1/4 cup lemon juice
2 tablespoons vegetable oil
2 tablespoons honey
2 cups cut fresh asparagus (1-inch pieces)
2 cups sliced fresh strawberries

Steps:

  • In a small bowl, combine lemon juice, oil and honey; mix well. Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain and cool. Arrange asparagus and strawberries on individual plates; drizzle with dressing.

2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons honey
3 tablespoons balsamic vinegar
Salt and freshly ground black pepper
2 cups (1-inch pieces) fresh asparagus
8 cups arugula
2 cups sliced fresh strawberries

Steps:

  • In a small bowl whisk the lemon juice, oil, honey, and balsamic vinegar. Season with salt and pepper, to taste. Set aside.
  • Bring a small pot of water to a boil over medium heat. Add the asparagus and cook for 3 minutes. Remove and drain on a paper towel-lined plate.
  • Put 2 cups of arugula on each serving plate, top with strawberries and asparagus and drizzle with the vinaigrette.

1 lb strawberry
2 bunches asparagus
3 tablespoons agave nectar or 3 tablespoons honey
4 tablespoons white balsamic vinegar
4 tablespoons walnut oil, or
4 tablespoons hazelnut oil
2 teaspoons chopped pistachios or 2 teaspoons pecans
sea salt
crushed pink peppercorns
salad greens

Steps:

  • Quarter strawberries, mix with 2 TBS of agave nectar or honey and let macerate for 1/2 hour or until drawing juice.
  • Prepare asparagus by breaking off tough ends, cut on the bias into 2" pieces.
  • blanch in boiling lemon water, stems first, add tips after 2 minutes, blanch for one more minute, remove from heat and plunge into ice water to maintain color, do not overcook.
  • Prepare vinaigrette by whisking 2 TBS of water, oil, vinegar, salt, pepper, honey and a TBS of the strawberry juice together, add asparagus and marinate for at least 1/2 hour.
  • Prepare 4 plates with salad greens,

  • Top with the strawberries.

3/4 cup vegetable oil
1/2 cup white wine vinegar
1 tablespoon dried basil

Steps:

2 pounds fresh asparagus, trimmed and cut into 2 1/2 inch pieces
1 ½ cups balsamic vinaigrette salad dressing
2 teaspoons grated lemon zest
¼ cup chopped fresh parsley
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Blanch asparagus just until tender, about 1 minute. Plunge into a bowl of cold water to cool. Drain asparagus and place in a large resealable plastic bag. Pour in vinaigrette and seal bag. Refrigerate at least 3 hours, turning bag occasionally.

This easy marinated asparagus recipe comes together in just a few minutes. Balsamic vinegar and garlic add a hefty dose of flavor, sugar mellows it out a bit and red pepper flakes add a nice little kick.

2 pounds asparagus
3/4 cup olive oil
1/2 cup balsamic vinegar
1 tablespoon sugar
4 garlic cloves (minced)
1 1/2 teaspoons red pepper flakes

Steps:

  • Snap off the tough ends of asparagus and wash asparagus thoroughly.
  • Cook asparagus in boiling water for about two minutes, until it's bright green and just beginning to get tender. Drain.
  • Place asparagus in a large bowl of ice water to stop the cooking. Drain.
  • Lay asparagus in a 13" by 9" baking dish.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, sugar, garlic, and red pepper flakes.
  • Pour over asparagus.
  • Cover dish with plastic wrap and place in the refrigerator.
