1/2 cup Land O Lakes® Butter
1 small (1/2 cup) onion, finely chopped
1 tablespoon finely chopped jalapeño peppers
1/2 cup ketchup
1/2 cup chopped mango
1/4 cup Worcestershire sauce
3 tablespoons firmly packed brown sugar
1 tablespoon honey
1 tablespoon white vinegar
2 teaspoons lemon juice
1 teaspoon finely chopped fresh garlic
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in 3-quart saucepan over medium heat until sizzling; add onion and jalapeño peppers. Cook, stirring occasionally, 3-5 minutes or until softened.
  • Stir in all remaining ingredients; continue cooking 5-6 minutes or until mixture is slightly thickened.
  • Pour into mini-food processor bowl fitted with metal blade or blender container; process until smooth.

2 tablespoons olive oil
1 onion, diced (about 1 cup)
1 red pepper, diced (about 1 cup)
3 cloves garlic, coarsely chopped
1 teaspoon salt
Freshly ground black pepper
1/2 teaspoon ground allspice
1/3 cup red wine vinegar
3 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons lime juice
1/4 cup low-sodium tomato sauce
1 mango, diced (about 1 1/2 cups)
2 to 3 jalapenos, minced
2 boneless, skinless chicken breasts (about 3/4 pound each)

Steps:

  • Heat the oil in a medium-sized skillet over medium-high. Add the onions and cook until translucent, about 2 minutes. Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more. Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more. Transfer the mixture into a bender and add the mango and jalapeno. Blend until smooth.
  • Put 1 cup of the barbeque sauce into a resealable plastic bag with the chicken and marinate for 1 hour.
  • Preheat the broiler. Put the chicken on a broiler pan and discard the marinade. Broil the chicken on high for about 12 minutes, turning once. Let the meat rest for 10 minutes before slicing. Spoon about 1/2 cup of barbeque sauce over the meat slices and serve.

Both Scotch bonnet and habanero chiles work in this recipe. The habanero has a straight-up heat, while that of Scotch bonnets tends to be sweeter and more floral. It's wise to wear rubber gloves when chopping an extremely hot chile.

2 tablespoons safflower oil
1 medium onion, finely chopped (1 1/2 cups)
4 cloves garlic, minced (2 tablespoons)
Coarse salt
1/3 cup ketchup
3 cups diced mango (from 2 to 3 large peeled, pitted mangoes)
1/4 cup sugar
2 tablespoons distilled white vinegar, plus more to taste
1 small Scotch bonnet or habanero chile (seeds removed, if less heat is desired), finely chopped (1 1/2 teaspoons)
1 teaspoon Worcestershire sauce

Steps:

  • Heat oil in a saucepan over medium-high. Add onion, garlic, and 1 teaspoon salt; cook until onion is translucent, about 3 minutes. Stir in ketchup, mangoes, sugar, vinegar, and 3/4 cup water; bring to a boil. Reduce heat to a simmer and cook, partially covered and stirring occasionally, until slightly reduced and mangoes are very soft, about 30 minutes. Let cool 5 minutes.
  • Puree mango mixture, chile, and Worcestershire in a blender until smooth. Season with salt and more vinegar; let cool completely. Sauce can be refrigerated in an airtight container up to 1 week, or frozen up to 3 months.

1 1/2 cups roughly chopped peeled fresh mango (8.7 oz, from about 12 oz whole mango)
2 minced habanero peppers
2 medium garlic cloves, minced (about 2 teaspoons)
1 cup apple juice or 1 cup pure mango juice
1 cup tomato sauce
1/3 cup molasses
2 tablespoons honey
1/3 cup apple cider vinegar
2 tablespoons bottled lime juice
1 tablespoon tamari
1 teaspoon grated ginger
1/3 cup sugar
1 tablespoon onion powder
1/2 tablespoon mustard powder (I used hot, but use what you have)
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Combine all the ingredients in a pot and bring to a boil.
  • Reduce heat to low and simmer until mangoes have completely softened and sauce has slightly thickened, about 30 minutes, stirring occasionally.
  • Puree sauce with an immersion blender, or in the jar of a regular blender, until smooth.
  • Either cool to room temperature and store in refrigerator for up to a month or can in a water bath for 30 minutes.

1 tablespoon extra-virgin olive oil, plus some for drizzling
1 medium red onion, chopped
1 small red pepper, seeded and chopped
2 mangos, peeled and chopped
Salt and freshly ground black pepper
1/4 cup tamari sauce
2 tablespoons Worcestershire sauce
1 (1-inch) piece ginger root, peeled
1 orange, zested and juiced
1 lime, zested and juiced
1/4 cup honey
1 cup chicken stock
Hot sauce, a tablespoon or so
4 pieces boneless skinless chicken breasts or thighs
4 loin lamb chops
1 cup chopped arugula or frisee or mixed baby greens
Handful basil or tarragon leaves, shredded or torn

Steps:

  • Heat 1 tablespoon extra-virgin olive oil in a sauce pot or grill pan over medium-high heat. Add onions, peppers and saute to soften 3 to 4 minutes, then add mango and season with salt and pepper. Stir in soy sauce, Worcestershire, ginger, a little zest of citrus fruits, honey, stock and hot sauce. Cook the sauce for 10 minutes, add the orange and lime juice and cook for 2 minutes more, to thicken. Remove the ginger chunk.
  • Heat a grill pan over medium-high heat. Coat the meats with a drizzle of olive oil and season with salt and pepper. Grill the chicken breasts 12 minutes turning once and the lamb a couple of minutes on each side for pink centers. Plate the meats on a serving platter, top with sauce and garnish with spicy-sweet greens and herbs.

1 medium-size mango, flesh removed
2 tablespoons olive oil
1/2 cup finely chopped onions
1 tablespoon chopped garlic
1 cup ketchup
1 tablespoon Dijon-style mustard
2 tablespoons corn syrup
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco, or to taste
4 slices lemon
Salt and freshly ground black pepper to taste

Steps:

  • Place the mango in the bowl of a food processor, and puree to a coarse texture.
  • In a saucepan combine the olive oil, onions and garlic. Saute briefly over medium-high heat, or until wilted. Add remaining ingredients, stir and bring to a simmer. Cook for 5 minutes. Remove and let cool. Surplus sauce can be refrigerated in an airtight jar and used with any barbecued meat or poultry.
