Number Of Ingredients 8

4 eggs
1/4 pound unsalted butter, 1 stick, melted
4 cups buttermilk (or 1/4 cup cider vinegar or fresh lemon juice added to 3 3/4 cups with milk, stirred and microwaved for 45 seconds)
4 cups all-purpose flour
2 to 4 tablespoons sugar, to taste
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Combine all ingredients in your blender and process until smooth. Or you can do as I usually do adding all ingredients to a large pitcher and combining them with my stick blender. It's the cheater's way! The batter needs to be smooth. No one likes pockets of dry flour in a pancake! The consistency of the batter when I make it is about that of ketchup because we like thinner pancakes. If you like a fluffier, loftier pancake, you can add a couple tablespoons of flour to the batter, but make sure it's still pourable! Heat your griddle or frying pan until water sizzles on it and carefully butter or oil the surface. Pour about 1/4 cup of batter onto the hot pan for each pancake, leaving room for it to expand. It can take as little as 1 minute per pancake on medium high but watch your heat. You can flip the cake when the bubbles that show up on the top pop and don't fill back in. The second side will cook much faster than the first side, so do not walk away. At 1/4 cup you make about 32 pancakes about 3-inches big, perfect for toaster! Serve hot! To really ease the morning time crunch, you can also cool these off on a wire rack, stack them separated by waxed paper, and seal in a bag in the freezer for up to a month. To reheat, remove desired number of flapjacks from the freezer to a plate and microwave for about 30 seconds to 1 minute, depending on strength of microwave.

1 1/2 cups buttermilk
3 large eggs, lightly beaten
2 cups flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt

1 1/2 cups finely chopped apples
1/2 cup chopped nuts (optional)
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon pumpkin pie spice
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter

Steps:

  • Combine buttermik and eggs in large bowl and mix well.
  • add flour, sugar, baking powder, salt and baking soda and mix well.
  • stir in butter.
  • stir in apples and nuts.
  • chill covered in refrigerator at least 2 hours or more --
  • Pour 1/4 cup at a time onto hot lightly greased griddle.
  • bake until golden brown.on both sides, turning once.
  • to prepare CIDER SYRUP:.
  • combine sugar, cornstarch and pumpkin pie spice in saucepan and mix well.
  • stir in cider and lemon juice.
  • cook over low heat until mixture thickens, stirring constantly.
  • Bring to a boil and boil for 1 minutes.
  • Remove from heat and add butter and stir till melted.

I found this in the March 8, 2007 Edmonton Journal, and tried it the same night! It's a little different than my usual recipe, but a lot healthier, too! And you know it's a winner when the kids (ages 2 & 4) had thirds!! The Edmonton Journal says it's from Lorna Sass's WHOLE GRAINS (Publisher: Clarkson Potter). *Note that the Nutrition Facts will be off because you only use a third of the dry ingredients each time you make it!* --edited March 12/07-- I made this recipe this morning without buttermilk or even soured milk... just with milk. Still pretty good! Not as rich, but still tasty.

1/2 cup old fashioned oats (or other flaked rolled grains such as spelt, rye or kamut)
3 1/4 cups whole wheat pastry flour (I used regular whole wheat flour)
1/4 cup sugar
4 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons salt (I used just one)
2 large eggs
1 1/4 cups buttermilk, well-shaken (plus more if needed)
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
canola oil or safflower oil, for greasing the griddle

Steps:

  • Place oats in a spice grinder or mini processor and process to the consistency of flour; transfer to a large bowl.
  • Mix in pastry flour, sugar, baking powder, baking soda, and salt.
  • Place 1 1/3 cups of the mix into each of three zipper-top plastic bags. Refrigerate or freeze up to three months.
  • When ready to make pancakes, lightly beat eggs in a large bowl.
  • Blend in buttermilk, butter, and vanilla.
  • Add one package of pancake mix and stir just until the mixture forms a lumpy batter. Avoid overmixing.
  • Heat a large griddle or skillet over medium heat and use a silicone brush or paper towel to coat it lightly with oil.
  • When a drop of water thrown on the griddle sizzles, pour on 1/4 cup of batter for each pancake, leaving space between them for the pancakes to spread. (If the batter is too thick to pour easily, stir in a few more tablespoons of buttermilk.).
  • When the pancakes become slightly dry around the edges and little bubbles appear on the surface (after approximately 2-3 minutes), flip them.
  • Cook until brown on the second side (approx. 1-2 additional minutes).
  • Serve immediately or keep warm in a single layer on a rack in a 200F oven.

Make the batter for these buttermilk pancakes the night before. The batter actually improves with age. I like to make these in a pitcher for easy pouring and refrigerate, covered with plastic wrap. 3 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup sugar
2 cups buttermilk
5 tablespoons melted butter or margarine

Steps:

  • Beat eggs, add flour, baking powder, soda, salt and sugar. Mix well. Add buttermilk and melted butter. Mix again. At this point batter can be refrigerated for later use, flavor improves with age. Lightly oil griddle and get it hot. Test heat with a dot of batter. When griddle is hot, ladle on batter, spreading thin. Bubbles will form on top side of pancake, cook til bubbles pop and pancake begins to appear dry. Flip and cook other side til light brown. Serve with butter or syrup as desired.I like to brush the pancakes with additional melted butter as they come off the griddle, but this is optional.

Nice and fluffy. You can mix the dry ingredients beforehand. I keep a couple of batches mixed at all times. When ready to use, just mix in the wet ingredients. I like to add nuts and fruits to the batter. These are better than any prepared mix.

1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat a skillet over medium heat.
  • Use a pan with a nonstick surface or apply a little nonstick spray. You can add a small amount of butter to the pan.
  • Combine all ingredients whisk until smooth.
  • Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
  • When the edges appear to harden, flip the pancakes.
  • They should be golden brown.
  • Cook on the other side for same amount of time, until golden brown.
