1 ripe mango, peeled, seeded and chopped
1/4 cup lime juice (2 limes)
1 teaspoon sugar syrup
3/4 cup white rum
Crushed Ice

Steps:

  • Place the mango, lime juice, sugar syrup and rum in a blender and process until smooth.
  • Pour the mixture over a glass full of crushed ice.
  • Note: To make sugar syrup, heat 1 cup sugar and 1 cup water in a small saucepan until the sugar dissolves.

3 cups chopped peeled mangoes (2)
6 tablespoons light rum
1/2 cup superfine granulated sugar
2 tablespoons water
1 1/2 tablespoons fresh lime juice
8 (1/3-cup) ice pop molds and 8 wooden sticks

Steps:

  • Blend all ingredients in a blender until smooth, then force through a fine sieve into a large glass measuring cup. Pour into molds and add sticks. Freeze at least 24 hours.

2 bananas, chopped
1 fluid ounce rum
2 large strawberries, cut into 12 slices

Steps:

  • Combine strawberry nectar, bananas, and rum in a blender. Blend until smooth. Stir in strawberries.
  • Divide mixture between small ice pop molds. Freeze for 8 hours, or overnight. Run molds under cold water for 10 to 15 seconds to release pops.

25ml mango liqueur or mango gin
10ml lemon juice
½ ripe mango, peeled, stoned and cut into chunks (130-150g prepared weight), plus a wedge to garnish (optional)
ice
Thai basil sprig, to garnish (optional)

Steps:

  • Put the rum, liqueur or gin, lemon juice, mango flesh and a generous handful of ice in a high-powered blender that's suitable for crushing ice.
  • Blend until smooth, then pour into a large cocktail or margarita glass and garnish with a mango slice and Thai basil, if you like.
