MEDITERRANEAN PASTA W/ ROASTED RED PEPPERS AND ARTICHOKES



Mediterranean Pasta w/ Roasted Red Peppers and Artichokes image

A 20 minute pasta dish with lots of flavor and no guilt.

16 ounces penne pasta (or pasta of choice (gluten free, if desired))
1 jar (12 ounces) roasted red peppers (drained and chopped)
1 jar (12 ounces) artichoke hearts (drained and chopped)
1 pint cherry tomatoes (halved)
2 tablespoons extra virgin olive oil
2 garlic cloves (minced)
juice and zest of 1 medium lemon
1 tablespoon dried oregano
salt and pepper (to taste)
1/4 cup sliced pitted Greek olives (optional)

Steps:

  • Cook penne according to package directions.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute until fragrant.
  • Add the peppers, artichokes and tomatoes and cook, stirring frequently, until veggies start to give off some liquid. About 15 minutes.
  • Add the lemon juice, lemon zest, olives (if using), oregano, salt and pepper and stir. Cook for 1-2 minutes to combine the flavors.
  • When penne is done, drain and add to the vegetables. Toss well to combine. Taste and adjust seasoning, if necessary. Add another squeeze of lemon, extra dash of salt, or perhaps a drizzle of olive oil, if desired.
  • Serve with some crusty bread of course!

3 red bell peppers
3 yellow bell peppers
2 garlic cloves
two 14-ounce cans whole artichoke hearts
2/3 cup packed fresh flat-leafed parsley leaves
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 tablespoons fresh lemon juice
2/3 cup brine-cured black olives
Accompaniment: crusty Italian bread

Steps:

  • Quick-roast and peel bell peppers . Cut roasted peppers into 3/4-inch-wide strips. Mince garlic. Rinse and drain artichoke hearts. Pat artichokes dry and cut through stem ends into quarters. Chop parsley.
  • In a 12-inch heavy skillet cook garlic in oil and butter over moderate heat, stirring, until fragrant. Add artichokes and cook, stirring, until heated through, about 3 minutes. Stir in roasted peppers, parsley, remaining ingredients, and salt and pepper to taste until combined.
  • Serve antipasto at room temperature with bread.

1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 ½ cloves garlic, sliced
1 tablespoon balsamic vinegar
¼ cup extra virgin olive oil
½ teaspoon chopped fresh basil
½ teaspoon chopped fresh parsley
salt and pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (200 degrees C). Place the whole red, green and yellow peppers in the oven directly on the rack. Roast for about 15 minutes, turning if needed, until the skin is well scorched. Immediately place in a bowl covered with plastic wrap or in a paper bag, and allow to cool.
  • Remove the skins from the peppers by rubbing with your hands, and rinse under cold water. Cut in half, remove stem and seeds, then cut into strips.
  • Place peppers into a medium serving bowl, and stir in the garlic, vinegar, oil, basil, parsley, salt and pepper.

I found this in an issue of Coastal Living. "Roasting the peppers adds a subtle, smoky flavor to this super easy and flavorful appetizer. Serve in small bowls as an antipasto along with bread sticks, aged cheese, and cured meats." I made this as directed and it was VERY garlicky. I like garlic but, wow; use your own discretion on that part :)

3 - red bell peppers
3 - yellow bell pepper
5 - garlic cloves, sliced
1 cup(s) mixed olives
3/4 cup(s) extra virgin olive oil
1/3 cup(s) sherry vinegar
1 teaspoon(s) herbes de provence or dried italian seasoning
1/2 teaspoon(s) salt
1/2 teaspoon(s) coarsley ground black pepper
2 - 14 oz. cans quartered artichoke hearts, drained

Steps:

  • Preheat broiler with rack 6 inches away from heat.
  • Cut peppers in half lengthwise; discard seeds and membranes. Place peppers skin side up, on aluminum foil lined baking sheet.Broil, turning once, 15 minutes or until blackened and charred.Place peppers in a plastic bag, and seal. Let stand 15 minutes. Peel and discard skins; cut pepper into strips.
  • Combine peppers and remaining ingredients in a large bowl. Transfer to 2 (1 quart) jars, if desired. Will keep in refrigerator up to 3 weeks. Makes 7 cups.

4 bell peppers
1/4 cup olive oil
2 wide strips lemon zest, plus 2 tablespoons fresh lemon juice
2 garlic cloves, smashed
3 sprigs fresh oregano
1/2 teaspoon coarse salt
1/8 teaspoon ground pepper

Steps:

  • Preheat oven to 425 degrees. Place peppers on a rimmed baking sheet; rub with 1 tablespoon oil. Roast until peppers are soft and skins have split, 30 to 35 minutes. Transfer peppers to a medium bowl. Cover bowl tightly with plastic wrap and let peppers steam 20 minutes.
  • Peel peppers, slice in half lengthwise, and remove ribs and seeds. Cut into 1-inch-wide strips and return to bowl. Add lemon zest and juice, garlic, oregano, salt, pepper, and 3 tablespoons oil and toss.

I created this recipe with simple ingredients that are already found in the kitchen. It's delicious by itself, but feel free to experiment and even make your own artichoke salad. It's not like the real deal...it's better! Enjoy immediately or chill the marinated artichokes for at least an hour before serving.

1/4 teaspoon black pepper (adjust to taste)
4 tablespoons olive oil
2 garlic cloves, chopped
8 ounces chicken breasts, cubed
4 roasted red peppers (from a jar cut into strips)
40 medium olives
1 (12 ounce) jar marinated artichokes
8 ounces dry pasta (works better with short pasta)

Steps:

  • Cook Pasta.
  • While pasta cooks.
  • Add the pepper to the flour.
  • Coat the chicken with the flour and pepper mixture.
  • Cook garlic about 2 minutes in oil over medium low heat.
  • Add chicken and cook until lightly browned.
  • Add the peppers and olives, cook until just heated though.
  • Add artichokes with liquid and cooked until everything is heated through.
  • Serve over the pasta.

3/4 cup finely chopped onion
1 1/2 tablespoons minced drained bottled pepperoncini peppers (Italian pickled peppers)
1/4 cup olive oil
1/3 cup dry white wine
1 (32 ounce) can plum tomatoes, chopped
2 (5 ounce) jars marinated artichoke hearts, drained well and halved
1/2 cup chopped pitted kalamata olive
1/3 cup minced fresh parsley

Steps:

  • In a large skillet cook garlic, onion and peperoncini in oil over moderately-low heat, stirring, until onion is softened, add wine and boil 3-5 minutes, or until wine is almost evaporated.
  • Add tomatoes and simmer, stirring occasionally, for 20 minutes, or until the sauce is thickened.
  • Stir in artichokes and olives and simmer sauce for 5 minutes and stir in parsley and season to taste.
  • Enough for 1 lb of pasta, such as penne.
