1/3 cup all-purpose flour
1/2 cup packed light brown sugar
1/3 cup oats
1/4 teaspoon ground cinnamon
1/4 cup chilled butter or 1/4 cup margarine, cut into small pieces
3 tablespoons chopped walnuts
7 cups sliced peeled rome apples (about 3 pounds)
1/4 cup maple syrup
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°.
  • Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, sugar, oats, and 1/4 teaspoon cinnamon in a medium bowl; cut in butter with a pastry blender or 2 knives until mixture is crumbly. Stir in walnuts.
  • Combine apple and remaining ingredients in a large bowl; toss well. Spoon apple mixture into an 8-inch square baking dish or 1 1/2-quart casserole. Sprinkle with crumb mixture. Bake at 375° for 45 minutes or until golden brown. Serve warm.

1 1/4 cup all purpose flour
1/2 teaspoon salt
1 1/2 tablespoon sugar
7 tablespoon cold, unsalted butter, cut into bits
1 large egg yolk
2 tablespoon cold water
1/4 cup unsalted butter
3 pound Pink Lady apples, peeled and sliced
1/2 cup sugar
1 tablespoon cinnamon
1/2 cup walnuts, chopped
2 tablespoon bourbon
1/2 cup all purpose flour
1/2 cup sugar
1/2 cup walnuts, chopped
1/4 cup unsalted butter, cut into bits
1 cup pure maple syrup
3/4 teaspoon vanilla

Steps:

  • Make the dough: Into a bowl sift together the flour, salt, and sugar and blend in the butter until the mixture resembles a course meal.
  • Add the egg yolk and 1 TBS of the water, toss the mixture until the water is incorporated, adding enough of the remaining water as necessary.
  • Form the dough into a ball.
  • Dust the dough with flour and chill covered for 2 hours
  • Preheat the oven to 350 degrees.
  • On a lightly floured surface roll the dough into a 13" round.
  • Fit the dough into a lightly buttered 12" tart pan with removable fluted rim and crimp the edge decoratively.
  • Pierce all over with a fork and bake crust in the middle of the oven for 20 minutes or until golden
  • Make the filling: In a heavy kettle cook the apples, sugar, cinnamon, walnuts, and bourbon over moderate heat stirring, for 20 minutes, or the apples are softened
  • Make the topping: In a bowl blend the flour, sugar, walnuts and butter until the mixture resembles a course meal.
  • Spoon the filling into the crust spreasing it evenly, sprinkle it with the topping and bake crisp in the middle of the oven for 30 minutes or the top is golden.
  • Make the Sauce: Combine all ingredients in a small saucepan and stir over medium heat until ice cream is melted and ingredients are combined.
  • Serve crisp with warm sauce.
