½ cup butter
½ cup milk
2 eggs, beaten
3 cups shredded mozzarella cheese, divided
1 (16 ounce) jar pizza sauce (such as Prego® Traditional Italian Sauce)
1 (4 ounce) package sliced pepperoni, or to taste
dried oregano, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and return pasta to pot. Add butter, milk, and cheese mix to macaroni; stir until evenly mixed.
  • Stir eggs into macaroni and cheese until incorporated. Add 1 cup mozzarella cheese; stir until just combined.
  • Spread macaroni and cheese mixture into the prepared baking dish; top with pasta sauce. Sprinkle the remaining 2 cups mozzarella cheese over sauce. Cover the cheese layer with pepperoni and season with oregano.
  • Bake in the preheated oven until cheese is melted, about 30 minutes.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
3/4 cup water
3/4 cup sour cream
1 1/2 cups cheddar cheese, shredded, divided (I like sharp cheddar, but any cheese will do)
1 cup salsa (Any is fine, I only have used green)

Steps:

  • PREHEAT oven to 400°F Prepare Dinner as directed on package. While Macaroni is cooking, brown meat; drain. Add taco seasoning mix and water to meat; simmer 5 minute.
  • STIR sour cream into prepared Dinner. Spoon half of the Dinner mixture into 8-inch square or 9-inch round baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining Dinner mixture. Cover.
  • BAKE 15 minute Top with salsa and remaining 1/2 cup cheese. Bake, uncovered, an additional 5 minute or until cheese is melted.

Steps:

  • Cook macaroni in large pot of boiling salted water until done; drain.
  • Meanwhile, heat oil in large frying pan and sauté onion until softened.
  • Add ground beef and cook until browned.
  • Add tomatoes, thyme, oregano and salt to taste.
  • Cook about 5 minutes to blend flavors.
  • In a small saucepan, whisk together flour and milk.
  • Cook over medium heat, stirring, until mixture comes to a boil.
  • Continue cooking 1 minute.
  • Remove from heat and stir in 3/4 cup cheese.
  • Stir until cheese is melted.
  • Stir into meat sauce.
  • Combine with macaroni.

4 tablespoons all-purpose flour
Kosher salt
3 cups whole milk
1 cup heavy cream
3/4 pound mild Cheddar cheese, shredded, divided
1/2 pound sharp Cheddar cheese, shredded
1/2 pound smoked Cheddar cheese, shredded
1/2 pound Brie cheese, rind removed and diced
1 pound elbow macaroni

Steps:

  • For the cheese sauce: In a medium saucepan over medium heat, add 4 tablespoons of the butter. When foamy, sprinkle in the flour and a pinch of salt. Whisk to combine, then continue whisking until flour is cooked, 2 to 3 minutes. Whisk in the milk, pouring it in a slow, steady stream. Then whisk in the cream. Bring to a simmer. Set aside 3/4 cup of the mild Cheddar; whisk in the remaining mild Cheddar and the sharp Cheddar, smoked Cheddar and Brie. Continue to stir for 2 minutes or until all the cheese is melted, then turn the heat off. Stir in the remaining 1 tablespoon butter until melted and incorporated.
  • For the macaroni: Fill a large pot halfway with water. Season with salt until it tastes like the sea. Bring to a boil, then add the macaroni. Stir, then simmer until macaroni is al dente, about 8 minutes. Drain.
  • Meanwhile, preheat the oven to 350 degrees F.

This recipe came from what my mom referred to as the 'spice' cookbook. I grew up with it and am happy to share it. It's pretty simple to make. Make a roux, add to pasta. It is a favorite at potlucks but can be altered for smaller groups. You can make it as spicy as you like. I usually make a SPICY half and a not so spicy half.

1 lb sharp cheddar cheese
1 lb monterey jack pepper cheese
9 tablespoons butter
8 tablespoons flour
2 teaspoons dry vegetarian chicken base (tastes better)

1/2 teaspoon dry mustard
1 dash cayenne (as much as you want)
1 dash nutmeg

  • Grate cheese and set aside.
  • Cook macaroni following directions on package and set aside.
  • For the roux Melt butter, remove from heat.
  • Mix flour, seasoned stock base and seasonings.
  • Slowly add mixture to butter.
  • Cook over low heat. stirring, until mixture is smooth and bubbly. Do not allow to brown.
  • Remove from heat and slowly stir in milk.
  • Bring to a boil, stirring, and cook until sauce thinkens.
  • Add 2 cups of the cheese and stir unil melted.
  • Place half the macaroni in a buttered 13 x 9 x 2 inch baking dish.
  • Sprinkle with half of remaining cheese.
  • Pour half of sauce over all.
  • Top with layer of macaroni and the rest of the cheese.
  • Pour remaining cheese sauce over all. Sprinkel with paprika.
  • Bake in 350 oven 30 to 40 minutes.
  • Serve hot from baking dish.

