Fresh, sweet taste, so much better than store-bought, and so easy! Use these marinated peppers as an antipasto, or a very healthy sandwich filling. Experiment with different herbs such as rosemary or Italian seasoning. My favorite is basil. Marinade also makes a wonderful salad dressing when the peppers have been eaten!

4 large red bell peppers, halved, with stems and seeds removed
¼ cup olive oil
2 cloves garlic, pressed
1 tablespoon balsamic vinegar
½ teaspoon salt
½ teaspoon dried basil
¼ teaspoon seasoned pepper

Steps:

  • Set an oven rack about 4 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Place bell peppers, skin side-up, on the prepared baking sheet.
  • Broil peppers in the preheated oven until skin is blistered and blackened, 15 to 20 minutes.
  • Remove peppers from the oven and immediately transfer to a plastic or paper bag, seal, and set aside for 20 minutes. Peel off blackened skin and cut peppers into 1/2-inch strips.
  • Combine olive oil, garlic, balsamic vinegar, salt, basil, and seasoned pepper in a wide-mouth jar and shake until marinade is well blended. Place pepper slices into the jar, shake, and refrigerate until fully cooled and flavors have melded, 3 hours to overnight.

3 large red bell peppers
2 pounds slender green beans, trimmed
3/4 cup olive oil
1/3 cup red wine vinegar
3 garlic cloves, minced
Lettuce leaves (optional)

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel and seed peppers. Cut into 1/2-inch-wide strips. Transfer to large bowl. Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain. Transfer to bowl of ice water to cool. Drain well. Add to bowl with peppers.
  • Whisk oil, vinegar and garlic in small bowl to blend well. Pour over vegetables; toss. Season to taste with salt and pepper. Cover; chill up to 6 hours.
  • Line large bowl with lettuce leaves, if desired. Mound vegetables in center.

3 large (about 2 pounds) red bell peppers
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper

Steps:

  • Lay peppers on their sides on racks of gas burners and turn flames on moderately high. Roast, turning frequently with tongs, until skins are blackened, 5 to 8 minutes. (Or broil on rack of a broiler pan about 4 inches from heat, turning frequently, 15 to 20 minutes.)
  • Transfer to a bowl, then cover, and let steam 10 minutes. Alternatively, place peppers in resealable plastic bags to steam. Peel peppers and discard stems and seeds. Cut lengthwise into 1-inch-wide strips.
  • In a bowl, place cleaned peppers. Douse with balsamic vinegar, salt, and pepper, to taste.

2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 clove garlic, grated
1 teaspoon dijon mustard
1 teaspoon honey
1 teaspoon oregano
salt and pepper to taste
1 cup roasted red peppers, diced
1/4 cup feta, crumbled
1/4 cup kalamata olives, finely chopped
2 tablespoons red onion, finely chopped
1 1/2 pounds asparagus, trimmed
1 tablespoon oil
salt and pepper to taste

Steps:

  • Mix everything well.
  • Mix marinade into the roasted red pepper, feta, kalamata olives and red onions and optionally marinade for 20 minutes to over night or even longer.
  • Toss the asparagus in the oil, salt and pepper and grill over medium-high heat until tender and slightly charred.

1/4 cup canola oil
1/2 cup cola
1 tablespoon molasses
1 tablespoon soy sauce
1 tablespoon red pepper flakes
2 tablespoons minced garlic
1 tablespoon freshly cracked black pepper
1 lime, juiced
1 (2-pound) flank steak, trimmed
1 baguette, cut on the bias into 1/2-inch thick slices
1/2 cup extra-virgin olive oil
1 (8-ounce) container herb-seasoned cream cheese
1 (10-ounce) jar red pepper strips
3 tablespoons chopped cilantro leaves

Steps:

  • In a small bowl mix together the oil, cola, molasses, soy sauce, red pepper flakes, garlic, black pepper and lime juice. Put the steak into a large shallow bowl and pour in the marinade. Move the steak around to assure the marinade is covering the meat. Allow to marinate 2 hours or up to 4 hours in the refrigerator.
  • Preheat the grill over medium heat.
  • Remove the steak from the marinade and put it on the grill. Cook for 4 minutes on each side. Remove from the grill to a cutting board and let rest for 5 minutes.
  • Brush the bread slices with cream cheese. Slice the steak against the grain into very thin strips. Top the cheese with a strip of meat and a red pepper strip. Garnish with chopped cilantro and serve.

Bell peppers are roasted largely to remove the skins, which makes the vegetables supple and almost silky and perfect for marinating in a fragrant mix of oil, garlic, and basil. (This works for orange and yellow peppers, too, but not for green, because the skin is too thin.) Many recipes call for cutting the peppers into pieces lengthwise and roasting under the broiler, but it can be difficult to make the pieces flat enough to blacken evenly. It's easier to roast them right on the stove, over a gas burner, turning with tongs as each side blackens. Serve the marinated pieces as part of an antipasto with bread, cheese, olives, and cured meats, or toss them into pastas or over a pizza.

2 red bell peppers
1/2 cup extra-virgin olive oil
3 tablespoons balsamic vinegar
1 garlic clove, peeled and very thinly sliced lengthwise
Coarse salt and freshly ground pepper

Steps:

  • Roast Place bell peppers directly over a gas flame and cook, turning with tongs, until charred all over.
  • Steam and peel Transfer to a bowl and cover tightly with plastic wrap. Let stand until cool enough to handle, about 10 minutes, then rub off skins with a paper towel. (Do not run peppers under water, or you will wash away the flavor.) Remove seeds and veins and discard.
  • Marinate Slice peppers into 1-inch-wide strips. Transfer to a bowl and toss with oil, vinegar, and garlic. Season with salt and pepper, and toss with basil. Serve immediately, or refrigerate, covered, up to 3 days. If refrigerating, bring to room temperature and wait until just before serving to add basil.
