1 can (8 oz) pizza sauce
1 1/2 cups shredded mozzarella cheese (6 oz)
2 cups cubed cooked chicken
1/2 cup thinly sliced red onion
1/2 cup crumbled feta cheese (2 oz)
1/4 cup chopped kalamata olives
1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves

Steps:

  • Heat oven to 425°F. Spray large cookie sheet with cooking spray. Unroll dough on cookie sheet; starting at center, press dough into 13x9-inch rectangle.
  • Spread pizza sauce over dough to within 1/2 inch of edges. Top with remaining ingredients.
  • Bake 12 to 15 minutes or until crust is golden brown and cheese is melted.

1 package regular active dry yeast
3/4 cup warm water (105°F to 115°F)
2 cups Gold Medal™ whole wheat flour
2 teaspoons sugar
1/2 teaspoon salt
1 tablespoon olive oil
1 tablespoon cornmeal
3/4 cup Muir Glen™ organic pizza sauce (from 15-oz can)
1 cup shredded reduced-fat mozzarella cheese (4 oz)
1 cup shredded cooked chicken breast
2 medium plum (Roma) tomatoes, thinly sliced
1/4 cup pitted kalamata olives, halved
1/2 cup crumbled feta cheese (2 oz)
1/4 cup chopped fresh basil leaves

Steps:

  • In medium bowl, dissolve yeast in warm water. Stir in flour, sugar, salt and oil. Stir with fork until dough forms. Turn dough onto lightly floured surface; knead 12 times. Return to bowl. Cover; let rest 20 minutes.
  • Heat oven to 425°F. Spray large cookie sheet with cooking spray; sprinkle with the cornmeal. Gently push fist into dough to deflate. Spray hands with cooking spray; press dough into 15x10-inch rectangle on cookie sheet.
  • Bake 8 minutes. Spread pizza sauce over partially baked crust to within 1/2 inch of edge. Top with mozzarella cheese, chicken, tomatoes, olives and feta cheese.
  • Bake 10 to 15 minutes longer, or until cheese is melted and edges of crust are golden brown. Sprinkle with basil.

1 pound fresh or frozen pizza or bread dough, thawed according to package directions
1 1/2 cups grated mozzarella cheese
2 teaspoons garlic flakes
2 cooked chicken breast halves, diced (about 2 cups)
1 cup sliced mushrooms
1/2 cup sliced pitted kalamata olives
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1 recipe Cherry Tomato Salad, recipe follows
2 cups halved red cherry or grape tomatoes
2 cups halved yellow cherry tomatoes
1/4 cup freshly chopped basil leaves
2 tablespoons red wine vinegar
2 teaspoons olive oil
1 teaspoon Dijon mustard
Salt and coarsely ground black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Roll dough out into a large rectangle and transfer to a large baking sheet. Top dough with mozzarella cheese, to within 1/2-inch of the edges and then sprinkle garlic flakes all over cheese. Top with chicken, mushrooms and olives. Sprinkle feta cheese over top and then sprinkle oregano over everything. Bake 10 to 12 minutes, until crust is golden brown and cheese melts.
  • Serve with Cherry Tomato Salad.
  • In a medium bowl, combine tomatoes and basil. In a small bowl, whisk together vinegar, oil and mustard. Add mixture to tomatoes and toss to combine. Season, to taste, with salt and black pepper.

MACE'S GREEK CHICKEN PIZZA

This is one I made up on a night when I wanted something a little different and cleaned out the fridge instead of running to the store. You can adjust the tomatoes and onions to suit your taste; it's also good with a clove of crushed garlic. You can use a prepared crust or make your own.

1 prepared pizza crust
1 (8 ounce) container hummus (flavor of your choice)
1 boneless skinless chicken breast
all purpose Greek seasoning
diced tomato (as desired)
diced onion (as desired)
1/2 cup crumbled feta cheese (approximate) or 1/2 cup grated feta cheese (approximate)
2 cups shredded mozzarella cheese
olive oil

Steps:

  • Dice and cook chicken breast in a little olive oil; season with Greek seasoning. Set aside when cooked through.
  • Brush pizza crust lightly with olive oil. Spread hummus in a circle on crust (like it's pizza sauce) with the back of a large spoon.
  • Top with diced tomatoes and onions and spread diced chicken evenly over top.
  • Top all this with mozzarella cheese, then feta.
  • Bake until cheese is bubbly and pizza is heated through. (For temperature I usually refer to the recommended instructions of whatever type of pizza crust I'm using).

According to John Shields, Mrs. Morrison was the housekeeper at an Episcopal Church in Baltimore for many years and made this cake a staple at generations of church events. If you want to sweeten/fancy it up, add whipped cream or ice cream and strawberries. I think it's quite nice just as it is.

1 cup milk
8 tablespoons unsalted butter, softened
4 extra large eggs, beaten
2 1/2 cups sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon ground mace
1/2 teaspoon ground mace

Steps:

  • Preheat oven to 350°F.
  • Butter and flour a 9 x 13 inch baking pan.
  • Combine the milk and butter in a saucepan and bring to a boil.
  • Remove from heat.
  • Beat together the eggs and 2 cups of sugar.
  • Sift together the flour, baking powder and one tablespoon of mace.
  • Mix the dry ingredients into the egg mixture.
  • Add the milk and butter mixture while still hot to the flour/egg mixture and mix very well, beating until all ingredients are incorporated and mixture is fluffy.
  • Pour into prepared baking pan.
  • Mix remaining 1/2 cup of sugar and 1/2 teaspoon mace together and sprinkle mixture evenly over top of batter.
  • Bake for 25 to 35 minutes or until a tester comes out clean.
  • Cool on a wire rack.
  • Serve warm.
  • Note: The cake may also be baked in a 10 inch tube pan at 325° F for one hour.

I discovered this recipe on "The Regis and Kathie Lee Show" many, many years ago. It was a dish at one of Regis' favorite restaurants called La Strata East. Not sure if the restaurant is still in business . . . was unable to find it after an online search. I've been making this dish for years, but I can't remember the significance of the name. It is one of my favorite things to make when company comes, especially because it's a one dish meal and you can assemble it ahead of time. Can also be made on top of the stove in a 12" skillet, cooking an additional 30 minutes.

2 lbs boneless skinless chicken cutlets, cut into 2 inch pieces
3 -4 tablespoons olive oil
4 Italian sausage, cut into 2 inch pieces

12 ounces mushrooms, sliced
