- Combine soy sauce, maple syrup, garlic, ginger, pepper, and salt in a shallow container with a tight-fitting lid. Place salmon, flesh-side down, in the container and seal. Marinate in the refrigerator for 30 minutes.
- Preheat an outdoor grill for high heat and lightly oil the grate. Once heated, turn down one side to low heat.
- Place salmon, skin-side down, over low heat on the preheated grill and close the lid. Allow to cook, basting once with reserved marinade, until easily flaked with a fork, about 20 minutes. Salmon will easily remove from the grill by sliding a spatula between salmon and the skin.

- Heat oven to 450 degrees F and arrange rack in the middle.
- While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
- Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.

APPLE DUMPLINGS WITH MAPLE-CIDER SAUCE

- 1. In medium bowl, mix flour and salt. With pastry blender or two knives used scissors fashion, cut in butter and shortening until mixture resembles coarse cornmeal. Add the cider, 1 Tbsp at a time, tossing with fork after each addition, unti pastry holds together to form a dough. Shape dough into two 1/2 in. thick squares; wrap separately in plastic wrap. Chill. 2.Preheat oven to 375. With melon-ball scoop, core apples, leaving 1/2 in. of core intact at bottom of each apple. Peel 2/3 of each apple leaving peel on bottom 1/3. In bowl, mix brown sugar, currants, walnuts and butter; pack mixture into cored portion of each apple. 3. On lightly floured surface, with lightly floured rolling pin, roll out 1 dough square to 21 1/2 x 7 1/2" rectangle.; trim to 21 x 7" saving scraps. Cut into (3) 7" squares; place an apple, filling side up, on each square. Brush some egg mixture over edges of dough. Lift opposite corners of dough squares over apples; pinch to seal, making 4 seems. Press seams flat onto pasty to conform to apple shape; brush dumpling with egg mixture. - Combine brown sugar, cracked black pepper and kosher salt in bowl. Mix well.
- Rub salmon filets with brown sugar mixture, making sure to use all of mixture.

- Cut the pork into 3cm thick slices, season with salt and pepper, then lightly coat in the flour (the easiest way to do this is to put the flour and seasoning in a large food bag, add the pork and shake well). Heat the oil in a large frying pan, preferably non-stick, then add the pork and quickly fry until it is browned all over. Cook the pork for about 5 mins, then remove to a plate and cover with foil while you make the sauce.
- Add the onion to the pan (with a touch more oil if needed), then quickly fry until lightly coloured, add the stock, then bring to the boil. Boil hard for a couple of minutes to reduce the stock a little, stir in the maple syrup, mustard and lemon juice, then bring back to the boil, stirring well.
- Return the pork to the pan and gently simmer for a further 3-4 mins until it is cooked through. Sprinkle with parsley, if using.

CROCK POT COUNTRY STYLE RIBS WITH MAPLE BBQ SAUCE

- 1. Ribs: Sprinkle both sides with the garlic powder and Everglades seasoning. Place a paper towel over top and allow to rest while you make the sauce.
- 2. Sauce: Place all ingredients, except chopped bacon and the liquid smoke, in a saucepan. Mix well and heat stirring occasionally. Do not allow to burn. Once it begins to come to a soft boil, remove from heat, stir in bacon bits. Place the sauce in a bowl or glass measuring cup and cover with Saran Wrap. Set aside. (Do not refrigerate)
- 3. Spray your Crock Pot with cooking spray. Place ribs in and sprinkle with the mesquite liquid smoke. I used a cap full. Cook on low for 4 1/2 hours.
- 4. Check meat after the 4 1/2 hours. Should be a little pink. Drain the liquid and cover the ribs with the BBQ sauce and cook for another 1 1/2 to 2 hours.
- 5. My Crock Pot cooks a little hotter than normal so you may have to adjust your times or cook until a meat thermometer reads 145°. I must add that your house is going to smell so yummy while this is cooking. Enjoy.

- Rinse the cranberries. Discard any mushy or underripe berries and stems.
- Place a medium-sized saucepan over medium heat and add the cranberries, 1/3 cup pure maple syrup, orange zest, orange juice, water, and cinnamon stick. Cook, stirring occasionally, until the mixture comes to a boil. Continue boiling over medium heat until the berries burst and break down, forming a sauce, 15-20 minutes.
