- Preheat oven to 350°. Line 20 muffin cups with paper liners. Combine the first 5 ingredients. Beat on low speed 30 seconds; beat on medium 2 minutes., Fill prepared cups half full. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., For frosting, in a large bowl, combine 2 tablespoons lime juice, meringue powder and water. Whisk until frothy. Add confectioners' sugar, shortening, and remaining lime juice. Beat until smooth; frost cupcakes. If desired, garnish with lime zest and slices.

- Follow instructions on Cake mix, but zest 1 of the limes and add it to the batter for a kick.
- Place Cupcakes in oven and bake for 22 minutes.
- While the cupcakes are baking, it is time to make the icing!
- Mix the cream cheese and butter till well combined.
- Then mix in the vanilla and slowly add the powdered sugar.
- Next add some of the jello mix. Add little spoonfuls at a time then taste and see if you need to add more flavoring.
- Once the cupcakes are out of the oven and cool begin to frost the cupcakes.
- After all the cupcakes are frosted sprinkle some of the sugar crystal sprinkles to look like the salt around the rim of the Margarita.
- If you do not like sprinkles, add some lime zest on the tops of the cupcakes instead.

- In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer.
- Stir in lime zest; mix completely.
- Fill prepared pans 2/3 full.
- Bake according to box directions (usually 325 degrees - be sure to check box!) 22-24 minutes or until toothpick inserted in center of cupcake comes out clean.
- Cool in pan on cooling rack 5-8 minutes.
- Remove cupcakes from pan; cool completely.
- FOR ICING:.
- In large bowl, cream butter, cream cheese, juice and zest with electric mixer until light and fluffy.
- Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy.
- If icing is too thin add additional confectioners' sugar 1 tablespoon at a time.

- For the cake: Preheat the oven to 350 degrees F. Line a standard muffin pan with paper liners.
- Whisk together the flour, baking powder and salt in a bowl and set aside. In a small bowl, stir together the sour cream, tequila and lime zest and juice and set aside. Combine the granulated sugar and butter in the bowl of a large stand mixer fitted with a paddle attachment. Mix on medium-high speed until smooth and fluffy, about 4 minutes. Add the eggs one at a time, combining well after each addition and scraping down the sides of the bowl as needed. Mix in the vanilla. Adjust the speed to medium low and add the flour mixture and sour cream mixture in alternating batches, beginning and ending with the flour. Mix until just combined.
- Fill each liner about three-quarters full using a 1 1/2-ounce ice cream scoop. Bake, rotating about halfway through, until a cake tester or toothpick inserted in the middles comes out clean, 20 to 25 minutes. Cool in the pan for a few minutes, remove to a rack, brush with the orange liqueur and let cool completely.
- For the frosting: Beat the cream cheese and butter in the bowl of a stand mixer fitted with a paddle attachment until smooth. Turn the speed down to low and spoon in the confectioners' sugar until completely combined. Add the lime juice and a pinch of salt and turn the speed back up to medium high until light and fluffy. Frost the cupcakes with an offset spatula or by piping with a pastry bag once completely cool.
- For the garnish: Cut the lime in half lengthwise and then thinly slice into half-moons. Top each cupcake with a lime slice. Combine the sugar, lime zest and salt in a small bowl. Sprinkle each cupcake with the sugar-lime mixture.

