HEARTY FISH SOUP

Steps:
- In a large saucepan coated with cooking spray, saute shallots and garlic until tender. Add the tomatoes, broth, mixed vegetables, hash browns, seafood seasoning, sugar, allspice, cayenne and bay leaves. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until vegetables are tender. , Add halibut; simmer 2-3 minutes longer or until fish turns opaque. Just before serving, discard bay leaves.

Steps:
- Place oil in a large pot.
- Add onion, garlic, celery, carrots and green pepper, and saute over medium heat just until al dente.
- Add tomatoes, tomato sauce, clam juice and potatoes.
- Cook over medium heat for 5 minutes.
- Add pepper, oregano and basil.
- Cover and simmer for 20 minutes, or until potatoes are done.
- Add fish and wine.
- Cover and continue simmering for 10 minutes.
- Sprinkle with chopped parsley and basil.

MAMMA'S ESCAROLE SOUP
That's Dom DeLuise's Mamma. The recipe originated in Spinosa, Italy. If you want a carnivorous variation, you can some spareribs and/or Italian sausages with the garlic, and brown well before adding anything else. To make this completely vegetarian, use vegetable stock in place of chicken stock. You can add water or a little more broth if the soup is too thick. Serve with hot Italian bread.

- Heat olive oil in a large saucepan and brown the garlic.
- Add onion, carrots, and potato (if using). Cook 1 minute.
- Add broth.
- Add escarole, cover, and bring to a boil.
- Reduce heat to low and simmer for 1 hour.
- Spoon into bowls and sprinkle with grated cheese.
