To better control my food allergies, I do a lot of cooking from scratch. Good thing it's one of my favorite pastimes! This is a popular Sunday lunch at our house.

Number Of Ingredients 11

1 cup sour cream
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons celery salt, divided
2 teaspoons paprika, divided
1-1/2 teaspoons salt
1 teaspoon pepper, divided
3/4 teaspoon garlic powder, divided
6 chicken breast halves
3/4 cup crushed butter-flavored crackers
1/2 cup butter, melted, divided

Steps:

  • In a large shallow bowl, combine sour cream, lemon juice, Worcestershire sauce, half of the celery salt and paprika, salt, and half of the pepper and garlic powder. Add chicken; turn to coat well. Cover and refrigerate at least 4 hours. Meanwhile, in a large bag or another bowl, combine crackers and remaining seasonings. Drain chicken, discarding marinade. Shake or dredge chicken in crumb mixture. Place in an ungreased jelly roll or broiler pan; drizzle with 1/4 cup butter. Bake, uncovered, at 325° for 45 minutes. Drizzle with remaining butter; bake 45 minutes longer or until juices run clear.

Another recipe I found in TOH. This is wonderfully flavored chicken breast in a buttery cracker crumb coating that my family all loved. Serve with a side of pasta and salad. Note: May use light or FF sour cream and I also reduced the butter in half for this recipe with great results.

12 - boneless skinless chicken breasts
1 1/2 cup(s) saltine cracker crumbs
1 1/2 cup(s) butter cracker crumbs
1/2 teaspoon(s) garlic salt
1 teaspoon(s) pepper
2 teaspoon(s) paprika
2 teaspoon(s) celery salt
1 tablespoon(s) salt
4 teaspoon(s) worcestershire sauce
1/4 cup(s) lemon juice
2 cup(s) sour cream
1 cup(s) melted butter

Steps:

  • Rinse the chicken and pat dry.
  • Combine the sour cream, lemon juice, worcestershire sauce, salt, celery salt, paprika, pepper and garlic salt in a shallow dish and mix well.
  • Add the chicken, turning to coat. Chill, covered for 8 to 10 hours, turning occasionally.
  • Roll the chicken in a mixture of the butter crackers and saltine crackers. Arrange in a shallow baking pan.
  • Drizzle with ½ of the butter mixture. Bake at 300 degrees for 1 hour.
  • Drizzle with the remaining butter. Bake for 45 minutes longer or until cooked through.
