3/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup maple syrup
1/4 cup Dijon mustard
2 garlic cloves, minced
1/4 teaspoon pepper

Steps:

  • In a jar with a tight-fitting lid, combine all ingredients; shake well. Store in the refrigerator. Shake before serving.

For the Salad:
Mesclun greens, 4-6 cups
2 pears, peeled and chopped (toss with some lemon juice to keep them from discoloring if necessary)
1/4 cup thinly sliced red onion rings, halved (optional)
1/3 cup crumbled Gorgonzola cheese
2/3 cup Maple Candied Walnuts or Pecans (in a pinch, just toast some nuts), roughly chopped
For the Maple Candied Walnuts or Pecans:
1 tablespoon butter
1 tablespoon maple syrup
pepper to taste
1/2 cup pecan or walnut halves
For Maple Dijon Vinaigrette:
3/4 cup olive oil
1/4 cup cider vinegar
1/4 cup maple syrup
2 Tbsp Dijon mustard
1 Tbsp garlic, minced
pepper to taste
For Nordstrom's Champagne Vinaigrette:
1 tablespoon chopped shallot
1 tablespoon Dijon mustard
2 tablespoons sugar
1 teaspoon minced garlic
1/2 cup Champagne wine vinegar
1 1/2 cups salad oil
3/4 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • To Make Candied Walnuts: Melt the butter in a pan Mix in the maple syrup and pepper Add the pecans and toss to coat Cook on medium low heat about 15 minutes. Stir every 5 minutes. Watch carefully so they don't burn. Turn out on aluminum foil and let cool for 5 minutes; break apart if necessary. To Make either Dressing: Mix all ingredients in bowl using wire whisk. Place greens on individual plates. Sprinkle chopped pears, nuts and gorgonzola on top of salad greens. Drizzle dressing over salad or serve on the side to suit individual tastes. Beautiful and delicious.

8 slices bread, i used italian sweet and savory bread by marie Italian Sweet and Savory Bread (your choice of bread)

Steps:

For the salad:
2 small-medium butternut squash, peeled and diced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 cup hazelnuts
3 cups arugula, roughly chopped
6 figs, halved
1/2 cup micro greens (optional)
For the dressing:
1 head garlic, roasted
1 tablespoon whole grain mustard
3 tablespoons red wine vinegar
2 tablespoons Grade B maple syrup
2 tablespoons plus 2 teaspoons extra-virgin olive oil
Salt & pepper, to taste

Steps:

  • Preheat the oven to 400 degrees. On a rimmed baking sheet, toss the squash with the olive oil, salt, pepper, ginger, and nutmeg. Bake for 15 minutes. Set aside until needed. While the squash is cooking, add the hazelnuts to a small baking sheet and roast at 400 for 10 minutes. When they are done, put them in a kitchen towel and roll them around against each other until all or most of the skins fall off. Cut each hazelnut in half (or leave whole if you don't mind a bigger crunch). While the squash and hazelnuts are cooling, prepare the dressing (recipe below). To assemble, layer the following on each plate: 1 1/2 cups arugula, 1/4 cup squash, 6 fig halves, 1/8 cup hazelnuts, and 1/4 cup micro greens. Spoon dressing over the top and top with some freshly ground black pepper.

In December we were in Washington, D.C. and had a wonderful beet salad at a little bistro. This recipe is as close as it gets to replicating that experience. Roasting the beets really brings out the sweetness, lightly drizzled with the dressing, sprinkled withe feta and toasted walnuts for an elegant dining experience. Hope you enjoy.

3 red beets with tops
3 yellow beets with tops
6 cups mixed spring greens
1/2 medium red onion, thinly sliced, separated into rings
1/3 cup crumbled feta cheese
1/4 cup walnuts, toasted
2 tablespoons maple syrup
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1 teaspoon lemon juice
1/4 cup olive oil

Steps:

  • Preheat oven to 425 degrees. Cut the tops off the beets leaving about 2 inches of the stalk. Scrub beets well and wrap in foil with 2 beets of equal size in each packet.
  • Place on a baking sheet and bake in preheated oven until beets yield to gentle pressure; approximately 1 hour. Remove from oven, unwrap and allow to cool. When cool enough to handle, slip the skins off of the beets; set aside.
  • While the beets are roasting, place the maple syrup through lemon juice in a blender container. Blend until well combined. With blender running, drizzle in the olive oil and continue to blend until thickened.
  • To assemble the salad, place the greens in a large bowl and drizzle with a small amount of dressing, toss to coat. Divide the greens among 6 chilled plates. Quarter beets or if large cut in eights and divide among the plates, top with onion rings, sprinkle feta and walnuts over all.
  • Serve with addition dressing on the side.

I stumbled upon this lovely, delicate salad dressing on a blog called Happy, Healthy, Life. Lots of raw food recipes, vegan, vegetarian. This dressing is very nice on tender baby spinach greens. I like to add some honey goat cheese and toasted walnuts.... When entering this recipe it wouldn't let me also show the substitution for the grapefruit juice .... if you don't want to use grapefruit you can substitute 1/2 orange plus 1/2 lemon (both freshly juiced)
