SWEET POTATO AND APPLE CASSEROLE



Sweet Potato and Apple Casserole image

This easy casserole is the perfect combination of sweet and savory. Great for the holidays!

4 sweet potatoes ((approx 2 ½ pounds) peeled and cut into 1-inch dice)
4 small apples ((or 3 large), peeled, cored and diced into 1-inch pieces)
½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

2 medium sweet potatoes (4 cups, cut into 1" cubes)
2 medium apples (about 2 cups, cut into 1" cubes)
3 TBS coconut oil (melted & divided)
1 tsp sea salt
2 TBS pure maple syrup
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease a large baking pan, set aside.
  • In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
  • Add sea salt and stir until evenly distributed.
  • Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
  • While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
  • After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
  • Return to the oven and bake for 20 more minutes, stirring halfway through.
  • Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

2 sprigs fresh rosemary, picked and finely chopped
1/2 cup coarsely chopped walnuts
Juice of 1/2 lemon
2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
3 Honeycrisp or Granny Smith apples

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
  • Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
  • Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
  • Serve immediately or keep in a warm oven and serve hot.

They're sweet but they do not have the goopy marshmallow junk on them. They're the only ones that I eat. It was created by my Mama (Sheryl) so all credit goes to her on this one. I usually double this recipe when I make it to feed a family of 4.

3/4 cup brown sugar
1/4 cup maple syrup

The combination of orange juice with sweet potatoes is outstandingly delicious! My mother was a great cook. Her dishes always had plenty of exciting flavors. I'm passing on one of her favorites which we enjoyed.

6 sweet potatoes
6 tablespoons butter
8 ounces orange juice
1 cup Karo syrup
1 cup light brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 orange, sliced

Steps:

  • Boil sweet potatoes for 30 minutes. Let potatoes cool and then peel. Cut into quarters.
  • Place in a large saucepan and add butter, orange juice, syrup and sugar.
  • On top of stove cook at low heat for about 1 3/4 hours to glaze potatoes. Tilt saucepan often to coat all potatoes. Place oranges slices in pot 30 minutes before serving. (She never used a crock pot, but I bet it would work as well.) Freezes well -- just reheat and serve.

Again, trying to capture all the old family recipes of cooks passed on. This one is easy, nothing fancy, not anything actually home made. But oh, what memories!

1 large (very large) can cut sweet potatoes in syrup
1/2 c brown sugar
1/2 bag miniature marshmallows

Steps:

  • 1. In saucepan, cook sweet potatoes, liquid, and brown sugar over low heat about 20-30 minutes, until syrup forms and cooks down nice and thick. Stir occasionally to prevent sticking. You might want to cut some of the larger potato pieces into smaller chunks, but leave them chunky. My mother never mashed her sweet potatoes.
  • 2. Place cooked sweet potatoes into a greased casserole to fit - usually about a 2-quart dish. Top evenly with the marshmallows. They should be nice and thick and cover the potatoes well. Use more than half the bag if you need to.
  • 3. Bake at 350 degrees about 20-25 minutes, until marshmallows are puffed and browned. May serve hot, or allow to cool to room temperature (that's usually how we had them, because they would have to sit out while the dressing and other dishes were in the oven).

Steps:

  • Heat oven to 400°F. Place sweet potatoes on cookie sheet; prick with fork. Roast 1 hour or until almost tender. Let stand 45 minutes or until cool. Peel; cut into 1/3-inch-thick slices.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, toss apples and lemon juice. Arrange potatoes and apples alternately in baking dish. Pour remaining lemon juice in bowl over potatoes and apples.
  • In 2-quart saucepan, stir together brown sugar, honey, butter, bourbon, cinnamon, ginger and salt. Heat to boiling over medium heat, stirring occasionally; boil 2 minutes or until slightly thickened. Pour glaze over potatoes and apples.
  • Roast uncovered 30 minutes. Spoon glaze from bottom of dish over potatoes and apples. Sprinkle with pecans. Roast 14 to 15 minutes longer or until apples are browned. Spoon glaze over top before serving.

4-5 medium cooking apples, sliced thin
1 stick(s) margarine
2 cup(s) water
1 cup(s) sugar
1/2 teaspoon(s) salt
3/4 teaspoon(s) cinnamon
3 tablespoon(s) + 1 tsp cornstarch

Steps:

  • Add to a medium saucepan the water, sugar, salt, cinnamon and cornstarch. Bring to a boil on med to med-high heat until sauce thickens. Remove from stove. Add the stick of butter and let it melt in the hot sauce. Stir to combine.
  • Slice the sweet potatoes (yams)into thin strips. Prepare a 9x9 square baking dish. Alternate layers of sweet potatoes and apples. Pour sauce over until well covered. It may not take all of the sauce so use your best jusgement. Cover with foil and bake at 350 for 1 hour. Enjoy!

¼ cup white sugar

  • Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.

Our family favorite sweet potatoes that make the perfect side dish for your holiday meal.

4 pounds of yellow sweet potatoes (about 5 to 6)
3 tablespoons butter (divided)
1/4 cup karo syrup (divided)
1/2 cup brown sugar (divided)
1 (10 ounce) bag of miniature marshmallows

Steps:

  • Heat oven to 350 degrees.
  • Boil sweet potatoes for about 20-30 minutes until fork tender. Let cool.
  • Spray a 9 x 13 inch pan with non stick cooking spray.
  • After the sweet potatoes are cool, slice into 1 inch spears. Lay half of them in the pan.
  • Cut up 1 1/2 tablespoons of butter into small pieces and spread all over the sliced sweet potatoes.
  • Then drizzle 1/8 cup of karo syrup over all of the sweet potatoes. Then sprinkle 1/4 cup of brown sugar over the top.
  • Repeat layers - add more sweet potatoes, then top with the rest of the butter, karo syrup, and brown sugar.
  • Cook in oven until heated through and butter is melted. About 30 minutes.
  • Remove from oven and cover the top with marshmallows. Return to oven cook until marshmallows are golden brown.
  • (This can also be made ahead of time and stored in the fridge. Cook until heated through and then add marshmallows.)
