In this dead simple recipe from Chloe Coscarelli, the vegan chef and cookbook author, brussels sprouts are roasted at a high heat to bring out the natural sugars and caramelize the edges, then tossed with toasty hazelnuts and a glug of maple syrup.

1 1/2 pounds brussels sprouts
1/4 cup olive oil
3/4 teaspoon sea salt
1/4 teaspoon (or 10 grinds) black pepper
2 tablespoons maple syrup
1/2 cup toasted hazelnuts, coarsely chopped (optional)

Steps:

  • Preheat the oven to 375 degrees.
  • To prepare the brussels sprouts, remove any yellow or brown outer leaves, cut off the stems and cut in half.
  • In a large bowl, toss the brussels sprouts, olive oil, salt and pepper together. Once all of the brussels sprouts are coated in oil, spread them into a 9-by-13-inch (or larger) baking dish or sheet tray to roast. Note: You may want to line your sheet tray with foil for easy cleanup because the caramelizing process leaves a sticky residue.
  • After 15 minutes, stir the brussels sprouts with a spatula or large spoon to even out the browning. After 30 minutes, stir in the maple syrup. (Steps 1 through 4 can be done a day in advance; store covered in the refrigerator. Continue with Steps 5 and 6 right before serving.)
  • Continue to roast the brussels sprouts for about 15 more minutes, or until they are fork tender (about 45 minutes total roasting time).
  • Toss the roasted brussels sprouts with the hazelnuts and devour!

1 large Granny Smith apple - peeled, cored, and diced
¼ cup olive oil
2 tablespoons maple syrup
1 tablespoon balsamic vinegar

  • Preheat oven to 375 degrees F (190 degrees C).

  • Preheat oven to 400 degrees. Whisk together maple syrup, oil, lemon juice, and 1/4 teaspoon salt in a large bowl. Add rutabaga, and toss.

4 chicken thighs and 4 drumsticks
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
16 Brussels sprouts, bottom trimmed, outer leaves removed, and halved, about 8 ounces
2 cups butternut squash, diced 1/2-inch
2 tablespoons maple syrup
2 teaspoons Dijon mustard
1 1/2 cups low sodium chicken broth

Steps:

  • In a sauté pan large enough to hold the chicken in a single layer, heat the olive oil over medium high heat. Season the chicken pieces with salt and pepper. Add chicken to pan, skin side down and sauté for about 5 minutes per side or until chicken is browned. Remove chicken from pan and reserve. Pour drippings off. In same pan, add butter. 1 large red onion, cut into 1-inch wedges, stem ends left intact
2 tablespoons olive oil

1 1/2 lbs skinless salmon fillet, cut into 4 pieces
lemon wedge, for serving

Steps:

  • Heat oven to 450° F, with the racks in the upper and lower thirds. On a rimmed baking sheet, toss the Brussels sprouts and onion with the oil, ½ teaspoon salt, and ¼ teaspoon pepper. Roast on the bottom rack, tossing once, until golden and tender, 15 to 20 minutes.

When cooked properly Brussels Sprouts have a sweet and nutty flavor with a slight hint of bitterness. This quick and easy recipe offsets that slight bitterness with a sweet maple syrup pan sauce. The recipe can be easily halved. I adapted this from Julie Taras of Little Giant restaurant in New York City.

1/4 cup canola oil
2 1/4 lbs baby Brussels sprouts or 2 1/4 lbs Brussels sprouts, ends trimmed and halved lengthwise

2 tablespoons light brown sugar
1/4 cup grade a pure maple syrup
1 1/2 tablespoons cider vinegar
1 cup vacuum-packed roasted chestnuts or 1 cup walnuts, coarsely chopped

Steps:

  • Over high heat and in a very large skillet, heat canola oil until shimmering. Add sprouts to the skillet and season with salt and pepper. 12-16 organic Brussels sprouts
1 cameo apple (or your favorite baking apple)
2 tablespoons maple syrup
2 tablespoons balsamic or sherry wine vinegar
1 teaspoon chopped rosemary
1 teaspoon salt
Freshly ground pepper to taste
1 small to medium Delicata squash
Apple Cider Reduction (recipe follows)

Steps:

  • 1. Preheat your oven to 425 degrees. 2. Trim the Brussels sprouts and cut them in half lengthwise. Cut the apple in quarters lengthwise, cut out the core and cut each quarter into 4 pieces. Place the sprouts and apples in a bowl. Stir together the maple syrup, vinegar, rosemary, salt and pepper. Pour half of the mixture over the Brussels sprouts and apples and toss. Spread out in a single layer on a parchment lined baking sheet. 3. Cut the squash in half lengthwise and scoop out the seeds. Cut each half in 1/2-inch-thick slices crosswise. Toss the squash with the remaining maple mixture and spread out in a single layer on a second parchment lined baking sheet. 4. Roast all of the ingredients for about 20 minutes. The Brussels sprouts should be lightly golden and crisp tender. The squash should be golden and fork tender. 5. To serve: Mix the squash, Brussels sprouts and apples and divide between individual plates or mound on a serving platter. Drizzle with the apple-cider reduction and garnish with fresh sprigs of rosemary. Apple Cider Reduction 1 quart unsweetened organic apple cider 2 tablespoons maple syrup 2 tablespoons dried cranberries 1. Place all of the ingredients in a saucepan and boil to reduce to a syrup. It will thicken as it cools. You may strain out the cranberries so you can use a squeeze bottle to apply the reduction or leave them in as garnish and spoon over the dish.
