MAPLE CINNAMON STEWED APPLES



Maple Cinnamon Stewed Apples image

Sliced apples that are stewed with cider, maple and cinnamon both healthy for you and taste delicious!

1 dozen apples, cored*
1/2 cup no sugar added apple cider
2 Tblsp maple syrup
1 tsp cinnamon

Steps:

  • Slice and core apples. (you can peel them if you would like, I usually leave mine on...but my son prefers them peeled!)
  • Place in large 5 quart stockpot.
  • Add apple cider, maple syrup and ground cinnamon.
  • Bring to a boil, reduce heat and simmer while stirring occasionally for 30 - 35 minutes. Depending on the size you cut your apple slices, you may need to simmer longer and add additional apple cider or water so your apples don't burn.

1 apple, such as Empire or Braeburn, cored and chopped
2 tablespoons unsalted butter
2 tablespoons pure maple syrup, plus more for serving
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons water
1 cup old-fashioned rolled oats
2 cups water
Chopped toasted pecans, for serving

Steps:

  • In a saucepan, heat apple, butter, maple syrup, cinnamon, salt, and 3 tablespoons water over medium-high until simmering. Cover and cook until apples are tender, about 5 minutes. Reserve 1/2 cup apple mixture for garnish.
  • Add oats and 2 cups water to saucepan with remaining apple mixture and simmer, uncovered and stirring occasionally, until oats are creamy, about 5 minutes.
  • Serve with reserved apple mixture, pecans, and more maple syrup, if desired.

2 juicy, sweet-tart apples, such as 'Jonathan,' peeled and cut into 12 wedges each
2 tablespoons pure maple syrup
1/4 teaspoon coarse salt

Steps:

  • Melt butter in a medium skillet over medium heat. Add apples; cook, turning once, until golden brown, about 5 minutes total. Stir in syrup and salt; reduce heat to low. Simmer until apples are soft, about 5 minutes. Serve warm.

1 large granny smith apple (or other firm tart apple)
1 tablespoon pure maple syrup
1 teaspoon butter or 1 teaspoon margarine
3 tablespoons water
1 dash cinnamon or 1 dash nutmeg

Steps:

  • Peel apple or if preferred leave peel on.
  • Cut apples into quarters and remove the core.
  • Slice the quarters into 1/8 inch thick slices the long way, then cut each slice into inch wide slices.
  • Combine apple, syrup, cinnamon and water in small saucepan.
  • Cook over medium low heat, stirring occasionally until apple is tender.
  • If mixture gets too dry before apple get tender all a bit more water.
  • Serve warm.
  • (If desired add 2 tbs raisins per apple to the mixture when you begin cooking and increase the water to ¼ cup).

3 tablespoons butter
1/2 butternut squash, peeled, seeds removed and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
3 Granny Smith apples, peeled, cored and chopped into 1-inch chunks
1 cup water
1/4 cup brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Heat the butter in a large heavy saute pan over medium-high heat. Add the butternut squash and season with salt and pepper, to taste. Cook until the squash is beginning to caramelize, about 6 to 8 minutes. Add the apples and continue to brown, another 5 minutes. Stir in 1 cup of water and the sugar. Cover, then reduce the heat to medium-low and cook until tender, about 15 minutes. Add the cinnamon and cook until the squash and apples are coated in a deep golden brown glaze, about 5 minutes more. Transfer the stew to a serving bowl and serve.

1 cup milk
1/2 teaspoon vanilla extract
Ground cinnamon
6 slices bread
2 tablespoons butter, plus more for serving
3 apples, peeled and sliced
2 tablespoons water
1/2 cup maple syrup

Steps:

  • Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
  • Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
  • Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.
  • In a large, heated nonstick skillet, melt about 1 tablespoon butter and saute the soaked bread until golden brown on each side, about 4 minutes. Place French toast on a plate and top with apple-maple mixture, plus more butter if you'd like!
