1 tablespoon mango purée (recipe follows)
1 tablespoon sugar
1/2 lime
4 fresh mint leaves
3 ounces light rum
1 1/2 ounces mango rum (or substitute with 1 tablespoon mango purée and 1 ounce light rum)
1 slice ripe mango, skin on, for garnish
1 ripe mango, peeled and cut into small chunks
6 ounces canned or bottled mango juice

Steps:

  • For the mango purée: combine the mango chunks and mango juice in a blender and purée.
  • In a shaker, combine 1 tablespoon purée with the sugar, lime and mint and mash with a muddler or wooden spoon. Add ice and the rums. Cover and shake vigorously. Strain into a chilled martini glass. Garnish with the mango slice.

6 mint leaves, plus additional for garnish
2 ounces* mango nectar
2 ounces white rum
1 ounce lime juice
1/2 ounce simple syrup
2 to 4 ounces soda water
Ice, for serving (try clear ice!)

Steps:

  • In a cocktail shaker, muddle the mint leaves. Add the mango nectar, rum, lime juice and simple syrup and fill the cocktail shaker with ice. Shake until cold.
  • Strain the drink into an ice-filled glass. Top off the glass with soda water. If desired, garnish with more mint and a lime wheel.
  • Add 2 cups mango nectar to this Mojito Pitcher recipe, and garnish with mint and lime wedges.

When Hrishikesh Hirway was a kid, his parents, who immigrated to the United States from Maharashtra, in western India, began hosting Thanksgiving. The meal soon evolved into a hybrid of a traditional Thanksgiving and an Indian potluck. "Out of that cultural mash-up, my mom started making this mango pie," he said. She'd gotten the idea from other Indian aunties in the States, but their versions weren't as good. "They weren't making it with the best kind of mango," Hirway explained. "The Alphonsos have a stronger, more intense flavor." That Alphonso flavor shines as brilliantly as the pie's bright filling, made tangy and rich with the addition of cream cheese and whipped cream. And the salty, crumbly graham cracker crust is the perfect foundation for the golden cloud of custard that sits atop it. It's so satisfying that you'll catch yourself cutting sliver after mouthwatering sliver of pie.

2 1/2 cups (280 grams) finely ground graham-cracker crumbs
1/3 cup plus 1 tablespoon granulated sugar
1/4 teaspoon ground cardamom
1 large pinch sea salt
9 tablespoons (128 grams) unsalted butter, melted
3/4 cup cold water
1/2 cup granulated sugar
2 tablespoons plus 1/4 teaspoon powdered gelatin (2 1/2 packages at 2 1/2 teaspoons per pack)
1/2 cup heavy whipping cream, chilled
4 ounces cream cheese, at room temperature
1 30-ounce can Alphonso mango purée (3 1/4 cups)
1 large pinch sea salt

Steps:

  • Stir crumbs, sugar, cardamom and salt together in a medium bowl. Add butter, and stir with a fork until evenly combined.
  • Pour half the crumb mixture into a 9-inch round metal pie pan, and spread evenly. Press down with fingers, a metal measuring cup or a second pie pan to compact the crumbs as much as possible across the bottom and up the sides of the pan into an even crust. (The more compressed the crust, the less it will crumble.) Repeat to form the remaining crumb mixture into a crust in a second pan.
  • Heat oven to 325. Transfer both crusts to freezer, and chill for 15 minutes. Bake until golden brown, about 12 minutes. Transfer to a wire rack to cool completely.
  • Place 3/4 cup cold water in a large bowl. In a small bowl, stir together 1/4 cup sugar with the gelatin; sprinkle mixture evenly over the surface of the cold water. Let sit a few minutes to bloom.
  • In the meantime, whip the cream and remaining 1/4 cup sugar together until medium-stiff peaks form. Set aside.
  • In a small saucepan over medium-low heat, warm 1 cup of the mango purée to body temperature (stir to make sure you are just warming it and not bringing it to a boil). Pour warmed mango purée over gelatin mixture, and whisk until well combined. Gelatin should dissolve into mango completely. Gradually whisk in remaining mango purée.
  • Use a rubber spatula to beat the cream cheese in a medium bowl until it is soft and smooth, then add to mango mixture along with a large pinch of sea salt. Use an immersion blender to blend until completely smooth, tipping the bowl to make sure you've incorporated everything well. Gently tap the bowl on the counter once or twice to pop any air bubbles. Use the spatula to gently fold about 1/4 of the mango mixture into the whipped cream, then fold cream into the larger amount of mixture until no streaks remain.
  • Divide custard between cooled crusts. Use a rubber spatula to smooth out the filling. Refrigerate 5 hours or overnight until firm and chilled. Serve chilled.

