4 cups baby sweet peppers
1/2 cup extra-virgin olive oil
3 garlic cloves, crushed
1 teaspoon grated lemon rind
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
3 ounces baby mozzarella cheese (balls)
1/4 cup fresh small basil leaves
1 teaspoon fresh lemon juice

Steps:

  • Preheat broiler to high.
  • Arrange the baby peppers in a single layer on a foil-lined jelly roll pan, and broil peppers for 4 minutes on each side or until blackened and tender.
  • Cool, Combine peppers, olive oil, garlic cloves, lemon rind, red pepper, salt,and mozzarella balls, and toss.
  • Cover, and refrigerate overnight, tossing after 6 hours.
  • Let stand at room temperature for 30 minutes.
  • Stir in basil leaves, and lemon juice before serving.
  • Serve with a slotted spoon.

6 large red or green bell peppers
1 cup whole Greek or pitted ripe olives
4 ounces mozzarella cheese, cut into cubes
1/4 cup olive or vegetable oil
1/4 cup lemon juice
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
1 teaspoon chopped fresh basil leaves or 1/4 teaspoon dried basil leaves
1/2 teaspoon chopped fresh sage leaves or 1/8 teaspoon dried sage leaves
1/2 teaspoon salt
1/8 teaspoon pepper
2 large garlic cloves, finely chopped

Steps:

  • Set oven control to broil.
  • Broil bell peppers with tops about 5 inches from heat, turning occasionally, until skin is blistered and evenly browned. Place peppers in a plastic bag and close tightly. Let stand 20 minutes.
  • Remove skin, stems, seeds and membranes from peppers. Cut peppers into 1/4-inch strips. Place peppers, olives and cheese in glass bowl or jar.
  • Shake remaining ingredients in tightly covered container; pour over pepper mixture. Cover and refrigerate at least 4 hours to blend flavors, stirring occasionally.
  • Store tightly covered in refrigerator up to 2 weeks.

4 bell peppers
1/4 cup olive oil
2 wide strips lemon zest, plus 2 tablespoons fresh lemon juice
2 garlic cloves, smashed
3 sprigs fresh oregano
1/2 teaspoon coarse salt
1/8 teaspoon ground pepper

Steps:

  • Preheat oven to 425 degrees. Place peppers on a rimmed baking sheet; rub with 1 tablespoon oil. Roast until peppers are soft and skins have split, 30 to 35 minutes. Transfer peppers to a medium bowl. Cover bowl tightly with plastic wrap and let peppers steam 20 minutes.
  • Peel peppers, slice in half lengthwise, and remove ribs and seeds. Cut into 1-inch-wide strips and return to bowl. Add lemon zest and juice, garlic, oregano, salt, pepper, and 3 tablespoons oil and toss.

1 pound mozzarella cheese, cut into 1-inch cubes
1 jar (7 ounces) roasted red peppers, drained and cut into bite-size pieces
6 fresh thyme sprigs
2 garlic cloves, minced
1-1/4 cups olive oil
2 tablespoons minced fresh rosemary
2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
Bread or crackers

  • In a quart jar with a tight-fitting lid, layer a third of the cheese, peppers, thyme and garlic. 3/4 pound fresh or smoked mozzarella,cut into1/2-inch cubes (about 2 cups)
1/4 cup virgin olive oil
1 garlic clove, minced
1 tablespoon white-wine vinegar
1/2 teaspoon dried orégano, crumbled
1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried thyme, crumbled
1/2 pound (about 25) brine-cured black olives, halved and pitted
2 large red bell peppers, roasted (procedure follows) and cut into 3/4-inch squares
about 50 wooden picks

Steps:

  • To Roast Peppers
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)
  • In a bowl or resealable heavy plastic bag combine the mozzarella, the oil, the garlic, the vinegar, the orĂ©gano, the basil, the thyme, and salt and pepper to taste and let the cheese marinate for at least 4 hours at room temperature or chilled overnight. Thread a mozzarella cube, an olive half, and a roasted pepper square onto each of the wooden picks and arrange the brochettes on a platter. The hors d'oeuvres may be made 4 hours in advance and kept covered.
