You'll never guess that protein-packed silken tofu is the secret ingredient in this luscious mac and cheese. Kids and grownups alike will gobble this one up!

12 oz Uncooked whole wheat macaroni or regular macaroni
12 oz Silken tofu
2 cup(s) Low-fat shredded cheddar cheese 2% fat
2 tbsp(s) Low-fat milk
1 tsp(s) Regular butter
1 tsp(s) Light sour cream
1 tsp(s) Dijon mustard
1 tsp(s) Table salt
0.5 tsp(s) Garlic powder
0.125 pinch Black pepper
1 pinch(es) Cayenne pepper

Steps:

  • Cook macaroni according to package instructions in salted water. While cooking combine all other ingredients in a food processor or blender until smooth. When macaroni is done drain well and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth. Serve immediately.

16 ounces fettuccine pasta

Steps:

  • Cook pasta per package directions.

  • Pour over hot pasta and mix well.
