- Muddle the agave and half of Fresno slices in a cocktail shaker. Fill the shaker with ice and add the tequila, mango juice, passionfruit juice, orange liqueur and lime juice. Shake vigorously to combine. Strain into a glass over a large ice cube. Garnish with a Fresno slice.

- Cut the passion fruits in half and scoop the seeded flesh into a blender. Add the mango, yogurt, orange juice, vanilla, a pinch of salt and 4 ice cubes. Blend until smooth; you'll still be able to see the broken up seeds. Drink right away.

PASSION FRUIT FOOL

- Chill 6 small wineglasses. Cut passion fruit in half, and scoop out pulp with a teaspoon into a bowl. Mash lightly, cover and refrigerate. Using an electric mixer or by hand, whisk cream until lightly thickened. Refrigerate cream until needed, up to 4 hours.
- When ready to serve, remove cream from refrigerator, and add sugar, lemon juice and liqueur. Whisk mixture until thickened but still slightly floppy. Fold in passion fruit. Spoon into glasses, and serve.
