1 cup orange marmalade
3 tablespoons soy sauce
2 tablespoons white vinegar
2 teaspoons hot pepper sauce
1 1/2 tablespoon cornstarch
2 tablespoons vegetable oil
1 tablespoon fresh ginger root, chopped
1 tablespoon fresh garlic, chopped
24 fresh jumbo shrimp, peeled and deveined
1 red bell pepper, chopped
1 yellow or green bell pepper, chopped
3 cups broccoli florets
1/2 cup water
1 cup green onions, chopped

Steps:

  • Combine marmalade, soy sauce, vinegar, hot pepper sauce, and cornstarch; stir to dissolve cornstarch. Set aside. Place large skillet or wok over high heat for one minute, then add oil. Heat oil for 30 seconds, then add ginger root, garlic, and shrimp. Stir-fry for two to three minutes or until shrimp turns rosy pink. Remove shrimp from pan; set aside. Add bell peppers and broccoli to pan; cook over high heat for one minute. Add water; cover and reduce heat to medium. Cook four to five minutes or until vegetables are tender. Uncover pan and return heat to high. Add shrimp and marmalade mixture. Cook for another two minutes until sauce is thickened and shrimp are completely cooked. Season with salt and freshly ground pepper, if desired. Stir in green onions. Serve with hot cooked rice.

2 cups instant brown rice
1 ¾ cups water
6 tablespoons soy sauce
6 tablespoons water
¼ cup honey
2 tablespoons cider vinegar
2 tablespoons cornstarch
2 tablespoons olive oil
2 cloves garlic, chopped
2 cups broccoli florets
1 cup baby carrots
1 small white onion, chopped
½ teaspoon black pepper
1 cup sliced fresh mushrooms
1 ½ pounds uncooked medium shrimp, peeled and deveined

Steps:

  • Stir the rice and 1 3/4 cup water together in a microwave-safe bowl. Cover, and cook in the microwave on High for 8 minutes until the water is fully absorbed. Fluff with a fork.
  • Whisk together the soy sauce, water, honey, cider vinegar, and cornstarch in a small bowl. Set the sauce aside.
  • Heat the olive oil in a non-stick skillet over medium heat. Stir in the garlic and cook for 10 seconds. Add the broccoli, carrots, onion, and black pepper; cook and stir until the broccoli and carrots are tender, about 5 minutes. Stir in the mushrooms and cook for 2 minutes. Remove the vegetables from the skillet and set aside.
  • Return the skillet to the heat and pour in the sauce mixture; cook for 1 minute. Add the shrimp to the sauce and stir until the shrimp are bright pink on the outside and the meat is no longer transparent in the center and the sauce thickens, about 3 minutes. Stir the vegetables back into the pan and serve over the brown rice.

1/4 cup low-sodium soy sauce
1/4 cup sake
2 tablespoons sugar
1 tablespoon dark (toasted) sesame oil
1 tablespoon chopped garlic
1 tablespoon finely chopped or grated ginger
1 cup large-diced red bell pepper
1 cup large-diced green bell pepper
1 cup large-diced onion
1 cup cubed cabbage
1 cup sliced carrot
1/2 teaspoon red pepper flakes
24 large shrimp, shelled and deveined

Steps:

  • Combine first 6 ingredients in a bowl. Heat a large nonstick skillet over medium-high heat. Add soy sauce mixture; cook until lightly thickened, about 1 minute. Add vegetables and red pepper flakes. Cook, stirring constantly, until vegetables are soft, about 1 minute. Add shrimp and 1/4 cup water.
