- In a jar with a tight-fitting lid, combine all ingredients; shake well. Store in the refrigerator. Shake before serving.

MAPLE-DIJON VINAIGRETTE
Steps:
- Whisk together the maple syrup, mustard and cider vinegar in a large bowl. Whisk in the olive oil in a slow, steady stream until the vinaigrette emulsifies and thickens.
- Toss the mixed greens with the vinaigrette and serve.
MAPLE SYRUP VINAIGRETTE
This maple-mustard vinaigrette goes well with a harvest salad.

- Blend together all ingredients. Add a teaspoon more of vinegar or mustard if you like a sharper taste. The dressing gets better overnight and keeps for 4 to 5 days.
MAPLE CITRUS DIJON SALAD DRESSING
I stumbled upon this lovely, delicate salad dressing on a blog called Happy, Healthy, Life. Lots of raw food recipes, vegan, vegetarian. This dressing is very nice on tender baby spinach greens. I like to add some honey goat cheese and toasted walnuts.... When entering this recipe it wouldn't let me also show the substitution for the grapefruit juice .... if you don't want to use grapefruit you can substitute 1/2 orange plus 1/2 lemon (both freshly juiced)
