MALIBU® RUM FRUIT SALAD



Malibu® Rum Fruit Salad image

This is fruit marinated in Malibu® rum and cream.

1 cantaloupe - peeled, seeded, and cubed
1 honeydew melon - peeled, seeded, and cubed
4 large fresh peaches - peeled, pitted, and sliced
3 oranges, peeled and sliced
3 cups sliced fresh strawberries
2 large mangoes - peeled, seeded, and chopped
4 kiwis, peeled and sliced
1 pint blueberries
1 pint fresh raspberries
1 cup heavy whipping cream
½ cup confectioners' sugar
½ cup coconut-flavored rum (such as Malibu®)
1 cup miniature marshmallows
½ cup shredded coconut

Steps:

  • Combine cantaloupe, honeydew melon, peaches, oranges, strawberries, mangoes, kiwis, blueberries, and raspberries in a large bowl.
  • Whisk cream, confectioners' sugar, and rum together in a bowl until smooth; fold in marshmallows. Pour cream mixture over fruit and toss to coat. Cover bowl and refrigerate, stirring frequently, until chilled and flavors soak into fruit, 8 hours to overnight.
  • Spoon fruit salad into serving bowls and sprinkle with coconut.

2 ripe avocados, pitted and flesh roughly diced
1 red onion, finely diced
1/2 cup diced English cucumber
8 (16/20 count) cooked shrimp (peeled and deveined and cut lengthwise in half)
1/2 cup jumbo lump crabmeat
Salt and freshly ground black pepper
1/2 cup plain yogurt
1/4 cup tomato ketchup
1 lemon, juiced
1 teaspoon hot sauce (recommend: Tabasco)
2 tomatoes, thinly sliced
1/4 cup freshly chopped chives

Steps:

  • In a large bowl mix together the diced avocado, onions, cucumber, shrimp, and crabmeat and season with salt and pepper, to taste. In another bowl or a kitchen blender mix together the yogurt, ketchup, and lemon juice. When mixed thoroughly, slowly add the hot sauce, (not too much as it will over power the seafood).
  • To finish the dish, slowly add the dressing to the avocado mixture until slightly wet. Place 3 to 4 slices of tomato in the center of each serving plate, slightly separate just so the tomatoes touch.
  • Fill an ice cream scoop with the salad and place in the center of the tomatoes. Garnish with chopped chives and serve.

Red Chile Encrusted Wahoo, Toasted Macadamia Nut Redskin Potato Salad and Mango Malibu Rum Relish image

10-ounce piece wahoo
1 teaspoon cayenne pepper
1 teaspoon ancho peppers
1 teaspoon chile powder
1 teaspoon paprika
Potato Salad, recipe follows
Mango Malibu Relish, recipe follows
3/4 pound red bliss potatoes, quartered
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon heavy cream
1/4 cup Dijon Mustard
2 tablespoons whole grain mustard
1/4 cup toasted and crushed macadamia nuts
1 rib celery, diced
1/2 red onion, diced
1 hard boiled egg, chopped
1 tablespoon chopped fresh cilantro
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 fresh mango, diced
2 tablespoons confectioners' sugar
2 tablespoons scallions, chopped on bias
1/2 ounce Malibu Rum
1 tablespoon finely diced red bell pepper

Steps:

  • Grind all the spices in a small coffee grinder.
  • Press wahoo into chile mixture coating it on one side well. Sear both sides of the wahoo in a very hot skillet in a well ventilated area. Remove from the skillet and place in a preheated 400 degree oven for 6 to 10 minutes until cooked to medium stage. Then place the redskin Potato Salad on the middle of the plate, the wahoo on top of the salad, and the relish on top of the wahoo.
  • Steam or boil potatoes until just tender. Refrigerate potatoes until cold. Whisk together mayonnaise, heavy cream, sour cram, and mustards in a mixing bowl. Then add remaining ingredients and potatoes. Refrigerate.
  • Mix all ingredients well.

AVOCADO MALIBU SALAD

1/4 cup sour cream
1/4 teaspoon curry powder
1/8 teaspoon salt
1 cup diced cooked chicken
1 can (8 ounces) pineapple chunks, drained
1/4 cup chopped green pepper
1/4 cup frozen or canned crabmeat, drained, flaked and cartilage removed
1 tablespoon diced pimientos
2 large avocados, peeled and sliced
2 tablespoons lemon juice
Lettuce leaves
Red grapes, optional

Steps:

  • In a large bowl, combine sour cream, curry powder and salt. Add the chicken, pineapple, green pepper, crab and pimientos. Cover and refrigerate for 1-2 hours. Just before serving, toss avocados with lemon juice. Place avocados and crab mixture on lettuce. Garnish with grapes if desired.

1/4 cup sesame seeds
1/2 cup olive oil
3 tablespoons red wine vinegar
1 tablespoon soy sauce
1 clove garlic minced
1 teaspoon Dijon style mustard
1/2 teaspoon sugar
1/4 teaspoon black pepper
4 cups lightly packed torn mixed salad greens
1 1/2 cups mushrooms sliced
1 (14-ounce) can artichoke hearts drained and cut if large
1 avocado medium, cut in chunks
1 tomato medium, cut in small wedges
1/2 to 1 cup alfalfa sprouts
1/4 cup green onion sliced

Steps:

  • In a small skillet over medium-high heat, stir sesame seeds for 3 to 4 minutes or until golden brown set aside.In a small bowl, mix oil, vinegar, soy sauce, garlic, mustard, sugar and pepper until well blended. Stir in toasted seeds. Cover and set aside at least 30 minutes to develop flavor.In a large salad bowl, place greens, mushrooms, artichoke hearts, avocado, tomato, sprouts and green onions toss lightly. Stir dressing and serve separately.
