MAPLE-OATMEAL COOKIES

Number Of Ingredients 10

3 cups old-fashioned rolled oats
1 cup all-purpose flour (spooned and leveled)
1 teaspoon fine sea salt
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, stir together oats, flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla, and 1/4 cup water, scraping down bowl as needed. With mixer on low, beat in oat mixture in 2 additions until just combined.
  • Drop dough in rounded teaspoons, 2 inches apart, onto parchment-lined baking sheets. Bake until edges are golden, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely. (Store cookies in an airtight container, up to 1 week.)

1/2 cup shortening
1 cup packed brown sugar
1 large egg
1/2 cup maple syrup
1/2 teaspoon vanilla extract or maple flavoring
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sweetened shredded coconut

Steps:

  • In a bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup and vanilla until well mixed. Combine flour, baking powder and salt; add to the creamed mixture. Stir in coconut. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 12-15 minutes or until lightly browned.

½ cup shortening
1 cup packed brown sugar
1 egg
½ cup real maple syrup
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup flaked coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed.
  • Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 2-inches apart onto greased baking sheets.
  • Bake at 375 degrees F (190 degrees C) for 10-12 minutes.

3/4 cup butter, softened
1/2 cup sugar
1 egg
1 cup maple syrup
1 teaspoon vanilla extract
3 cups quick-cooking oats
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans
1/2 cup raisins

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, syrup and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and raisins. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Cool for 2 minutes before removing from pans to wire racks.

Here's a recipe I found many years ago in an old Pillsbury Bake-Off Cookbook. These yummy cookies have a unique crispy-chewy texture and a delicious mapley flavor. My family loves them!

3/4 cup butter, softened
1 cup white sugar
1 cup brown sugar, packed
1 tablespoon molasses
2 teaspoons maple extract
2 eggs
1 3/4 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups oatmeal
2 cups crisp rice cereal

Steps:

  • Cream butter (a combination of half butter and half margarine works best) and sugars; add molasses, maple extract, and eggs; beat well.
  • Combine flour, baking powder, cinnamon, and salt; add to dough; stir in oatmeal and crisp rice cereal.
  • Drop heaping teaspoonfuls of dough onto greased baking sheets.
  • Bake at 350 for 8-10 minutes until light golden-brown.
  • Cool 2 minutes on baking sheets; remove cookies and cool completely on rack.
  • Store cooled cookies in sealed container to preserve their chewy texture.

1 cup crisp rice cereal
1 cup bran flakes
1/4 cup almonds, chopped
1/4 cup peanuts, chopped
1/2 cup sunflower seeds
1/2 cup raisins
1 (8 ounce) package diced dried fruit
1/4 cup butter, melted
1 1/2 cups pure maple syrup

Steps:

  • Heat oven to 325F degrees.
  • In 13 X 9" baking pan spread rolled oats.
  • Bake, stirring occasionally, for 20 to 30 mins or until light golden brown.
  • Stir in crisp rice cereal, bran flakes, almonds/nuts and sunflower seeds.
  • Continue baking for 14 to 16 mins or until lightly toasted.
  • Remove from oven; stir in raisins and dried fruit.
  • In small bowl stir together butter and syrup; pour over cereal mixture.
  • Stir to coat well.
  • Continue baking, stirring occasionally, for 45 to 50 minutes or until mixture clumps together and is golden brown.
  • Spread on waxed paper.
  • Cool completely; break into pieces.
