This oatmeal quick bread has three sources of apple--apple cider, applesauce, and diced apple--with just a hint of maple flavoring. It's a one-bowl recipe that comes together fairly quickly and tastes great when served warm. Can also be served at room temperature.

¾ cup apple cider
½ cup maple syrup
½ cup plain whole-milk Greek yogurt
½ cup unsweetened applesauce
2 large eggs
1 tablespoon vegetable oil
1 teaspoon vanilla extract
1 teaspoon maple extract
1 ⅓ cups whole wheat flour
1 cup rolled oats
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon ground cardamom
½ teaspoon salt
¼ teaspoon ground nutmeg
1 cup peeled and diced apples
½ cup chopped walnuts, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 1/2 x 4 1/2-inch loaf pan and line the bottom with parchment paper.
  • Whisk apple cider, maple syrup, yogurt, applesauce, eggs, vegetable oil, vanilla extract, and maple extract together in a bowl until thoroughly combined. Mix in flour, oats, cinnamon, baking powder, baking soda, cardamom, salt, and nutmeg until incorporated. Fold in apples and walnuts. Pour batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles.
  • Bake in the preheated oven until a toothpick inserted into the center of the bread comes out clean, 55 to 60 minutes. Allow bread to cool in the pan for 30 minutes. Gently run a knife around the edge of the pan to loosen and turn loaf out onto a wire rack to cool.

1-3/4 cups boiling water
1 cup old-fashioned oats
1/2 cup maple syrup
1/3 cup sugar
1/3 cup shortening
2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
2 eggs
3 cups whole wheat flour
3 cups all-purpose flour

Steps:

  • In a large bowl, pour boiling water over oats. Add syrup, sugar, shortening and salt. Let stand until mixture cools to 110°-115°, stirring occasionally., In a small bowl, dissolve yeast in warm water. Add yeast mixture, eggs, whole wheat flour and 1 cup all-purpose flour to oat mixture. Beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. 1 cup plus 2 tablespoons warm water (105°F to 115°F)
1 large egg
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup pure maple syrup (preferably grade B)
1/2 teaspoon maple extract
2 cups unbleached all purpose flour
2 cups whole wheat flour or white whole wheat flour
1 cup old-fashioned oats
1 teaspoon salt
2 teaspoons quick-rising yeast

Steps:

  • Place all ingredients, in order listed, into large bowl of heavy-duty mixer fitted with dough hook. Beat at low speed until dough is smooth, comes cleanly from sides, and climbs hook, adding more flour by 1/4 cupfuls if dough is very sticky, about 8 minutes. Scrape dough from hook. Cover bowl with plastic wrap and towel. Let rise in warm draft-free area until doubled in volume, about 1 1/2 hours.
  • Butter 9x5x3-inch metal loaf pan. Butter sheet of plastic wrap. Scrape dough onto lightly floured surface. Knead until smooth, about 2 minutes. Shape into 8x3-inch log. Place in prepared pan; cover loosely with prepared plastic wrap, buttered side down. Let dough rise in warm draft-free area until center is 1 1/2 inches higher than pan, about 45 minutes. Preheat oven to 350°F. Gently pull plastic off dough. Place bread in oven; bake until deep golden and instant-read thermometer inserted into center registers 180°F, about 30 minutes. Cool in pan 15 minutes. Run small knife around bread; turn out of pan. Cool completely on rack. DO AHEAD: Can be made 4 days ahead. Wrap in foil; store at room temperature.

This is one of my favorite recipes, especially since it features maple syrup. Vermont produces more maple syrup that any other state.

5-1/2 to 6 cups bread flour

Let stand until mixture cools to 110°-115°, stirring occasionally. , In a large bowl, dissolve yeast in warm water. Add the oat mixture, eggs, sugar and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.

Recipe from my friend Gail in Vermont! She has made her own Maple sugar; but you can substitute regular brown sugar, if you like.

