CHICKEN PARMESAN BURGERS

3 tablespoons olive oil, divided
1 small onion, finely chopped
2 garlic cloves, minced
3/4 cup marinara sauce, divided
1/2 cup finely chopped or shredded part-skim mozzarella cheese
1/2 cup dry bread crumbs
1 teaspoon Italian seasoning
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound ground chicken
4 slices part-skim mozzarella cheese
4 hamburger buns, split and toasted
1/4 cup shredded Parmesan cheese
Fresh basil leaves, optional

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high heat. Add onion; cook and stir until tender, about 3 minutes. Add garlic; cook 1 minute longer. Remove from heat; cool slightly., In a large bowl, combine 1/4 cup marinara sauce, chopped mozzarella cheese, bread crumbs, seasonings and onion mixture. Add chicken; mix lightly but thoroughly. With wet hands, shape into four 1/2-in.-thick patties., In the same skillet, heat remaining 2 tablespoons oil over medium heat. Cook burgers until a thermometer reads 165°, 4-5 minutes on each side. Top with sliced mozzarella cheese; cook, covered, until cheese is melted, 1-2 minutes., Serve in buns; top with remaining 1/2 cup marinara sauce, Parmesan cheese and, if desired, basil leaves.

2 lbs ground chuck
1 green pepper
4 cloves garlic
1 yellow pepper
2 white onions
1 green onion
1 teaspoon oil
1/2 cup breadcrumbs
lettuce
tomatoes
4 kaiser rolls
sliced sharp cheddar cheese

Steps:

  • Saute the vegitation with the oil on medium heat for about ten minutes.
  • One onion is to top the burgers.
  • Combine the foilage with the meat and breadcrumbs in a large bowl, mixing well with large hands.
  • Separate into patties: four manly patties or more for non-manly patties.
  • Grilling is preferred, however, pan fried will do during harsh conditions.
  • Cut up one white onion and saute it separately.
  • Place on cooked burger.
  • Place cheese on top of burger at the end of grilling, allowing to melt.
  • Real men eat burgers with melted cheese and cooked onions.
  • Please, warm your buns.
  • Real men hate cold buns, so lightly brush the buns with oil and let them sit in a pan for about a minute.
  • Lettuce and tomatoes are for decoration only.
  • Real men don't eat food for rabbits.

5 fresh jalapeno peppers
4 pounds ground beef
salt and pepper to taste
1 egg
¼ cup steak sauce, (e.g. Heinz 57)
¼ cup minced white onion
1 teaspoon hot pepper sauce (e.g. Tabasco™)
1 pinch dried oregano
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
¼ cup crushed Fritos® corn chips
8 large potato hamburger buns
8 slices pepperjack cheese

Steps:

  • Preheat a grill for high heat. When the grill is hot, roast the jalapeno peppers until blackened on all sides. Place in a plastic bag to sweat and loosen the blackened skin. Rub the skin off, then seed if desired, and chop.
  • In a large bowl, use your hands to mix together the chopped jalapenos, ground beef, salt, pepper, egg, steak sauce, onion, hot pepper sauce, oregano, Worcestershire sauce, garlic salt and Fritos®. Divide into 8 balls, and flatten into patties.
  • Grill patties for 10 to 15 minutes, turning once, or until well done. I always drink one beer, then flip, drink another beer, then remove from the grill and place on buns. Top each one with a slice of pepperjack cheese and pig out!
