1 -1 1/2 mango
8 ounces crushed pineapple
14 ounces condensed milk (regular)
12 ounces evaporated milk (regular)
8 ounces Cool Whip
red food coloring
yellow food coloring
coconut (optional)
nuts (optional)

Steps:

  • Cut and smash up mango until its in a coarse pulp.
  • In a bowl combine the milks and add a few drops of the food coloring to give it a very light orange color. One to two drops should be enough.
  • Drain pineapple well, add pineapple and mango to bowl with milks and stir well with a large spoon.
  • Fold in whipped cream until well incorporated, the whip cream will dissolve some in the mixture.
  • Pour into a large plastic container and freeze for at least 6 hours but more may be needed depending on temperature of freezer.

{Video below} A magic way to make a creamy scoopable ice cream without an ice cream maker! It's truly creamy and scoopable like ice cream you buy in tubs. Store bought is simply no comparison because you just cannot buy a real mango flavoured ice cream at the shops. It just doesn't exist! Note: I wasn't able to make this with an extremely intense mango flavour because the more mango that is added, the less creamy it gets. So getting the best mango flavour into the ice cream is dependent on using juicy ripe mangoes with good mango flavour! See Note 1. Also see notes for how to make this with other flavours. :)

2 large mangoes (, ripe and juicy - to make 2 cups puree (Note 1))
395 g / 14 oz sweetened condensed milk ((1 can))
2 cups thickened cream / heavy cream / whipping cream (, cold)
1/8 tsp yellow liquid food colouring ((optional) (Note 5))

Steps:

  • Dice the flesh of the mango (see video for how I do it). Puree using a blender, food processor or stick blender then measure out 2 cups of mango puree (about 2 1/4 cups of diced mango).
  • Pour puree into a non stick skillet over medium low heat. Cook, stirring constantly, for 8 - 10 minutes or until it reduces by half. The test is when you can drag a wooden spoon across the skillet and the path remains there for a second (see video). Or measure out the puree to ensure it's reduced to at least 1 cup - less is even better!
  • Cool puree.

1 firm mango, peel and pit removed (about 2 cups chopped)
2 cups pineapple chunks
2 large, juicy limes, peel and pith removed
1 tablespoon chia seeds, optional

Steps:

  • Juice, in this order, the mango, pineapple and limes, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. Serve the juice immediately over ice, if desired.

NO-CHURN PINEAPPLE ICE CREAM SLICES



No-Churn Pineapple Ice Cream Slices image

What fun to slice into a whole fresh pineapple and discover homemade pineapple ice cream inside! Not to mention the ice cream is "no-churn," meaning no ice cream machine required. Serve as is or dip the edges in toasted coconut for a sweet, summery treat.

One 4-pound pineapple
One 7.4-ounce can sweetened condensed coconut milk
1/2 teaspoon pure vanilla extract
Pinch kosher salt
1 cup heavy cream, chilled
3/4 cup sweetened shredded coconut, toasted, optional (see Cook's Note)

Steps:

  • Cut off the top of the pineapple and discard. Use a pineapple corer to remove the flesh and core of the pineapple, making sure to go all the way to the bottom without piercing any holes; discard the core and save the flesh. Pat dry the inside of the hollowed-out pineapple with a couple of paper towels (this will ensure that the ice cream adheres), then place in the freezer to chill while you make the ice cream.
  • Transfer half of the pineapple flesh (about 9 ounces) to a blender; save the other half for another use. Add the sweetened condensed coconut milk, vanilla and salt to the blender, then blend on high, scraping down the sides of the carafe with a rubber spatula as needed, until the mixture is very smooth, about 1 minute.
  • Beat the heavy cream in a large bowl with an electric mixer on medium-high speed until it's fluffy and holds stiff peaks, 1 to 2 minutes. Gently fold half of the pineapple mixture into the whipped cream with a rubber spatula until combined. Fold in the remaining pineapple mixture until all is combined and no streaks remain.
  • Spoon the pineapple mixture into the chilled, hollowed out pineapple. Cover loosely with plastic wrap and freeze until solid, at least 6 hours and up to overnight.
  • If frozen overnight, let the pineapple thaw in the refrigerator for 15 minutes before serving. To serve, use a sharp long chef's knife to cut the pineapple lengthwise into quarters. Trim off the bottom, then slice each quarter crosswise into 1-inch-thick wedges (about 20 slices total). Serve immediately as is. Alternatively, dip the edges of each pineapple slice in the toasted coconut, then serve.
