I use my grandmother's recipe to make these crisp peanutty cookies, which are a hearty between-meal snack...especially when you're traveling. They are my husband's all-time favorites.-Wendy Masters, Grand Valley, Ontario

Yield 4 dozen.

Number Of Ingredients 8

2/3 cup shortening
1-1/3 cups packed brown sugar
2 eggs, lightly beaten
1-1/2 teaspoons vanilla extract
1-2/3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups salted peanuts

Steps:

  • In a bowl, cream shortening and sugar. Beat in eggs and vanilla until light and fluffy. Combine flour, baking soda and salt; gradually add to the creamed mixture. Fold in peanuts. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until browned and almost set (centers will be soft). Remove to a wire rack to cool.

Really good crunchy cookie. I got this recipe many years ago from my grandmother.

Number Of Ingredients 10

2 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
1 cup white sugar
½ cup packed brown sugar
¾ cup shortening
1 egg
¼ cup milk
1 cup bran flakes cereal
¾ cup raw Spanish peanuts

Steps:

  • Sift together flour, baking powder and salt. Cream sugars, shortening and egg.
  • Add sifted dry ingredients to creamed mixture alternating with milk. Stir in bran flakes and peanuts. Mix well.
  • Drop by teaspoonfuls onto greased baking sheet. Bake at 375 degrees F (190 degrees C) for 10-12 minutes until lightly brown. Store in airtight container.
