1 egg
3/4 cup milk
1 cup cheddar cheese, shredded
1/2 cup quick-cooking oats
1/2 cup onion, chopped
1 teaspoon salt
1 lb hamburger
2/3 cup ketchup
1/2 cup brown sugar
1 1/2 teaspoons mustard

Steps:

  • Beat together egg and milk; stir in cheese, oats, onion and salt.
  • Add hamburger and mix well.
  • Shape into 8 loaves and place in a greased 13x9 pan.
  • Combine ketchup, brown sugar and mustard; spoon over loaves.
  • Bake uncovered at 350°F for 45 minutes or until meat is no longer pink.

Number Of Ingredients 9

1 tablespoon active dry yeast
1/2 cup warm water (110° to 115°)
2 cups warm 2% milk (110° to 115°)
2 large eggs, room temperature
2 tablespoons butter, softened
1 tablespoon sugar
2 teaspoons salt
7 to 7-1/2 cups all-purpose flour
2 cups shredded sharp cheddar cheese

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, eggs, butter, sugar, salt and 3 cups flour; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; knead in cheese. Divide dough in half; shape each portion into a 6-in. round loaf. Place on greased baking sheets. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 350°., Bake until golden brown, 35-40 minutes. Remove from pans to wire racks to cool.

These were really cute and my family enjoyed having their own mini meatloaf. The recipe has a really good contrast of savory meatloaf and sweet glaze. And of course, the cheese added to these little loaves is a nice touch.

1 egg
3/4 c milk
1 c cheddar cheese, shredded
1/2 c quick cooking oats, dry
1/2 c onions, chopped
1 tsp salt
1 lb lean ground beef
GLAZE
2/3 c ketchup
1/2 c brown sugar
1 1/2 tsp regular mustard

Steps:

  • 1. Mix egg and milk together and beat in bowl. Mix all ingredients and form 8 small loaves. Combine ketchup, brown sugar and mustard, and pour over each meat loaf. Bake at 350°F for 45 minutes.

Lil' Cheddar Meatloaves image

We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

1 egg
3/4 cup milk
1 cup shredded sharp cheddar cheese (4oz)
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 teaspoon rubbed sage (optional)
1 lb lean ground beef
2/3 cup catsup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard

Steps:

  • In a bowl, beat the egg and milk.
  • Stir in cheese, oats, onion, salt and rubbed sage.
  • Add beef and mix well.
  • (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
  • Sauce: Combine catsup, brown sugar and mustard.
  • Spoon over each loaf so they are all covered in the sauce.
  • Bake uncovered at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
  • For OAMC:.
  • To Freeze:Place the meat loaves in the casserole dish (without sauce).
  • Wrap with foil and freeze.
  • To Reheat: Defrost overnight.
  • Mix together the sauce and top each meat loaf with sauce.
  • Bake at 350 degrees for 45 minutes or until meat is no longer pink in the center.
  • Cooked meat loaves (already topped with sauce) also freeze very well and then can be defrosted and heated in the microwave for a quick meal.

3 tablespoons 2% milk
2 tablespoons quick-cooking oats
1 tablespoon chopped onion
1/8 teaspoon salt
1/2 pound lean ground beef
1/2 teaspoon cornstarch
1/2 cup Italian tomato sauce
1/4 cup cold water

Steps:

  • In a small bowl, combine the milk, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 2 loaves. , In a small nonstick skillet, brown loaves on all sides; drain. Combine the cornstarch, tomato sauce and water until smooth. Pour over meat loaves. Bring to a boil. Reduce heat to medium-low; cover and cook until meat is no longer pink, 15-20 minutes.