1/2 cup nonfat milk
1 (8 ounce) package reduced-fat cream cheese, softened
3/4 cup Splenda granular
1 cup light sour cream
2 tablespoons fresh lime juice
2 teaspoons lime zest
1/2 teaspoon rum extract
2 ripe mangoes, peeled and cut into 1/4-inch cubes
1 (6 ounce) reduced fat graham cracker crust
mint sprig (optional)
mango, slices (optional)

Steps:

  • Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves (about 2 minutes). Set aside.
  • Beat cream cheese and Splenda granular at medium speed with an electric mixer until smooth. Gradually add sour cream, lime juice, lime peel and rum extract, beating until smooth.
  • Gradually add gelatin mixture, beating until blended.
  • Chill 30 minutes or until mixture begins to thicken, stirring frequently.
  • Stir mango into gelatin mixture; spoon into pie crust.

2 1/2 cups unbleached all-purpose flour
3 tablespoons confectioners' sugar
1 teaspoon salt
1 teaspoon lemon zest
1 stick butter, chilled
1/2 cup solid vegetable shortening, chilled
1/3 to 1/2 cup ice cold water
1/4 cup almonds, finely chopped
1 tablespoons unbleached flour, toasted
5 cups (4 or 5 large) mangoes peeled and cut into 1/2-inch to 3/4-inch slices
1/2 cup granulated sugar
1 tablespoon almond extract
2 teaspoons cinnamon powder
2 tablespoons flour (or more depending on how wet mixture is)
1 teaspoon lemon zest
2 teaspoons lemon or lime juice
1 egg beaten with 2 tablespoons water
Whipped cream or ice cream, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • Prepare piecrust by mixing together flour, sugar, salt and lemon zest. Cut butter and shortening into small chunks and add to the dry ingredients. Mix with a pastry blender or 2 forks until the mixture holds together in small crumbs. Sprinkle ice water over mixture and cut until the mixture holds together in balls. Gather it up, pressing it together and then divide into 2 even parts. Wrap in plastic wrap. Refrigerate for at least 30 minutes. Roll out half dough and fit into 9-inch deep-dish pie pan. Weight and bake bottom crust until golden brown. Sprinkle with chopped almonds and flour and bake for another 5 minutes. Cool slightly.
  • Mix together mango slices, sugar, extract, spices, flour, zest and lemon or lime juice and pour into baked crust. Mixture should be moist but not wet. Roll out the other half of dough and fit over the pie. Crimp edges. Brush with egg and water wash. Cut vents in top and bake pie 45 to 50 minutes until crust is golden and filling is tender when fork is inserted.
  • Serve warm with fresh whipped cream or a scoop of ice cream.

This recipe is from Weight Watchers and it's most amazing! I would suggest incorporating ground or whole mint leaves in addition to the Creme de Menthe because I love the taste! Also, I've used a graham cracker crust instead of the homemade pretzel crust. Enjoy!

2 cups miniature pretzel twists
2 tablespoons light butter
1 tablespoon sugar
1 (6 ounce) container frozen limeade concentrate (thawed)
1 quart low-fat vanilla frozen yogurt, slightly softened
3 tablespoons rum
1 tablespoon creme de menthe
1 teaspoon lime zest, grated

Steps:

  • Preheat the oven to 375°F.
  • To make the crust, put the pretzels in a food processor and pulse until finely ground. Add the butter, sugar, and 2 tablespoons of the limeade concentrate; process until moist and crumbly. Press the crumb mixture evenly onto the bottom and up the sides of an ungreased 9-inch pie plate. Bake until lightly toasted, about 15 minutes. Let cool, then freeze until cold, about 10 minutes.
  • To make the filling, mix the frozxen yogurt, the remaining limeade concentrate, the rum, creme de menthe, and lime zest in a large bowl until blended. Spoon the filling into the crust. freeze until firm, about 4 hours. To serve, let the pie soften slightly in the refrigerator about 15 minutes before serving. You can freeze up to 1 month-loosely wrap the pie in wax paper and then in heavy foil.

4 cups chopped fresh mango, plus 10 thin, peel-on slices for garnish (from 4 mangoes)
2 cups light rum
1 1/2 cups fresh lime juice (from 12 limes)
3/4 cup granulated sugar
2/3 cup packed fresh mint leaves
Two 12-ounce cans club soda or seltzer
Ice, for serving

Steps:

  • Working in batches, puree mango, rum, lime juice, and sugar in a blender until smooth. Add mint leaves and blend just until mint is finely chopped. Stir in club soda. Serve over ice. Garnish with mango slices.
