5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
  • Remove from the oven and allow to stand 10 minutes before serving.

6 Mahi Mahi filets
1/3 cup olive oil
3 cloves garlic (crushed)
1 packet Good Seasons Zesty Italian Seasoning
1/2 cup Greek yogurt
1/4 cup mayonnaise
1/3 cup Parmesan cheese
2/3 cup seasoned breadcrumbs
salt and pepper (to taste)
fresh lemon (to taste)

Steps:

  • Place Mahi Mahi in a gallon-sized Ziploc bag. Combine marinade ingredients and pour into bag with mahi mahi. Press out air, seal, and refrigerate for at least 30 minutes.
  • Preheat oven to 400 degrees. In a small mixing bowl, combine Greek yogurt, mayonnaise, parmesan cheese, breadcrumbs, and salt & pepper. Remove mahi mahi from bag and discard marinade.
  • Place mahi mahi on a greased 9x13 baking dish and spread yogurt mixture evenly over the top of each filet. Optional: Sprinkle extra breadcrumbs evenly over each filet for an extra crispy topping.
  • Bake for 18-20 minutes or until cooked through and topping is golden brown.
  • Garnish with chopped green onions, chives, or a lemon slice if desired.

3 tablespoons olive oil
3 tablespoons butter
2 large eggs
1 cup shredded Parmesan cheese
3 tablespoons all-purpose flour
4 (6 ounce) mahi mahi fillets
salt and ground black pepper to taste
½ cup finely chopped toasted macadamia nuts
1 cup mango salsa

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil and butter in an oven-proof pan over low heat until butter is melted. Remove from the heat.
  • Beat eggs in a small, shallow dish. Mix Parmesan and flour in a second shallow dish.
  • Season mahi mahi fillets with salt and pepper. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into Parmesan mixture to coat both sides. Lay each fillet into the melted butter mixture, then turn each piece over to coat. Sprinkle macadamia nuts evenly over each fillet.
  • Bake, uncovered, in the preheated oven until fish is opaque and flakes easily with a fork, 7 to 11 minutes, depending on the thickness of the fillets.
  • Place each fillet on a serving plate and top with 1/4 cup mango salsa.

1 lb grouper fillets or 1 lb red snapper
1 1/2 cups corn flakes
1 cup macadamia nuts (or pecans or walnuts)
2 tablespoons chopped parsley (optional)
salt and pepper
cooking spray, for baking pan
1/3 cup honey
1/3 cup soy sauce
2 teaspoons dry mustard (or more)

Steps:

  • Heat oven to 350 degrees.
  • In a food processor, pulse nuts until coarsely chopped.
  • Add cornflakes and pulse both together until flakes are in small pieces but not broken down.
  • Add chopped parsley, salt and white pepper to the mixture and spread on a platter.
  • Roll the fish fillets in the cornflake breading and press it on the fish with your fingers to make it stick.
  • Spray the baking pan, lay the fish fillets inches.
  • Bake for 10 minutes.
  • The fish should still be moist and delicate- not overcooked or dry.
  • While the fish is baking, mix the honey, soy sauce, and dry mustard until thoroughly integrated.
  • Place the mahi mahi on a dinner plate with rice.
  • Pour a little honey soy glaze over the fish and drizzle a little around it on the plate.
  • Serve.

2 ounces macadamia nuts
4 ounces plain bread crumbs
6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
  • Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.
