6 tablespoons pure maple syrup
1/8 teaspoon salt
1 quart vanilla ice cream
1/3 cup finely chopped walnuts

Steps:

  • Simmer maple syrup and salt in heavy medium saucepan over medium heat until slightly thickened, about 5 minutes (do not stir). Add 1/2 cup ice cream and whisk until smooth, about 1 minute. Stir in walnuts. (Can be made 4 hours ahead. Cover and chill. Rewarm over low heat, stirring often.) Scoop remaining ice cream into bowls. Spoon sauce over and serve.

1/4 cup water
1/4 cup half-and-half cream
1/2 teaspoon vanilla extract

Steps:

  • In a heavy saucepot combine the maple syrup, brown sugar, butter and water.
  • Stir over medium heat until mixture comes to a boil.
  • Over low heat simmer until slightly thickened which takes about ten minutes.
  • Stir in the cream, vanilla, and nuts.
  • Cool to room temperature before using so it will thicken to right consistency.
  • Makes 1 cup of sauce.

1 (12 ounce) package fresh cranberries, rinsed and drained
¾ cup freshly squeezed orange juice
½ cup dark (grade B) maple syrup
¼ cup white sugar
¼ cup port wine
1 tablespoon freshly grated ginger
1 tablespoon freshly grated orange zest
1 (3 inch) cinnamon stick
1 pinch salt
1 cup chopped walnuts

Steps:

  • Place cranberries into a large saucepan and stir in orange juice, maple syrup, sugar, port wine, ginger, orange zest, cinnamon stick, and salt.
  • Bring sauce to a simmer. Berries will begin to pop. Cook at a simmer until berries are cooked through and soft, about 10 minutes.
  • Remove saucepan from heat and let cranberry sauce cool for about 5 minutes.
  • Shake walnuts in a dry skillet over medium heat, cooking until golden brown and fragrant, about 5 minutes. Wipe away any small particles of walnut skin from skillet to avoid bitterness. Stir walnuts into cranberry sauce. Let cool to room temperature and transfer to a serving bowl; sauce will thicken as it cools. Cover bowl with plastic wrap, pushing wrap to touch sauce and refrigerate until needed. Sauce can be made several days ahead.

We have made it a few times over the years and found it to be a hit always. The sweetness of the combination, Textures of the walnuts and zest of the orange not only make it good for Thanksgiving dinner but one of our guests used it as a topping for plain cheese cake and WOW! Have to try!

1 lb fresh cranberries
1 cup pure maple syrup
1 cup raspberry-cranberry frozen juice concentrate
1 cup walnuts
1 orange, zest of

Steps:

  • Wash cranberries.
  • Mix in heavy sauce pan the cranberries, maple syrup, cranberry-raspberry concentrate (do not add water), zest and the juice from the orange.
  • On High heat bring to a boiling point then reduce to medium heat for 10 minutes or till the cranberries pop-up.
  • Then add the walnuts and remove from heat.

1 pound (3 1/4 cups) all-purpose flour
1 tablespoon coarse salt
4 sticks softened unsalted butter, plus more for pans
2 cups packed dark-brown sugar
1 teaspoon pure vanilla extract
9 large, room-temperature eggs
2 cups toasted, chopped walnuts
1 cup pure maple syrup
1 cup packed light-brown sugar
1 stick unsalted butter
1 teaspoon coarse salt
1/4 cup heavy cream
1 or 2 sliced peaches

Steps:

  • Preheat oven to 325 degrees. Butter two 5-by-9-inch loaf pans. Combine flour and 1 tablespoon salt in a bowl.
  • Cream 4 sticks butter and dark-brown sugar with a mixer on high speed until pale and fluffy, for 8 minutes. Scrape down sides of bowl. Reduce speed to medium, and add vanilla extract.
  • Lightly beat eggs, and add to mixer bowl in 4 additions, mixing thoroughly after each and scraping down sides. Reduce speed to low, and add flour mixture in 4 additions, mixing until just incorporated. Fold walnuts into finished batter. Divide batter between pans. Tap on counter to distribute; smooth tops.
  • Bake until a tester inserted into center of each cake comes out clean, about 65 minutes. Let cool in pans on a wire rack for 30 minutes. Remove from pans, and let cool completely on wire rack.
  • Make the peach-maple sauce: Combine maple syrup, light-brown sugar, 1 stick unsalted butter, and 1 teaspoon salt in a saucepan. Cook over medium-high heat, stirring, until sugar dissolves and liquid comes to a boil. Cook for 2 minutes more. Stir in heavy cream, and bring to a boil. Remove from heat; add sliced peaches. Let thicken, 5 minutes.

1 large egg yolk
2 tablespoon cold water

3 pound Pink Lady apples, peeled and sliced
1/2 cup sugar
1 tablespoon cinnamon

2 tablespoon bourbon
1/2 cup all purpose flour

Steps:

  • Make the dough: Into a bowl sift together the flour, salt, and sugar and blend in the butter until the mixture resembles a course meal.
  • Add the egg yolk and 1 TBS of the water, toss the mixture until the water is incorporated, adding enough of the remaining water as necessary.
  • Form the dough into a ball.
  • Dust the dough with flour and chill covered for 2 hours
  • Preheat the oven to 350 degrees.
  • On a lightly floured surface roll the dough into a 13" round.
  • Fit the dough into a lightly buttered 12" tart pan with removable fluted rim and crimp the edge decoratively.
  • Pierce all over with a fork and bake crust in the middle of the oven for 20 minutes or until golden
  • Make the filling: In a heavy kettle cook the apples, sugar, cinnamon, walnuts, and bourbon over moderate heat stirring, for 20 minutes, or the apples are softened
  • Make the topping: In a bowl blend the flour, sugar, walnuts and butter until the mixture resembles a course meal.
  • Spoon the filling into the crust spreasing it evenly, sprinkle it with the topping and bake crisp in the middle of the oven for 30 minutes or the top is golden.
  • Make the Sauce: Combine all ingredients in a small saucepan and stir over medium heat until ice cream is melted and ingredients are combined.
  • Serve crisp with warm sauce.
