ROASTED GARLIC MAC AND CHEESE



Roasted Garlic Mac and Cheese image

Add a flavor-packed twist to a comfort food classic with a tried-and-tested recipe for extra-creamy Roasted Garlic Mac and Cheese.

4 Tablespoons (1/2 stick) unsalted butter
2 cups Panko Japanese bread crumbs
3 Tablespoons chopped fresh chives
1 head garlic
Olive oil
1 pound uncooked pasta (such as cavatappi, shells or rigatoni)
1 stick (8 Tablespoons) unsalted butter
6 Tablespoons all-purpose flour
5 cups whole milk
5 1/2 cups coarsely shredded cheddar cheese (white, yellow or a mix of both)
1/2 cup grated Parmesan cheese
1/2 teaspoon ground mustard powder
1 1/2 teaspoons salt
1 teaspoon ground black pepper

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the breadcrumbs and chives, stirring to combine. Cook for 1 to 2 minutes until toasted slightly. Transfer to a small bowl and set aside.
  • Preheat the oven to 400ºF.
  • Slice the top one-third off the head of garlic. Place the bottom portion on a piece of foil, drizzle it with olive oil, and season it with salt and pepper. Place the top portion back on the head of garlic and crumple the foil to create a sealed packet. Roast the garlic until golden and soft, about 45 minutes.
  • Remove the roasted garlic from the oven and squeeze the cloves into a bowl. Using a fork, mashing the cloves into a paste. Set aside.
  • Cook the pasta in a large pot of well-salted water until al dente. Drain the pasta, reserving 1/2 cup of the cooking water. Butter a 13x9-inch shallow baking dish.
  • In a large, heavy saucepot (such as a Dutch oven), melt 1 stick butter over medium-low heat. Stir in the flour and reserved garlic paste. Cook the roux, stirring constantly, for 3 minutes until golden. Whisk in the milk. Bring the sauce to a boil, whisking constantly, then reduce it to a simmer and let it cook for 3 minutes. Stir in the shredded cheddar cheese, Parmesan cheese, mustard powder, salt and pepper until well combined.
  • Add the pasta and the reserved 1/2 cup of pasta water to the pot, stirring to combine. (It will be soupy.) Transfer the macaroni and cheese to the buttered baking dish. Sprinkle it with the reserved crumb topping and place it on a sheet tray (in the event it bubbles over while baking). Bake the macaroni and cheese for 20 to 25 minutes until it's golden brown and bubbling.
  • The garlic head can be roasted, and the garlic gloves mashed, 1 day in advance. Store the garlic paste, covered, in the fridge.
  • The macaroni and cheese can be baked in a large baking dish or several smaller ramekins for individual servings.

I was messin' around in my kitchen trying to put a twist on my traditional macaroni salad recipe. I tried several different dishes before I came up with this one. Now my friends and family can't get enough of it! I recommend making it a day ahead and chilling it overnight to really develop the flavors.

1 (16 ounce) package small seashell pasta
1 cup mayonnaise
¼ cup distilled white vinegar
⅔ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large Vidalia or sweet onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
¼ cup grated carrots
1 pound diced cooked ham

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook until al dente, 8 to 10 minutes. Drain pasta, but do not rinse. Let stand 5 minutes.
  • To make the dressing, combine the mayonnaise, vinegar, sugar, mustard, salt, and pepper in a bowl. Set aside.
  • Combine the onion, celery, bell pepper, carrots, and ham in a large bowl. Stir in the dressing. Add the pasta and toss gently to blend all ingredients. Chill at least 4 hours before serving.

Let's be honest... I've never met a mac & cheese I haven't liked! And I loved this creamy recipe. I especially like the mix of pepper jack and cheddar cheese. They give the recipe a bit of zing. Delish!

