BAKED HAM WITH LOW CARB MAPLE BOURBON GLAZE



Baked Ham with Low Carb Maple Bourbon Glaze image

9 to 10 pound hickory smoked ham (fully cooked), butt portion
1 teaspoon maple extract
1 teaspoon dry mustard
1 teaspoon white vinegar
1 1/4 cups sugar substitute (recommended: Splenda)
2 to 3 tablespoons bourbon
1 tablespoon whole cloves

Steps:

  • Preheat oven to 325 degrees F.
  • Place ham face down in a shallow baking pan and cover loosely with aluminum foil.
  • Place on lower rack of oven and bake for 1 hour.
  • While the ham is baking, mix together all the glaze ingredients in a bowl and set aside.
  • After 1 hour of cooking, remove ham from oven, uncover and stand ham up on 1 side. With a sharp knife and in a "tic-tac-toe" fashion, make shallow cuts all over the fatty side of the ham, scoring 1-inch squares. Insert single whole cloves in every corner of the squares created by the cuts. Pour the glaze over the top and let drip down the ham. Place uncovered ham back in the oven and cook for another 30 minutes. Remove from oven and let stand 15 minutes before slicing.

1 spiral-sliced fully cooked bone-in ham (7 to 9 pounds)
GLAZE:
1/2 cup packed brown sugar
1/2 cup maple syrup
2 tablespoons prepared mustard
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 300°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 1-1/2 to 2 hours., Meanwhile, in a large saucepan, combine glaze ingredients. Bring to a boil; cook and stir until slightly thickened, 2-3 minutes. , Remove ham from oven. Pour glaze over ham. Bake ham, uncovered, until a thermometer reads 140°, 15-30 minutes longer.

2 cups freshly squeezed orange juice
1/2 cup freshly squeezed lime juice
1/2 cup dark brown sugar
1/4 cup smoked maple bourbon, such as Knob Creek
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
1 large habanero, 3 slits cut into it
One 3- to 4-pound spiral ham

Steps:

  • Combine the orange juice, lime juice, brown sugar, bourbon, maple syrup, vinegar and habanero in a large saucepot. Bring to a boil then reduce to a simmer. Simmer until reduced and slightly thickened, about 30 minutes. Remove from the heat and cool completely (the mixture will thicken as it cools). Remove the habanero and set aside until ready to use. This can be done ahead of time.
  • Preheat the oven to 425 degrees F.
  • Put your ham in a roasting pan and cook until gently warmed through, about 45 minutes. Then begin basting it was the glaze until it's nicely caramelized, another 20 minutes. Remove the ham, tent with foil and let rest for 10 minutes before slicing. Serve with any remaining glaze.

One 8-pound spiral-cut ham
1/2 cup apricot jam
2 tablespoons maple syrup
2 tablespoons Louisiana-style hot sauce
1 tablespoon Dijon mustard
Bread and butter pickles, for serving, plus 1 tablespoon pickle brine
Parker House-style rolls, for serving

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with aluminum foil. Place the ham on the baking sheet.
  • Stir together the jam, maple syrup, hot sauce, Dijon and pickle brine in a small pan over medium heat. Cook until everything is combined and the mixture is pourable, 2 to 3 minutes. Brush the mixture onto the ham, reserving any excess for a final glaze at the end.
  • Bake, rotating and basting the ham with the glaze and juices every hour, until browned on top and warmed through, 1 1/2 to 2 hours. Serve as mini sandwiches on the rolls with pickles.

1 (5 pound) boneless ham
⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

10 lbs smoked ham (precooked with bone, trimmed)
2 teaspoons whole cloves
1/4 cup whole-grain Dijon mustard
1/2 cup dark brown sugar
1/2 cup maple syrup
1 1/2 cups low sodium chicken broth
2 tablespoons Bourbon
1 large navel orange, juiced
1 tablespoon fresh thyme, chopped
1 tablespoon maple sugar (optional)
1 teaspoon fresh orange zest
1/4 teaspoon salt

Steps:

  • Prepare the ham; Heat oven to 325 degrees F. Trim the skin and the fat to a 1/4 inch layer on the ham. Score the fat in a diamond pattern (using a sharp knife). Insert a whole clove into each cross-hatch, pat the mustard over the top and sides of the ham, and sprinkle with the brown sugar. Pour the maple syrup and chicken broth into a 12 x l7 inch roasting pan. Add the ham. Bake, basting every 30 minutes, for 1 1/2 hours. Add the bourbon, orange juice, and thyme to the pan. Sprinkle the ham with the maple sugar, if desired. Bake basting after 15 minutes, for 30 minutes and remove from the oven.
  • Prepare the sauce: Strain the pan juices and skim the fat off the top. Add the orange zest and salt, and boil for about 10 minutes. Serve hot with the ham.

8-10 lb ham, fully cooked spiral-cut, bone-in
1/2 c brown sugar, firmly packed
1/4 c dijon mustard
1 tsp cloves, ground
1 tsp cinnamon, ground
1 large orange, zest
1/4 c maple syrup
1/4 c bourbon

Steps:

  • 1. Preheat oven to 350 degrees. Put a cup of water in the bottom section of a large broiler pan. Add rack and place ham, meat side down.
  • 2. Combine ingredients 2-8. Mix well. Brush half of the mixture all over ham. Loosley cover ham with aluminum foil and bake for 45-50 minutes. Brush the remaining mixture all over ham and bake uncovered for an additional 20 minutes or until internal temperature is 160 degrees and the ham has caramelized.

1 (6 -8 lb) fully cooked bone-in spiral-sliced ham
1 1/2 cups pure maple syrup
1/4 cup molasses
1/4 cup Bourbon
2 tablespoons Dijon mustard
1/2 teaspoon ground allspice
1/4 teaspoon fresh ground black pepper

Steps:

  • Make the glaze: stir all glaze ingredients together in a bowl until blended; set aside (can be made ahead of time and stored in airtight container in the refrigerator for up to two weeks).
  • Preheat oven to 300°; line a large roasting pan with foil or a silicone baking liner.
  • Remove ham from its packaging and drain off any juices.
  • Place ham in prepared pan, flat side down, making sure to remove the little plastic disk covering the bone, and cover the ham and pan completely with foil.
  • Bake until an instant-read thermometer inserted in the center reads 120°, about 2 ½ hours.
  • Increase oven temperature to 400° and remove the foil covering from the pan.
  • Pour the glaze over the ham and bake uncovered, basting every 10 minutes with the pan juices, until the glaze is set, another 20-30 minutes.
  • Remove the ham from the oven and let it rest for 15 minutes before carving.
  • Serve the ham drizzled with any remaining glaze/pan drippings.

6 lbs ham
3/4 cup orange juice
1 cup brown sugar
1 teaspoon mustard powder
1 cup Bourbon
4 tablespoons butter

Steps:

  • Mix together butter, brown sugar, and mustard powder.
  • Bake ham, wrapped in heavy paper towel, for 2 hours at 325 degrees. Remove paper towel; cut off fat, then score the ham.
  • Rub butter mixture all over the ham.
  • Stir bourbon and orange juice together.
  • Pour half of the o.j. and bourbon over the ham.
  • Continue to bake ham another 45 minutes, basting every 15 minutes with remaining o.j. and bourbon.
