Glaze thinly sliced, roasted butternut squash with maple syrup and fresh orange, and add a sprinkle of parsley to finish.

1 butternut squash (about 2 1/2 pounds), peeled, halved, seeded and thinly sliced
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pure maple syrup
Zest and juice of 1 orange
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F. Toss the squash with the oil and a generous pinch each of salt and pepper in a large bowl. Tile the squash slices in a 9-by-13-inch baking dish, overlapping the pieces. Stir the maple syrup, orange zest and juice together in a small bowl and pour over the squash.
  • Cover with foil and bake 30 minutes. Uncover and continue to bake until the squash is tender and the top begins to brown, 30 to 40 minutes more. Scatter the parsley over the top.

A small amount of bacon adds a lot of smoky flavor to sweet maple-roasted vegetables and glazed tofu. It's a colorful, cozy sheet-pan meal for tofu lovers who also eat meat, or bacon eaters who are trying to eat less meat. To make this dish vegan, skip the bacon, and add 1/2 teaspoon smoked paprika to the maple syrup mixture. Dicing the squash into small cubes helps it roast at the same rate as the brussels sprouts, so be sure to keep the pieces around 1/2 inch in size.

1 (14- to 16-ounce) package extra-firm tofu, drained and patted dry
1/4 cup maple syrup
2 teaspoons peeled and grated fresh ginger
1/4 teaspoon red-pepper flakes
1/4 cup extra-virgin olive oil, plus more for drizzling
12 ounces butternut squash (1 small to medium squash), peeled, trimmed, seeded and cut into 1/2-inch cubes
1 pound brussels sprouts, trimmed, small ones left whole, large ones halved
1 medium red onion, cut into 1/2-inch wedges
Kosher salt and freshly ground black pepper
3/4 teaspoon ground coriander
1 tablespoon finely chopped fresh sage leaves
2 ounces bacon, diced into 1-inch pieces
1 1/2 tablespoons soy sauce
3 teaspoons fresh lime juice, plus more for drizzling
1 teaspoon Asian fish sauce
1/2 cup sliced scallions (white and green parts), for garnish

Steps:

  • Heat oven to 400 degrees. Slice tofu into 1-inch-thick slabs. Pat them dry with paper towels and arrange in single layer on a plate. Cover tofu slabs with more paper towels and set aside.
  • In a small saucepan, combine maple syrup, ginger and red-pepper flakes. Simmer until syrup thickens slightly, about 1 minute, then stir in 1/4 cup olive oil.
  • Place squash, brussels sprouts and onion in a bowl. Toss with salt, pepper, coriander, sage and half of the maple syrup mixture. Spread vegetables in an even layer on a rimmed baking sheet and sprinkle bacon on top.
  • Add soy sauce and 2 teaspoons lime juice to remaining maple mixture.
  • Remove paper towels from over tofu, and sprinkle salt on tofu slabs. Tuck tofu onto the baking sheet with squash and brush half of the soy-maple mixture over the slabs. Roast for 40 minutes, tossing the vegetables occasionally. Halfway through roasting, flip the tofu slabs, and brush with remaining soy-maple mixture. Turn oven off and heat broiler.
  • Broil tofu and vegetables for 1 to 2 minutes to crisp up the bacon and the edges of the tofu. When vegetables are still hot, toss with remaining 1 teaspoon lime juice and the fish sauce. Garnish with sliced scallions and drizzle with more olive oil and a little more lime juice if you like.

4 chicken thighs and 4 drumsticks
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
16 Brussels sprouts, bottom trimmed, outer leaves removed, and halved, about 8 ounces
2 cups butternut squash, diced 1/2-inch
2 tablespoons maple syrup
2 teaspoons Dijon mustard
1 1/2 cups low sodium chicken broth

Steps:

  • In a sauté pan large enough to hold the chicken in a single layer, heat the olive oil over medium high heat. Season the chicken pieces with salt and pepper. Add chicken to pan, skin side down and sauté for about 5 minutes per side or until chicken is browned. Remove chicken from pan and reserve. Pour drippings off. In same pan, add butter. Allow the butter to melt over medium heat. Add squash and sprouts to pan and sauté, tossing occasionally, until the outsides are golden brown, about 4 minutes. Remove from pan and hold separately from chicken. Turn heat to high and add stock, syrup and mustard. Stir and bring to a boil, stirring to scrape up the brown bits on the bottom of the pan. Add chicken back to the pan, cover, and reduce heat to medium low. Cook for 25 minutes or until chicken registers 190°F with an instant read thermometer. Add vegetables back to pan, cover again, and cook for another 8 minutes until the vegetables are tender. Remove chicken and vegetables to a serving platter, placing vegetables around chicken. Turn heat to high and boil sauce until it is reduced and slightly thickened, about 3 minutes. Spoon sauce over chicken and serve.

I had this in mind as my ultimate winter salad because all the ingredients seem to scream "winter" and because it's a heartier salad than a lot of my others. Prepping and roasting the squash is a bit of extra work, but it also gives you a more substantial salad, one that could make a light meal on its own.
For the Salad
• 1 small butternut squash, peeled, seeded, and cut into 1 1/2-inch cubes
• Extra-virgin olive oil
• Salt
• 1 cup pecan halves
• 1 small leek
• 10 ounces spinach, rinsed, dried, and large stems removed
For the Dressing
• 1/4 cup pure maple syrup
• 1/4 cup cider vinegar
• 1/3 cup olive oil
• 2 teaspoons Dijon mustard
• 1 shallot, minced
• 1/2 teaspoon salt
• 15 to 20 grinds fresh black pepper

Steps:

  • Directions Preheat the oven to 400°F Toss the squash cubes on a baking sheet with olive oil and salt. Roast 25 minutes, until tender, tossing every 10 minutes or so. Remove the squash from the oven and allow to cool fully. Spread the pecans out on another baking sheet and toast in the oven for 5 minutes. Remove the green tops and bottom root from the leek. Cut the remaining portion of the leek in half lengthwise and rinse under cold water to wash away any grit inside the leek. Cut each half in half crosswise, then thinly cut vertically to create leek matchsticks. Make the dressing by shaking together all the dressing ingredients in a scalable container or whisk together in a bowl. Toss the spinach with the dressing, divide the spinach between serving plates, and top with the squash pieces. Scatter the leek matchsticks around the salad, then finish with the toasted pecans.

DRESSING Whisk together all ingredients in a small bowl or shake together in a glass jar. Set aside until ready to use. ASSEMBLY In a large bowl, toss the greens with ¾ of the dressing. Divide evenly between 4 bowls or present this in one large salad bowl. Top with roasted squash, onions, walnuts, goat cheese, and figs. Drizzle each bowl with remaining dressing. Serve immediately.

Sprinkle pancetta and sage leaves evenly over squash and continue to bake for another 20 to 30 minutes, until squash and garlic are tender and caramelized. Season to taste and serve hot with French bread for guests to spread with the roasted garlic.

2 tablespoons unsalted butter
2 butternut squash, necks only, peeled and cut into twenty-four 1-inch cubes
1/8 teaspoon Aleppo pepper
1 tablespoon pure maple syrup
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 400 degrees.
  • Place butter in a 13-by 9-inch baking dish and transfer to oven; heat until butter is melted.
  • Remove baking dish from oven. Add squash cubes and Aleppo pepper; toss to combine. Return baking dish to oven and roast, shaking dish occasionally, until squash is tender and browned, 15 to 20 minutes.