8 oz twist (rotini) pasta
2 Tbsp cornstarch
1 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard
2 tsp worcestershire sauce
2 to 4 dash(es) hot pepper sauce (i used 4 dashes of tabasco)
2 1/2 c milk
2 Tbsp butter
1 1/4 c shredded, sharp cheddar cheese
1 1/4 c shredded, pepper jack cheese
1/2 c fresh bread crumbs

Steps:

  • 1. Cook pasta in boiling salted water for 6 minutes; drain and set aside.
  • 2. In a medium saucepan combine cornstarch, salt, pepper, and dry mustard; stir in milk until smooth. Add butter, worcestershire sauce, and hot pepper sauce. Stirring constantly, bring to a boil over medium-high heat and boil for 1 minute. Remove from heat and stir in 1 cup of sharp cheddar and 1 cup pepper jack cheeses until melted.
  • 3. Add macaroni and turn into 2-quart casserole that has been sprayed with cooking spray. Combine remaining cheeses and bread crumbs. Sprinkle on top.
  • 4. Bake in 350* oven for 25 minutes or until lightly browned.

I found this recipe in one of my favorite cookbooks: "The Vegetarian Meat and Potatoes Cookbook" Besides being a great dairy free recipe for "mac and cheese", the flavor of the dish from the miso, tofu and lemon is really unique. It's also a fun way to sneak tofu into the diets of non vegetarians. I do eat dairy, so I usually use skim milk and real cheese instead of the soy, but the original recipe from the book uses the non-dairy options.

1 teaspoon olive oil
1 medium onion, minced
2 cups soymilk (can substitute skim milk)
12 ounces soft tofu or 12 ounces silken tofu
1 tablespoon fresh lemon juice
1 teaspoon white miso
1 -2 dash hot sauce
1/4 teaspoon turmeric
salt & freshly ground black pepper (for a nice change, try using fresh ground white pepper)
12 ounces rotini pasta (spiral shaped)
1 cup grated soy cheese (can substitute cheddar or monteray jack cheese if you eat dairy)
1/2 cup dried breadcrumbs

Steps:

  • Preheat oven to 375 degrees.
  • Lightly spray a 2 1/2 quart caserole dish with cooking spray.
  • Heat oil in a pan over medium heat, and saute the onion until soft, about 5 minutes.
  • Place onions in a blender or food processor with the milk, tofu, lemon juice, miso, hot sauce, turmeric, and salt and pepper.
  • Process until well blended.
  • Take a taste and adjust any of the seasonings as needed, then set aside.
  • Cook rotini in a large pot of boiling salted water until just under al dente (I'd say about 6-7 minutes).
  • Drain pasta and add the sauce from the blender and half of the grated cheese.
  • Combine well.
  • Place pasta into the caserole dish, and top with the breadcrumbs and the remaining cheese.
  • Cover with foil and bake for 30 minutes.
  • Uncover and bake until the top is lightly browned, 5 to 10 minutes longer.
  • Let sit about 5 to 10 minutes before serving.

1 box(es) 8 oz. elbo macaroni
1 can(s) cream of mushroom soup
1/2 can(s) water
1 medium chopped onion
1/2 cup(s) chopped green bell pepper (more if you want)
4 cup(s) shredded sharp cheddar cheese
1/4 cup(s) chopped red bell pepper (you can use 20 oz. jar of pimentos)
1 cup(s) mayonnaise
TOPPING:
1 tube(s) sleeve of ritz crackers
1/2 stick(s) melted butter

Steps:

  • Drain cooked macaroni noodles. Add all other ingredients. Mix well.
  • Put macaroni mixture in a buttered 13x9 inch pan.
  • Topping: Put one sleeve of Ritz crackers in a zip loc bag and crush.Spread the crushed crackers over the top of the macaroni mixture. Drizzle 1/2 stick of melted butter all over the top.
  • Bake in a 350 degree oven for about 30 minutes. Good with ham, turkey, chicken, pork or alone! Note: you can use more or less bell pepper to suite your taste. I always use the red bell peppers in this recipe not pimentos. I also love onions so if you want to use a small onion, that would work.

2 cups uncooked elbow macaroni (7 ounces)
1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt

2 cups milk
2 cups shredded or cubed Cheddar cheese (8 ounces)

Steps:

  • Heat oven to 350°F. Cook and drain macaroni as directed on package.
  • While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constanly. Boil and stir 1 minute. Stir in cheese. Cook, stirring occasionally, until cheese is melted.
  • Gently stir macaroni into cheese sauce.
  • Pour into ungreased 2-quart casserole. Bake uncovered 20 to 25 minutes or until bubbly.