200 g cheddar cheese
100 g parmesan cheese
1 bunch fresh flat leaf parsley
sea salt
400 g macaroni, uncooked
200 g creme fraiche

Steps:

  • TO PREPARE YOUR PASTA:.
  • Remove the outer green leaves from the cauliflower and discard.
  • Slice the end off the cauliflower stalk.
  • Cut the head into small florets.
  • Halve the thick stalk lengthways then slice thinly.
  • Grate the cheddar cheese and parmesan into a large bowl.
  • Finely chop the parsley stalks and leaves.
  • TO COOK YOUR PASTA:.
  • Bring a large pan of salted water to the boil.
  • Add the macaroni and all of your cauliflower and cook according to the macaroni packet instructions.
  • Place the bowl of cheese over the saucepan and add the creme fraiche.
  • Carefully stir every so often until the cheese is smooth and melted.
  • If the water boils up underneath the bowl, just turn the heat down slightly.
  • Add all the chopped parsley to the melted cheese and season with a pinch of salt and pepper.
  • Carefully remove the bowl of cheese using a towel or oven gloves and set aside.
  • Drain the macaroni in a colander over a bowl, reserving the cooking water.
  • Return the pasta to the pan, pour in the melted cheese and stir.
  • It should have a lovely silky consistency, but if it's too thick, add a splas of your cooking water to thin it out a bit.
  • At this point you can either serve the macaroni as it is, or finish it under the grill to make it crispy and golden on top.
  • To do this, preheat your grill to medium heat.
  • Add 150ml of the reserved cooking water to the macaroni, stir in, then transfer to a baking dish.
  • Place under the grill until golden and bubbling.
  • TO SERVE YOUR PASTA:.
  • Divide the pasta between plates or bowls, or place the baking dish in the middle of the table next to a nice green salad and let everyone help themselves.

1 1/2 cups 1% low-fat milk

  • If you're like me and get absentminded of what's in your freezer and how long it's been in there thus your broccoli is REALLY freezer-burnt, throw it in the pot when you put the macaroni inches Make sure it's a big enough pot.
  • When they're all done cooking, remove and drain the macaroni and broccoli. Put them into a 2.5-quart baking dish, mixing well.
  • Pour the milk into the pot and let it come to a low boil. Meanwhile, preheat the oven to 350°F.

1 Tbsp. butter
20 round buttery crackers, crushed

Steps:

  • Preheat oven to 350ºF. Prepare Dinners as directed on package. Stir in Singles, peppers, spinach and ham. Spoon into greased 2-qt. baking dish.

1/2 lb elbow macaroni
1 1/2 lbs grated colby-monterey jack cheese
1/2 cup margarine
1 (12 ounce) can evaporated milk
2 eggs
1 teaspoon salt

Steps:

  • Preheat oven to 350. Grease inside of 9x13 baking dish with stick of margarine. Cook elbow noodles til they are half cooked. Drain and rinse in cold water. Layer noodles and cheese in baking dish alternating between cheese and noodles. In mixing bowl combine evaporated milk, eggs, salt, and pepper. Mix well, pour evenly over macaroni and cheese. Use stick of margarine and put 1 TBSP at each corner and in middle of macaroni and cheese. Push down slightly. Bake at 350 for about 35 minutes or until lightly golden and bubbly on top.

1 (2 1/2 lb) package elbow macaroni
3 tablespoons butter
2 (10 ounce) cans condensed cream of mushroom soup
1 (2 lb) package processed cheese (I prefer Velveeta)
2 (16 ounce) packages shredded sharp cheddar cheese
2 cups water

Steps:

  • Cut ingredients in half or thirds for less servings.
  • Boil elbow noodles till done, but still firm.
  • Drain.
  • Rinse with warm water to remove excess starch.
  • Cut processed cheese into chunks.
  • Pour water in large saucepan and heat till slightly boiling.
  • Add all processed cheese, stir till almost melted.
  • Lower heat on cheese sauce to prevent scorching and add mushroom soup.
  • Stir till fully incorporated.
  • Remove from heat.
  • Pour noodles into roasting pan.
  • Add butter and stir till melted.
  • Stir in cheese sauce.
  • Top with shredded cheese and bake at 350F till top is slightly brown.

  • Bring water to a boil and add chicken bouillon. Cook pasta in water for 1-2 minutes LESS than the package instructs. You want it to be more al dente than what you would typically cook it to.

2 cups half-and-half
3 large eggs
1/2 teaspoon paprika
Freshly ground pepper
2 cups grated cheddar cheese (about 6 ounces)
1 cup grated muenster cheese (about 3 ounces)
1 cup grated provolone cheese (about 3 ounces)
1/2 cup finely chopped whole-milk mozzarella cheese (about 2 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Butter a shallow 2-quart baking dish; set aside. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Drain and transfer to a medium bowl; add the butter and toss until melted.
