This calamari is so juicy and tender. The squid is tenderised by overnight soaking in milk. Tossed in flour and deep fried. Serve with a squeeze of lemon and a salad on the side. Any quantities of squid can be used for this recipe- just adjust ingredient amounts to suit.

4 medium squid, use the hoods sliced into rings
1 cup milk
1 garlic cloves or 1 use bottled minced garlic
1 pinch salt
1 pinch pepper
1/2 cup flour or 1/2 cup use gluten-free flour

Steps:

  • Slcie the squid into rings and place in a small mixing bowl.
  • Cover the squid with milk (use more or less as required. Add garlic and season with salt and pepper. Cover and refrigerate for 24 hours (or at least overnight).
  • Drain the calamari and discard the milk. Pat dry with kitchen paper.
  • Toss calamari in flour. I use a large plastic bag to do this.
  • Deep fry until golden. Serve hot.
  • Do not overcook the calamari as it may toughen.
  • NOTE: Cooking time does not include overnight marination time.

2 pounds cleaned small squid
2 tablespoons pure olive oil
2 cloves garlic, minced
2 serrano chiles, seeded and minced
1/3 cup extra-virgin olive oil
2 tablespoons sherry vinegar
Kosher salt and freshly ground black pepper
2 tablespoons roughly chopped celery leaves
2 tablespoons roughly chopped fresh flat-parsley leaves
12 oil-cured Ligurian olives, pitted and halved

Steps:

  • Thinly slice the squid bodies and halve the tentacles.
  • Combine the pure olive oil and garlic in a large skillet and cook, stirring, over medium-high heat until golden brown. Add the chile and squid and cook, stirring constantly, for 1 minute.
  • Transfer the squid to a bowl and mix with the extra-virgin olive oil and vinegar. Season with salt and pepper. Marinate the squid in the refrigerator for at least 1 hour or up to 3 hours.
  • Remove squid from the refrigerator 30 minutes before serving. Add celery leaves, parsley, and olives and mix to combine. Season with salt and pepper. Divide among plates and serve.

2 pounds cleaned calamari (squid), tubes and tentacles separated but whole
1 tablespoon minced garlic $
1 1/2 teaspoons red chile flakes
1/4 cup chopped flat-leaf parsley
2/3 cup extra-virgin olive oil, divided $
1/4 cup fresh lemon juice, divided
1 teaspoon sea salt, divided $
1/2 loaf crusty bread such as ciabatta, cut in half horizontally

Steps:

  • 1. In a medium bowl, combine calamari, garlic, chile flakes, parsley, 1/3 cup oil, 2 tbsp. lemon juice, and 1/2 tsp. salt. Chill, stirring often, 1 to 5 hours. 2. Pour calamari and marinade into a colander over a bowl. Brush marinade over cut sides of bread; grill on each side over high heat (450° to 550°) until grill marks appear, 3 to 5 minutes. Cut into slices. 3. Grill calamari tubes, turning once, just until firm, 3 minutes. Meanwhile, using tongs, drop tentacles in clumps onto grill just to firm up, then spread out to cook evenly, 4 minutes total. Put calamari in a dish and drizzle with remaining oil, lemon juice, and salt. Serve with bread.
