1 lb brussels sprouts, ends trimmed, halved
5 carrots, sliced
olive oil
sea salt, to taste
black pepper, to taste
1 lb pork tenderloin
sea salt, to taste
black pepper, to taste
2 sprigs fresh rosemary
1 tablespoon olive oil
3 tablespoons balsamic vinegar
¼ cup maple syrup

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Place Brussels sprouts and baby carrots separately on a foil-lined baking sheet with room in the center for the pork.
  • Drizzle with olive oil. Sprinkle with sea salt and pepper. Mix to combine.
  • Place pork in center of baking sheet. Sprinkle with sea salt and pepper. Rub to combine and add the rosemary sprigs on top of the pork.
  • Bake in oven for 40 minutes, or until internal temperature of the pork reaches 145˚F (63˚C).
  • Let pork rest 5-10 minutes.
  • While pork is resting, mix olive oil, balsamic vinegar, and maple syrup in a small saucepan.
  • Cook on medium heat until sauce thickens and reduces by ⅓, about 3-4 minutes.
  • Immediately spoon reduced sauce on the pork.
  • Enjoy!

1 cup real maple syrup
4 tablespoons prepared Dijon-style mustard
2 ½ tablespoons cider vinegar
2 ½ tablespoons soy sauce
salt to taste
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir together the maple syrup, mustard, vinegar, soy sauce, salt, and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread glaze evenly over pork roast.
  • Roast pork in the preheated oven uncovered, until internal temperature measured with a meat thermometer reaches 145 degrees F (63 degrees C), about 1 hour. Remove from oven, and let rest about 10 minutes before slicing to serve.

1/2 cup all-purpose flour
Salt and pepper to taste
4 bone-in pork loin chops (7 ounces each)
2 tablespoons butter
1/4 cup cider vinegar
1/3 cup maple syrup
1 tablespoon cornstarch
3 tablespoons water
2/3 cup packed brown sugar

Steps:

  • In a large shallow dish, combine the flour, salt and pepper. Add pork chops and turn to coat. In a large ovenproof skillet, cook chops in butter over medium heat until a thermometer reads 145°, 4-5 minutes on each side. Remove and keep warm. , Meanwhile, in the same skillet, bring the vinegar to a boil. Reduce heat; add maple syrup. Cover and cook for 10 minutes. Combine cornstarch and water until smooth; gradually add to maple mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. , Place chops on a broiler pan; sprinkle with brown sugar. Broil 4 in. from the heat until sugar is melted, 1-2 minutes. Drizzle with maple glaze.

This quick and delicious Maple Brown Sugar Pork Tenderloin is a great weeknight meal. It bakes quickly in the oven, and is great paired with carrots or potatoes.

2 Pork Tenderloins, approximately 1 pound each
3 tbsp olive, canola or vegetable oil
2 tsp garlic powder
2 tsp salt
1/2 tsp fresh black pepper
1 tsp chili powder
1/2 tsp paprika
3/4 cup brown sugar (packed)
1/3 cup maple or agave syrup (pure maple syrup, not pancake syrup or imitation maple syrup)
1 tbsp butter

Steps:

  • Preheat oven to 400 degrees F.
  • Combine garlic powder, salt, pepper, chili powder and paprika. Using clean hands, rub spice mixture over tenderloins to coat well.
  • Heat oil in a large pan over medium high heat, and add tenderloins to the pan to brown on all sides (approximately 5-6 minutes total)
  • While browning the pork, combine brown sugar, syrup and butter in a small saucepan. Cook on low, stirring constantly, for approximately three minutes or until smooth.
  • If using an oven safe skillet, leave tenderloins in pan and coat with approximately half of the glaze mixture. If not using an oven safe skillet, transfer tenderloins to a 9x13 glass baking dish that has been sprayed with non-stick cooking spray, then cover with half of the glaze mixture.
  • Cover and bake for approximately 18-20 minutes or until the internal temperature reaches 135 degrees. Remove from oven, remove foil and top with remaining glaze. Return to oven and bake for an additional 5-10 minutes or until the internal temperature reaches 140-145 degrees. Pork will continue to cook, due to carry over cooking, one removed from the oven
  • Remove from oven and allow to rest for ten minutes.

A delicious and sticky combination of lean pork chops, maple syrup, brown sugar, apples and cider. An easy to assemble meal for company that needs very little last minute attention. Serve with mashed potato and steamed seasonal vegetables during the cooler months and lightly steamed greens during the warmer months. This dish would also be wonderful with baked red cabbage and crusty bread. Edited (30/08/07) to say: This was my RSC10 entry - and as everyone discovered, I copied and pasted the wrong version! I made it three times, cutting back on fluids each time and also increasing the oven temperature and the maple syrup! 4 (6 ounce) lean pork chops, trimmed, about 6 ozs each
1 ounce butter, for greasing
1 -2 tablespoon Dijon mustard
4 ounces brown sugar
4 tablespoons maple syrup
1/3-1/2 cup cider
1 red onion, peeled and diced finely
2 large apples, halved and cored
salt
pepper
fresh thyme

Steps:

  • Put the chops & apple halves into a large buttered ovenproof dish - along side each other, it does not matter if they fit snugly.
  • Mix the maple syrup, sugar, mustard and cider together to make a thickish, sludgy syrupy, paste and spread over the top of the chops & apples.
  • Allow to rest/marinade at room temperature for about 30 minutes.
  • Preheat the oven to 2250C/450F/Gas 6.
  • Sprinkle the chopped onion over the top of the chops and apples, and place several sprigs of fresh thyme on top.
  • Season well with freshly ground pepper and sea salt.
  • Bake for about 45 to 60 minutes, or until chops are and apples are cooked, soft and golden brown and glazed. (Cooking time depends on the thickness ans size of the chops).
  • You can flash the chops and apples under a grill to achieve a deeper and stickier glaze.
  • Serve each person with one chop, one-half of apple and some of the juices and the glaze. Garnish with some fresh thyme.

600g pork fillet
1 tbsp olive oil
2 eating apples , cored and cut into eighths
1 garlic , crushed
2 tbsp maple syrup
1 tbsp white or red wine vinegar
2 tbsp wholegrain mustard

Steps:

  • Cut the pork into 3cm thick slices. Heat the oil in a large, non-stick frying pan, add the pork, then fry on both sides until lightly browned, about 5 mins in total. Lift out of pan and set aside. Add apples to the pan, then cook for 3-4 mins until starting to soften.
  • Stir in the garlic, maple syrup, vinegar and 3 tbsp water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more mins, stirring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard, then serve with plain or Crispy onion rice (recipe below).

1 (5 pound) pork loin roast
¼ cup butter, melted
¼ cup white vinegar
⅓ cup light maple flavored pancake syrup
1 tablespoon cornstarch
¼ cup brown sugar

Steps:

  • Place the roast into a large resealable bag. In a small bowl, stir together the melted butter, vinegar, pancake syrup, cornstarch and brown sugar. Pour into the bag with the roast. Seal, and turn to coat. Refrigerate for 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Place the roast into a roasting pan or large Dutch oven, and pour the marinade over it.
  • Cover, and roast for 1 hour in the preheated oven. Remove the lid, and continue roasting until the top is browned and the internal temperature is at least 145 degrees F (63 degrees C) when taken with a meat thermometer. Remove from the oven, and let rest for about 10 minutes before carving. The internal temperature should increase by 10 degrees.
