A quick, easy bread that works well with Italian foods and pastas. Try forming the dough into a round ball or a long loaf for French bread.

Number Of Ingredients 6

½ cup warm water (110 degrees F/45 degrees C)
2 ¼ teaspoons active dry yeast
1 teaspoon white sugar
1 teaspoon salt
4 tablespoons olive oil
2 ½ cups all-purpose flour

Steps:

  • In a large bowl mix together the warm water (110 degrees), yeast, sugar, salt, and olive oil. Stir in 2 cups of the flour in order to make a soft ball. Knead in additional flour so that dough is soft and not sticky. Place kneaded dough in a medium size greased bowl. Cover and let rise until doubled in size.
  • Punch down dough, and form into ball or loaf shape. Place onto a greased cookie sheet. Cover and let rise for 15 to 20 minutes. Preheat the oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven for 30 to 40 minutes, until golden brown.

A moist banana bread made with olive oil, Greek yogurt (or sour cream), and a crunchy walnut topping. I borrowed techniques from a few recipes to create my ideal recipe!

1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
¼ teaspoon ground cinnamon
¾ cup dark brown sugar
2 tablespoons white sugar
2 large eggs eggs
½ cup olive oil
1 ½ cups mashed banana
¼ cup whole-milk Greek yogurt
1 teaspoon vanilla extract
3 tablespoons chopped walnuts
1 tablespoon Demerara sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour a 10x5-inch loaf pan.
  • Sift all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon together.
  • Beat brown sugar, white sugar, and eggs in a stand mixer or with a hand-held electric mixer until light and fluffy, about 5 minutes. Reduce speed to low and slowly drizzle in olive oil until evenly combined. Beat in bananas, Greek yogurt, and vanilla extract until combined. Fold in 1/3 of the flour mixture with a spatula; repeat twice more until flour is fully incorporated.
  • Pour batter into the prepared loaf pan. Sprinkle walnuts and Demerara sugar over the top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 60 minutes.

2 teaspoon(s) dry yeast
2 1/2 cup(s) water
1 1/4 cup(s) whole-wheat flour
3 1/2 cup(s) unbleached flour
2 teaspoon(s) salt
1/2 cup(s) olive oil

Steps:

  • Sprinkle the yeast into 1 3/4 cups of the water in a bowl. Leave for 5 minutes; stir to dissolve. Mix the flours in a large bowl. Make a well in the center and pour in the dissolved yeast.
  • Use a wooden spoon to draw enough of the flour into the dissolved yeast to form a soft paste. Cover the bowl with a dish towel, then let "sponge" until frothy and risen, about 20 minutes.
  • Add the salt and the oil to the sponge. Mix in the rest of the flour from the sides of the well. Stir in the remaining water, as needed, to form a very sticky dough.
  • Turn the dough out onto a floured work surface. Knead until smooth, about 10 minutes.
  • Put the dough in a clean, oiled bowl, cover with a dish towel. Let rise until doubled in size, about 1 hour. Punch down, cover with a dish towel, and let until doubled in size, about 40 minutes.
  • Punch down dough and roll into a ball, about 10 minutes, then let rest for 10 minutes.
  • Divide the dough into two pieces. Shape each piece into a long loaf, about 10 inches in length. Place on a floured baking sheet and cover with a dish towel. Proof for 15 minutes.
  • Cut in lengthwise slash, 1/2" deep, down the center of each loaf. Bake in preheated 400* oven for 45 minutes, until golden brown. Cool on wire rack. 3 points per slice
