Homemade breakfast sausage made with ground pork and seasonings. Great cooked in crumbles for biscuits and gravy, or in patties for breakfast sandwiches or eggs benedict. I like to premake a large batch and freeze the patties, then just take out a few the night before.

2 ½ pounds ground pork
¼ cup maple syrup
1 ½ tablespoons chopped fresh sage
1 tablespoon salt
2 ½ teaspoons fennel seed
2 ½ teaspoons red pepper flakes
2 ½ teaspoons garlic powder
2 ½ teaspoons onion powder
1 teaspoon anise seed
1 tablespoon olive oil

Steps:

  • Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder, onion powder, and anise seed in a large bowl until evenly blended. Shape pork into small patties.
  • Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

2 tbsp black peppercorns (OR ground black pepper)
1 tbsp rubbed sage
2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp cayenne pepper
2 1/2 tbsp kosher salt
5 lbs ground pork shoulder
1/2 cup maple syrup

Steps:

  • Seasoning: Using a spice grinder, grind the peppercorns with the sage, ginger, nutmeg, and cayenne pepper. (If not using a spice grinder, simply mix the ground pepper with the spices in a small bowl.)
  • Mix together ground pork, seasoning mixture, salt, and maple syrup. Let rest in the refrigerator for one hour or overnight.
  • Make small patties by scooping the sausage onto a hot skillet and flattening it with a spatula. Cook over medium high heat on a skillet until brown.

16 frozen potato tots
1/2 cup heavy cream
12 large eggs
Kosher salt and freshly ground black pepper
6 strips bacon, cut into 1/2-inch-wide pieces
6 ounces pork breakfast sausage, removed from casings and chopped
Nonstick cooking spray, for greasing the pan
2 ounces American cheese, grated
1/2 cup grated white Cheddar (about 2 ounces)
Maple syrup, ketchup, hot sauce or white gravy, for dipping, optional

Steps:

  • Preheat the oven to 375 degrees F. Spread the tater tots on a baking sheet and bake until just golden brown and crispy, about 25 minutes.
  • Meanwhile, whisk together the heavy cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cook the bacon in a large nonstick skillet over medium heat, stirring occasionally, until browned and crispy, 7 to 8 minutes. Use a slotted spoon to transfer to a paper towel-lined plate. Pour off the bacon drippings and reserve 2 tablespoons. Add 1 tablespoon of the drippings and the sausage to the skillet and heat over medium-high. Cook, breaking up any large chunks with a wooden spoon, until cooked through and brown in some spots, 3 to 4 minutes. Transfer to a bowl and set aside.
  • Return the skillet over medium heat and add the remaining tablespoon of bacon drippings. Once hot and shimmering, add the egg mixture and cook, stirring frequently, with a rubber spatula, until soft and fluffy and almost completely cooked through but still a bit runny, 3 to 5 minutes. Transfer to a clean large bowl.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the egg mixture over the short ends of the triangles closest to the ramekin. Sprinkle the sausage on top of the eggs then sprinkle the bacon over the sausage. Cover the bacon with the American and Cheddar cheese. Top with the potato tots and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely but should cover the tater tots). Repeat with the remaining triangles (there will be some gaps where you can see the filling).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with maple syrup, ketchup, hot sauce or white gravy if desired.

54 frozen tater tots
18 maple breakfast sausage links
4 tablespoons (1/2 stick) salted butter
2 large onions, sliced
18 large eggs
1 cup half-and-half
1/2 tablespoon seasoned salt (such as Lawry's)
1 teaspoon freshly ground black pepper
2 cups grated mild Cheddar
18 fajita-size flour tortillas
Two 16-ounce jars store-bought salsa
Green and red hot sauces for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, seasoned salt, and black pepper. Melt the remaining 2 tablespoons butter in a second large skillet. Add the whisked eggs and cook, stirring gently, until the eggs are set.
  • To assemble the burritos, stack the tortillas on a paper towel and microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, top with a little caramelized onions, 1 sausage link, 3 tater tots, a little salsa, and about 2 tablespoons cheese per burrito. (You can also leave some without cheese if preferred.) Tuck in the sides and roll the tortilla closed. Wrap in a foil sheet. Repeat with the rest of the ingredients. Keep warm in the oven in foil pans until ready to serve. Serve with salsa and the hot sauces.

2 tubes (12 ounces each) refrigerated biscuits
2 cups shredded Monterey Jack cheese

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. , Flatten each biscuit to a 3-in. diameter. Press half of the biscuits onto the bottom and 2 in. up the sides of a greased 10-in. fluted tube pan. Spoon sausage over dough; sprinkle with cheese. 1 pound hot sausage
1 lb. mild sausage
1 1/2 cups cracker crumbs
2 eggs, beaten
1/2 cup milk
1/2 cup finely chopped apple
1/4 cup maple syrup
1 tbsp. chopped fresh sage
16 eggs, scrambled

Steps:

  • 1. Brown the hot sausage and mild sausage in skillet, stirring until crumbly; drain. Mix with cracker crumbs, beaten eggs, milk, apple, maple syrup and sage in large bowl.
