6 pound(s) boneless pork butt.
8-10 clove(s) garlic
1/4 cup(s) paprika
2 tablespoon(s) black pepper
1/2 teaspoon(s) each of thyme,and sage
1 teaspoon(s) garlic powder
1 teaspoon(s) onion powder
1 tablespoon(s) salt
4 cup(s) pale ale beer
6 - celery ribs,cut into large pieces
1 large red onion,cut into wedges
1 1/2 cup(s) grade b maple syrup
1/4 cup(s) apple juice

Steps:

  • You will need a large 14" deep cast iron dutch oven with a lid.And a meat trivet. In a mixing bowl combine paprika,black pepper,salt,garilc powder,onion powder,thyme. Mix well
  • Cut small slits in the pork butt. insert 8-10 cloves of garlic. Take rub mix and rub all over pork butt.. put meat trivet into bottom of dutch oven. Place oven over high heat,add 1/4 of apple juice to bottom of oven. Set pork butt in oven. Put lid on bake for 15-20 min.
  • With cloves and a hook remove oven from heat. Remove lid with lid lifter.. Mix beer and maple syrup until well blended. Place celery,and onion wedges around pork butt. pour beer,syrup mix over pork .Replace lid...
  • put dutch oven over med-low heat,Around 250. cook for 2 hours. ( you may have to add more beer-syrup mix as it cooks).. remove from heat let it rest for 10-15 min slice and serve.

Comfort food for a cold day. Pork cubes braised to tenderness in beer and maple syrup. As good as it sounds.

500 g (18 oz) pork shoulder
300 g (10 oz) pearl onions
2 carrots
1 stalk celery
1 clove garlic
1 can (350 ml or 1 1/3 cup) beer
45 ml (2 tablespoons) maple syrup (Amber)
15 ml (1 tablespoon) soy sauce
400 ml (1 5/8 cup) bouillon
Bay leaf and thyme, to taste
Cooking oil
Butter
Maple syrup
Salt, pepper

Steps:

  • Cut pork into large bite-size pieces. Peel the skins off the pearl onions, roughly chop carrots and celery, and crush garlic.
  • Warm 15 ml (1 tablespoon) of oil and a little bit of butter in a heavy pan. Cook pork. Remove from pan when seared.
  • Pour off excess oil from the pan and sauté the vegetables until they are coated with oil.
  • Add the vegetables to the pork, cover when this comes to a boil, lower heat, and braise until meat is completely tender. Add salt, pepper, and maple syrup to adjust flavor.

2 ½ pounds boneless pork loin roast
1 cup real maple syrup
4 tablespoons prepared Dijon-style mustard
2 ½ tablespoons cider vinegar
2 ½ tablespoons soy sauce
salt to taste
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir together the maple syrup, mustard, vinegar, soy sauce, salt, and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread glaze evenly over pork roast.
  • Roast pork in the preheated oven uncovered, until internal temperature measured with a meat thermometer reaches 145 degrees F (63 degrees C), about 1 hour. Remove from oven, and let rest about 10 minutes before slicing to serve.

MAPLE BAKED PORK LOIN ROAST

This is a GREAT recipe. Do not let the ingredients scare you, they combine to make a really great taste. The pork is so moist and tender that it will fall apart when you go to cut it. I find it comes out best with the loin that has two sections. If it is a single loin, it still comes out great, but does not fall apart quite so much. Everyone who tries this loves it so far. It's my husband's favorite and very easy to make. It cooks for 1 hr 45 min - 2 hrs.

1 tablespoon canola oil
1 (4 pound) boneless pork loin roast
salt and pepper to taste
all-purpose flour for dredging
¾ cup maple syrup
¾ cup ketchup
⅓ cup water
1 tablespoon minced garlic

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large skillet over medium-high heat until smoking. Meanwhile, season the pork roast with salt and pepper, then dredge in flour, and shake off excess. Sear in hot oil until browned on all sides, about 1 minute per side.
  • Place onto a large sheet of aluminum foil set on top of a baking sheet; set aside. Stir together the maple syrup, ketchup, water, and garlic. Pour 3/4 of this sauce over the pork. Fold the foil over the pork, and seal to form a packet.
  • Bake in preheated oven until the internal temperature reaches 170 degrees F (75 degrees C), about 2 hours. Carefully open up the foil packet, and broil for a few minutes until the sauce glazes the meat. Serve with remaining sauce.