2 c boiling water
1 c old fashioned oatmeal
1/2 c maple sugar or brown sugar
1/2 tsp maple flavoring
1 Tbsp honey
1/4 c real butter
1 tsp salt
1 Tbsp cinnamon
1 pkg instant active dry yeast
1 1/2 c white whole wheat flour
4 c all purpose flour

Steps:

  • 1. In a large mixing bowl, combine the first 8 ingredients. Let cool to lukewarm. Add the yeast and flours, stirring to form a rough dough. Knead about 10 minutes by and about 5-7 minutes by mixer, until the dough is smooth and satiny. Transfer the dough to a lightly greased bowl, cover the bowl with lightly greased plastic wrap, and let rise for 1 hour.
  • 2. Divide the dough in half and shape each half into a loaf. Place the loaves in 2 greased 8 x 4- inch bread pans. Cover the pans with lightly greased plastic wrap, and allow the loaves to rise 1 inch above the pan, about 1 hour.
  • 3. Bake the loaves in a preheated 350^ oven for 35-40 minutes. Remove from the oven when golden brown and interior is about 190^ on instant-read thermometer.

A slightly sweet dense bread that is great toasted and for sandwiches. I use thick organic oats. Just don't use the quick or instant. Use real maple syrup. Grade B has the most flavor. Thanks Blucoat, for the reference, I did not know where it was from - I got the recipe from a friend, who got it from another friend. Posted it because I thought it was a wonderful bread.

1 cup rolled oats
2 1/4 tablespoons yeast
3/4 cup maple syrup
2 teaspoons salt

5 cups bread flour

Steps:

  • In bowl for standing mixer, pour boiling water over oats and soak for 1 hour.
  • Sprinkle yeast over cooled mixture and mix.
  • Add maple syrup, salt, oil, and 3 cups of flour and mix.
  • Cover with plastic wrap and let rise for an hour.
  • Move to mixer and mix on low while adding remaining flour, 1/2 cup at a time to form a smooth, elastic dough.
  • Kneed with dough hook for 10 minutes.
  • Divide into 2 pieces, put in oiled loaf pans and let rise about 45 minutes.
  • While dough is rising, preheat oven to 350°F.
  • Bake 40-50 minutes until golden brown.

3/4 cup + 2 tablespoons hot water
1/2 cup old-fashioned rolled oats
1/4 cup real maple syrup
1/2 teaspoon maple flavor
1/4 cup butter
1 1/4 teaspoons salt
1/2 teaspoon cinnamon
3/4 cup King Arthur 100% White Whole Wheat Flour
2 cups King Arthur Unbleached All-Purpose Flour
2 1/4 teaspoons instant yeast
TOPPING
water, to brush on crust
2 to 3 teaspoons maple sugar, for sprinkling

Steps:

  • 1) In a large mixing bowl, combine the water, oats, maple syrup, maple flavor, butter, salt, and cinnamon. Let cool to lukewarm; this will happen naturally as you stir. 2) Add the flours and yeast, stirring to form a rough dough. Knead (about 10 minutes by hand, 7 minutes by machine, or on the dough cycle in the bread machine), enough to make a nicely springy dough. 3) Transfer the dough to a lightly greased bowl or large (8-cup) measuring cup, cover the bowl or cup with plastic wrap, and allow the dough to rise for 60 to 90 minutes. It should become very puffy, and just about double in bulk. 4) Gently deflate the dough, and shape it into an 8" log. Place it in a lightly greased 8 1/2" x 4 1/2" loaf pan. Cover the pan, and set the loaf aside to rise till it's crowned about 1" over the rim of the pan, about 60 to 90 minutes. Towards the end of the rising time, preheat the oven to 350°F. 5) Gently brush the top of the risen loaf with water, and sprinkle with maple sugar. 6) Bake the bread for 35 to 40 minutes, tenting with foil after about 15 minutes to prevent over-browning. The interior of the fully baked loaf should read 190°F on an instant-read thermometer. 7) Remove the bread from the oven, and after 5 minutes turn it out of the pan onto a rack to cool. Allow it to cool fully before slicing.
