1 tablespoon vegetable oil
1/2 cup onion, chopped
1/2 cup maple syrup
1/2 cup ketchup
1/4 cup Bourbon or 1/4 cup whiskey
1 teaspoon hot sauce (optional)
1/2 cup mayonnaise
2 1/2-3 lbs chicken

Steps:

  • In medium saucepan, heat oil over medium-high heat and cook onion, stirring occasionally, 5 minutes or until golden.
  • Add maple syrup, ketchup, bourbon and hot sauce. Bring to boil; reduce heat and simmer 5 minutes or until sauce is reduced by 1/4 cup. Remove from heat.
  • Whisk in mayonnaise until smooth.
  • Grill chicken, turning once and brushing frequently with mayonnaise mixture. Cook until chicken is done and juices run clear.

2/3 cups maple syrup
2/3 cups bourbon
1/4 cups dark brown sugar
1/2 teaspoon crushed red pepper
4 pounds Chicken

Steps:

  • Preheat oven to 375*. In small saucepan, mix syrup and bourbon. Bring to a boil, reduce the heat and simmer until it reaches the thickness of a syrup (~1C). Allow to cool and thicken. Generously season chicken with s/p. Place uncovered in roasting pan and cook until almost done. Brush chicken liberally with glaze and return to oven. Cook until glaze is dark and glassy and chicken temp registers done. Cover with foil if browning too fast.
