MARINATED CUCUMBERS AND ONIONS
This is a recipe that has evolved from my childhood thanks to my bother. was just vinegar sometimes with oil and water added to it. I hated that one but with the addition of soy sauce absolutely love it. Can be made gluten and dairy free just get a soy sauce that is gluten free (wal mart brand) is one that is cheap. Great for when the garden is starting to produce. A nice sweet cucumber is best but even works with a slightly bitter one as it covers the taste and then I don't have to waste it. Posting this as I am tired of asking my brother what all he puts in it, even though its a simple recipe. He normally just does cucumbers but I like the onion to. I imagine it would be good with other veggies like a tomato in it.
