This white fish pot pie with mahi mahi, potatoes, and leeks is topped with golden brown puff pastry, making it a nice twist on a classic pot pie.

1 sheet frozen puff pastry, thawed
1 ½ pounds mahi mahi
salt and ground black pepper to taste
2 tablespoons olive oil
1 medium russet potato, peeled and cubed
3 stalks celery, halved lengthwise and sliced
1 large carrot, diced
2 medium leeks, halved lengthwise and sliced
2 cloves garlic, minced
2 tablespoons salted butter
2 tablespoons all-purpose flour
1 cup milk
1 cup water
1 teaspoon salt
½ teaspoon ground black pepper
½ cup sour cream
½ medium lemon, juiced
1 teaspoon Dijon mustard
¼ cup chopped fresh parsley
⅛ cup chopped fresh chives
1 medium egg, beaten

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut pastry into 6 rectangles and place on a baking sheet.
  • Bake in the preheated oven until puffed and golden, 15 to 20 minutes. Remove from the oven; leave the oven on.
  • Meanwhile, cut mahi mahi into 1 inch pieces. Season with a pinch of salt and pepper.
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add potato, celery, and carrot. Cook, stirring occasionally, until just tender, about 8 minutes. Add leeks and let soften, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Add butter.
  • When butter has melted, add flour and whisk for 1 minute. Slowly whisk in milk and water, then add 1 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil.
  • Reduce heat to a simmer, and cook until mixture thickens slightly, 3 to 4 minutes. Whisk in sour cream, lemon juice, and Dijon. Add fish and cook over low heat until fish flakes easily with a fork, 7 to 8 minutes. Stir in parsley and chives and remove from the heat.
  • Transfer fish mixture to a 2-quart pastry dish. Place pastry rectangles on top, and brush each one with beaten egg.
  • Return to the oven and bake until pastry is puffed and golden brown and filling is bubbly, about 10 minutes. Let stand for 5 minutes before serving.

1 medium orange, juiced
1 medium lime, juiced
1 teaspoon Hawaiian sea salt
ground black pepper to taste
1 (14 ounce) can pineapple chunks
4 (5 ounce) mahi mahi fillets
cooking spray
2 stalks green onions, thinly sliced
¼ cup ground macadamia nuts

Steps:

  • Combine orange juice, lime juice, sea salt, and pepper in a bowl. Add pineapple juice from the can and whisk to combine. Refrigerate pineapple chunks until needed.
  • Place mahi mahi fillets in a large glass or ceramic bowl. Add marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Cover a rimmed baking sheet with foil and spray foil with cooking spray.
  • Remove fillets from the marinade and shake off excess. Discard the remaining marinade. Place fillets on the prepared baking sheet. Top with green onions and macadamia nuts.
  • Bake in the preheated oven until fish is white and flakes easily with a fork, 25 to 30 minutes.
  • Top fillets with reserved pineapple chunks.

1 medium onion, chopped
1 medium green pepper, chopped
4-1/2 teaspoons olive oil, divided
1 garlic clove, minced
3/4 cup salsa
1/2 cup white wine or chicken broth
1/4 cup halved Greek olives
1/2 teaspoon Greek seasoning
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled tomato and basil feta cheese

Steps:

  • In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.

This is a typical maltese dish made with lampuki. Lampuki is mahi mahi when they are rather small and found in the mediterrenean, before they migrate. Be very careful to remove all the bones.

1 kg flour
300 ml olive oil
2 eggs
1 teaspoon salt
5 medium potatoes, peeled and VERY finely sliced
1 kg fresh spinach, cooked and squeezed
2 medium onions, chopped
4 garlic cloves, chopped
200 g green olives, chopped
2 tablespoons capers
200 ml tomato sauce
4 tablespoons olive oil
3 tablespoons fresh marjoram, chopped
3 tablespoons of fresh mint, chopped
1 1/2 kg mahi mahi, filleted

Steps:

  • Pasrty: process olive oil and flour until incorporated. Add the eggs and enough water ( about 2 tbsp) to make a dough. cover with plastic wrap and rest it for half an hour.
  • Filling: fry the onions in the olive oil until soft and golden. Add teh olives, capers and herbs and cook for a minute longer, stir in the tomato sauce and well squeezed spinach.Set aside to cool.
  • Dip the skinned and deboned fish in flour and fry the pieces until golden, set aside to cool.
  • Roll out half the dough to line a greased 30cm pie dish. Take half of the raw potato slices and lay on the bottom, on top fut half of the spinach mixture. distribute the lampuki fillets on top of this. Put the remaining spinach mix then the remaining potatoes.
  • Roll out the remaining dough and lay on top, sealing with 1 egg mixed with some water. Glaze the top with the remaining egg and decorate with any remaining dough.
  • Bake 190C for 45 minutes.
