1 1/2 lbs flank steaks
2 tablespoons olive oil
1/4 cup soy sauce
1/4 cup orange juice
2 tablespoons lime juice
1/2 tablespoon brown sugar
1 teaspoon liquid smoke
1 tablespoon ground cumin
1 tablespoon garlic powder
2 teaspoons paprika
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper

Steps:

  • In a sandwhich bag, mix together the cumin, garlic powder, paprika, chili powder, onion, salt, pepper, and cayenne pepper.
  • Combine remaining ingredients (only 2 tbsp olive oil) except steak into a freezer bag or large container for marinating.
  • Add 3 tbsp of the spice mixture to the marinade and mix to combine.
  • perforate steak with a fork in multiple places.
  • add steak to marinade and remove excess air.
  • refrigerate for 4-24 hours (preference).
  • When ready to grill, mix remaining spice mix with 2 tbsp olive oil.
  • Remove steaks from marinade and pat dry (don't remove spices, just so they aren't wet).
  • rub the spice mix/olive oil combo all over the steaks and let them rest at room temperature for 30-60 minutes.
  • Preheat grill or skillet (preferably cast iron) to medium heat (about 5/10).
  • Cook for 5-6 minutes per side depending on thickness. (see below for detailed notes).
  • Remove steak from heat and let rest for 10 minutes before thinly slicing.
  • For cooking in a cast iron skillet:.
  • Gas stove: set to 5/10.
  • Cook for 5 minutes per side for medium (if steak is ~1/2"-3/4" thick).

2 lbs beef skirt steak
1 medium orange, juiced & peeled
1 small onion, sliced
1 large entire jalapeno, sliced
3 tablespoons adobo seasoning
2 tablespoons white vinegar
1/4 cup olive oil
3/4 cup water
2 tablespoons chopped cilantro

Steps:

  • Combine adobo with vinegar, olive oil, water & orange juice in glass bowl or plastic bag. Add meat, onion, jalapeno and orange peel coating everything well with the marinade. Refrigerate for minimum 45 minutes, overnight for extra flavor. Grill or broil until desired doneness. This cut of meat cooks quickly, due to the thin cut. Take off grill. Let rest for 5 minutes under foil. Cut against the grain for tenderness. Garnish with chopped cilantro.
