Crust:
1/2 cup (1 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg yolk
1/8 teaspoon salt
1 1/4 cups unbleached all purpose flour
Filling:
3 large eggs
1/2 cup (packed) golden brown sugar
1/2 cup pure maple syrup
1/2 cup dark corn syrup
1/4 cup (1/2 stick) unsalted butter, melted
1/8 teaspoon salt
1 1/2 cups coarsely chopped pecans
Whipped cream or vanilla ice cream

Steps:

  • For crust:
  • Using electric mixer, beat butter in medium bowl until smooth. Add sugar, egg yolk, and salt; beat until blended. Add flour and beat just until dough begins to clump together. Gather dough into ball; flatten into disk. Roll out dough on lightly floured work surface to 10 1/2-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Press dough onto bottom and up sides of pan. Pierce dough all over with fork. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • Place crust in freezer 30 minutes before filling and baking.
  • For filling:
  • Preheat oven to 350°F. Whisk eggs and brown sugar in medium bowl until well blended. Whisk in maple syrup, corn syrup, melted butter, and salt. Stir in pecans. Pour filling into unbaked crust. Place tart on rimmed baking sheet.
  • Bake tart until filling is slightly puffed and set, about 40 minutes. Transfer to rack and cool. DO AHEAD: Can be made 1 day ahead. Tent loosely with foil and let stand at room temperature.
  • Cut tart into wedges and serve with whipped cream or ice cream.

For many, the Thanksgiving holiday wouldn't be the same without pecan pie -- but we twisted tradition by adding chunks of chocolate to the crust and maple sugar to the filling.

5 tablespoons unsalted butter, room temperature
3 tablespoons granulated sugar
2 large eggs, separated
1 cup plus 2 tablespoons all-purpose flour
1 teaspoon coarse salt
3 ounces bittersweet chocolate, finely chopped (1/2 cup)
1/2 cup granulated maple sugar
1 tablespoon all-purpose flour
1/2 teaspoon coarse salt
2 large eggs, plus 2 large egg whites (reserved from yolks used in crust)
2 tablespoons unsalted butter, melted
1/4 cup light corn syrup
1 1/2 cups pecan halves, toasted

Steps:

  • Crust: Preheat oven to 325 degrees. Combine butter and granulated sugar in a medium bowl. Stir in yolks, then flour and salt until mixture resembles coarse meal and holds together when pinched. Fold in chocolate. Press evenly into bottom and up sides of a 13-by-4-inch fluted tart pan with a removable bottom. Refrigerate until firm, about 20 minutes.
  • Bake crust until golden and set, 25 to 30 minutes. Let cool completely on a wire rack. Increase oven heat to 350 degrees.
  • Filling: Whisk together maple sugar, flour, and salt in a medium bowl. Whisk in eggs and whites, butter, and corn syrup until smooth. Place crust on a parchment-lined rimmed baking sheet. Scatter pecans evenly onto crust. Slowly pour in filling. Bake tart until puffed slightly and set, 25 to 30 minutes. Let cool completely on a wire rack. Remove from pan; serve.

PEAR-PECAN TART WITH MAPLE ICE CREAM

2 cups whole milk
1 cup heavy cream
1 cup pure maple syrup
Pinch salt
3 egg yolks
1 teaspoon vanilla extract
1 1/2 cups pecans, toasted and coarsely chopped
1 cup all-purpose flour
1/2 teaspoon kosher salt
1/2 cup cold unsalted butter, cut into small pieces
1 egg, beaten
4 ripe Bosc pears
1/2 cup pure maple syrup
1 tablespoon Cognac

Steps:

  • To make the ice cream, combine the milk, cream, maple syrup and salt in a medium saucepan. Bring just to a boil. Meanwhile, whisk the egg yolks in a mixing bowl. Whisking constantly and rapidly, add the milk mixture to the yolks. Pour the mixture back into the pan and place over low heat. Cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 15 minutes; do not let it come to a simmer. Pour into a bowl, let cool and refrigerate until cold. Stir in the vanilla. Pour into an ice-cream maker and freeze according to the directions.
  • Meanwhile, to make the tart, place 1/2 cup of pecans, the flour and the salt in a food processor and pulse until the pecans are ground. Add the butter and pulse until mixture resembles coarse meal. Add the egg and pulse just until dough begins to come together. Gather dough into a ball, flatten into a disk, wrap in plastic and refrigerate 30 minutes.
  • Preheat oven to 350 degrees. Roll the dough into a circle about 3/8-inch thick and fit it into a 10-inch tart pan. Line the pan with parchment paper, fill with pie weights or raw beans and bake for 20 minutes. Remove the paper and the weights and bake for 5 minutes more. Set aside.
  • Peel, halve and core the pears. Arrange the pear halves in a circle over the crust, cut side down. Scatter the remaining pecans over and around the pears. Drizzle 1/4 cup of maple syrup over the top. Bake until the pears are soft but hold their shape, about 45 minutes, covering the top loosely with aluminum foil if the crust browns too much before the pears are done. Let cool.
  • Stir together 1/4 cup of maple syrup and the Cognac. Brush the mixture over the pears. Cut into wedges and serve with a scoop of maple ice cream.

One 9" Tart Shell, partially baked
1C chopped or broken walnuts and pecans
1C walnut and pecan halves
3 eggs
1/4C creme fraiche (i used sour cream)
1/2C light brown sugar or maple sugar
7/8C maple syrup (real!!!)
2t vanilla
pinch of salt
1/2C Whipping cream
2T maple syrup.

Steps:

  • 1. Preheat to 350. Have the tart shell ready. Put nuts on a baking sheet, keeping chopped nuts and halves separate. Toast for 5 minutes. 2. Whisk eggs w/creme fraiche & sugar. Then add syrup, vanilla, salt. 3. Scatter chopped nuts in the baked tart shell. Carefully pour the custard over the top. Carefully place halves, rounded side up on top of custard 4. Bake the tart until puffed and firm and lightly colored. Approximately 35 minutes. Cool completely before cutting. 5. Whip cream and maple syrup.

Oat Pastry Piecrust, prebaked (page 78)
3 tablespoons unsalted butter
3/4 cup amber agave nectar
3 large eggs or 3/4 cup egg substitute
1 tablespoon bourbon or dark rum
1 teaspoon vanilla extract
1 1/2 teaspoons maple extract
1/2 teaspoon ground cinnamon
1/2 cup pecans, coarsely chopped and roasted in a 350°F oven for 5 minutes
2 tablespoons sprouted spelt flour
2 cups pecan halves
Sinfully Rich Vanilla Bean Ice Cream (page 82), Soy Vanilla Ice Cream (page 83), or Agave Nectar Whipped Cream (page 113), for garnish (optional)

Steps:

  • Preheat the oven to 350°F.
  • Prepare the pie dough, press into a 10-inch tart pan with a removable bottom, and bake for 5 minutes.
  • To prepare the filling, beat the butter and agave nectar with an electric mixer until fluffy. Add the eggs, 1 at a time, and beat again until well combined. Add the bourbon, vanilla extract, maple extract, and cinnamon and mix until combined. In a separate bowl, mix the chopped pecans with the flour and fold them into the egg mixture. Pour into the prebaked piecrust and bake for 15 minutes, or until the filling is lightly set.
  • Remove the tart from the oven and arrange the pecan halves in concentric circles over the top of the tart, pressing down lightly into the filling. Bake for another 30 minutes, or until completely set. Halfway through baking, cover the tart with tented foil to prevent the pecans from overbrowning. Remove from the oven and cool on a cooling rack. Serve warm with vanilla ice cream or whipped cream.