- Preheat oven to 325 degrees. Line two standard muffin tins with paper liners.
- In a medium bowl, whisk together flour, baking powder and coarse salt. With an electric mixer on medium-high, cream butter and sugar until pale and fluffy, about 3 minutes. Add eggs, one at a time, beating until each is incorporated and scraping down sides of bowl as needed; beat in zest. Combine buttermilk and remaining 2 tablespoons lime juice. - 1. Preheat the oven to 325 degrees F. Line a standard muffin tin with paper liners; set aside. 2. In a medium bowl, whisk together the flour, baking powder and salt; set aside. 3. In an electric mixer on medium-high speed, beat the butter and sugar together until pale, light, and fluffy (about 5 minutes). 4. Reduce the mixer speed to medium and add the eggs one at at time, mixing thoroughly after each addition. 5. Scrape the sides of the bowl and add the lime zest, lime juice, vanilla extract and tequila. Mix until combined. (The mixture may start to look curdled at this point, but don't worry, it will all come back together, power on!) 6. Reduce the mixer speed low. Add the dry ingredients in three batches, alternating with the buttermilk in two batches. Mix only until just incorporated, using a rubber spatula to give it one last mix by hand. 7. Divide the batter between the muffin cups. Bake for approximately 25 minutes or until just slightly golden and a skewer shows only moist crumbs attached, rotating the pan at the halfway point. 8. Allow cupcakes to cool for 5 to 10 minutes, and then remove to a cooling rack. Brush the tops of the cupcakes with the 1 to 2 tablespoons of tequila. Set the cupcakes aside to cool completely before frosting them. 9. To make the frosting, whip the butter on medium-high speed of an electric mixer using the whisk attachment for 5 minutes. - Cupcakes: Preheat oven to 350 F and line muffin pan with cupcake liners.
- Beat together lime juice, zest, soy milk, oil, tequila, vanilla and sugar.

- Spread icing on the cupckaes spreading all the way to the edges.
- Roll the outer edge of the cupcakes in the sugar crystals.

- 1. Preheat the oven to 350 degrees. Prepare cupcake pans with cupcake papers, enough for 24 to 36 cupcakes.
- 2. CAKE: To a mixing bowl, add cake mix, eggs, oil, 2 teaspsoons lime zest, 1/4 cup lime juice and 1 cup of water. Mix according to package directions.
- 3. Portion a scant 1/4 cup of batter per cupcake liner. Bake for 15 to 20 minutes until done and when cupcake is touched in center, bounces back and doesn't leave an indentation. Remove to racks to cool.
- 4. While cupcakes bake, beat butter with paddle attachment of mixer until very smooth. Add powdered sugar and 2 teaspoons of lime zest; beat on slow speed. While mixer is running, mix together in a liquid measuring cup, 1/4 cup lime juice, 1 tablespoon tequila and 1 teaspoon Grand Marnier. Add 4 tablespoons of liquid mixture to the butter/powdered sugar mixture (1 Tablespoon at a time,) beating well between each addition. Once all 4 tablespoons are added, beat on medium-high speed for about 5 minutes. Then let your mixer run at low speed until you are ready to use the frosting. This keeps the frosting from getting crusty.
- 5. By this time, the cupcakes should have come out of the oven. While the cupcakes are cooling, to the remaining lime/tequila mixture that you used to make the frosting, add 1 more tablespoon of tequila and 1 teaspoon of Grand Marnier. If you need or want to add a little more lime juice, feel free. Use a pure bristle pastry/paint brush and brush each cupcake with this juice mixture. Once you have brushed each cupcake, brush each one again. Then brush each cupcake one last time. (That is a total of three brushes for each cupcake.) The liquid should have time to soak in between brushings.
- 6. Now that the cupcakes are brushed and cooled, frost the cupcakes. Using a piping bag with a 1M star tip is quick and easy and makes them look like you got them from a bakery. Once frosted, sprinkle with fresh lime zest and serve. DISCLAIMER: Hopefully this doesn't need to be said, but... Don't forget that these cupcakes have liquor in them, so they are not appropriate for children or anyone under the age of 21 years.

- 1. Prepare the cake mix according to the directions, add the zest and juice of two limes and enough food coloring to give the cake a faint green color. Bake in the margarita glasses for 10-15 minutes or until golden and bounce back when touched.
- 2. Remove from the oven and allow to cool completely. Once cooled rim the glasses with green colored sugar. and set aside.
- 3. For the frosting blend together the butter, lime juice, lime zest, and tequila. Once well mixed add the sugar a cup at a time until you reach the desired consistency. Chill for 15-20 minutes and then pipe onto the cupcakes, and garnish with a lime wedge.
