap, set in the fridge and allow to marinade for at least 4 hours, up to overnight.
  • When ready to grill, remove the beef from the fridge at least 30 minutes before cooking, and allow to come up to room temperature. Then, heat your greased grill on medium-high and add the short ribs, seasoning with a generous pinch of salt. Cook for 2 - 3 minutes, then flip and cook for an additional 2 - 3 minutes, with an additional pinch of salt. Remove and allow the beef to rest for 5 minutes, then garnish with fresh cilantro and lime wedges for squeezing. Enjoy!

six 1 1/2- to 2-inch-thick beef short ribs, trimmed of excess fat on the meat side
5 garlic cloves, forced through a garlic press or minced
1/2 cup soy sauce
3 tablespoons Oriental sesame oil
2 teaspoons minced fresh gingerroot
3 tablespoons sugar
2 teaspoons distilled white vinegar
2 teaspoons sesame seeds
1 teaspoon freshly ground black pepper
18 scallions, trimmed

Steps:

  • Cut through the meaty side of each short rib to the bone at 1/2-inch intervals, leaving the meat attached to the bone. In a bowl whisk together well the garlic, the soy sauce, the oil, the gingerroot, the sugar, the vinegar, the sesame seeds, and the pepper and coat each rib thoroughly with the marinade, transferring the ribs as they are coated to a large resealable plastic bag. Add the scallions and any remaining marinade to the bag, seal the bag, and let the mixture marinate, chilled, turning the bag occasionally, overnight.
  • Grill the ribs, the marinade discarded, meaty side down, on an oiled rack set 5 to 6 inches over glowing coals for 8 minutes, turn them, and grill them for 6 minutes more for medium-rare meat. Grill the scallions, turning them occasionally, for 4 minutes, or until they are just browned.

1/2 cup balsamic vinegar
1/2 cup apple juice
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons olive oil
1 teaspoon dry mustard

3 1/2 to 4 lb. beef short ribs, trimmed
2 tablespoons chili sauce
2 tablespoons finely chopped fresh parsley

Steps:

  • In 12x8-inch (2-quart) glass baking dish or large resealable food storage plastic bag, combine vinegar, apple juice, brown sugar, soy sauce, oil, dry mustard and pepper; mix well. Add ribs, turning to coat. Cover dish or seal bag. Refrigerate at least 8 hours or up to 24 hours to marinate.
  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer or see p. 40 (Kitchen Tip). When grill is heated, remove ribs from marinade; reserve and refrigerate marinade. Place ribs on grill directly over drip pan. Cover grill; cook 2 to 2 1/4 hours or until tender, turning occasionally.
  • During last 30 minutes of cooking time, in small saucepan, combine reserved marinade and chili sauce; mix well. Bring to a boil. Reduce heat to medium-low; simmer 20 to 30 minutes or until slightly thickened and reduced, stirring occasionally. (Sauce will be similar to syrup.) Serve sauce with ribs.
