1 (16-oz.) block white cheddar cheese, shredded and divided
2 1/4 cups uncooked small elbow macaroni pasta
3 cups whole milk
4 tablespoons salted butter, divided
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1/8-1/4 teaspoon cayenne pepper
1/2 cup crushed Kroger Kettle Cooked Nashville Hot Chicken potato chips

Steps:

  • Preheat oven to 375 degrees. Grease a 9x13" ceramic baking dish or a large ceramic oval baking dish with 1 tablespoon of the butter, and set aside.
  • Stir the elbow macaroni into a large pot of boiling salted water. Cook to al dente, about 5 minutes after the water returns to a boil. Immediately drain in a colander and rinse under cold water. Then set aside.
  • Warm the milk in microwave on high for 20 seconds, or pour it into a saucepan and warm over medium-low heat to just below simmer.
  • Meanwhile, in a separate pan, melt the remaining 3 tablespoons of butter over medium-low heat. I reuse the Dutch oven that I cook the macaroni in for this step. Reduce the heat to low, and whisk in the flour for 2 minutes, being careful not to let it brown.
  • Continue whisking, and add the warmed milk in small amounts, taking care to whisk until smooth after each addition. Continue stirring the white sauce until it thickens and comes to a simmer, about 5 minutes.
  • Remove the white sauce from heat and whisk in the salt, onion powder, black pepper, cayenne pepper to taste, and half of the shredded cheese. Taste the sauce at this point, and adjust the seasoning as needed. Then stir in the drained macaroni.
  • Spread a third of the macaroni mixture over the bottom of the prepared baking dish. Sprinkle a third of the remaining shredded cheese over the top. Spoon another third of the pasta on top, and layer with another third of the cheese. Finish with the remaining pasta mixture, and then top with the remaining shredded cheese. Sprinkle crushed Kettle Cooked Nashville Hot Chicken potato chips over the top.
  • Bake uncovered for 25-30 minutes, or until golden brown around the edges and bubbling throughout. Let stand for 5 minutes before serving.

8 ounces Cheddar, 1/2 cubed, 1/2 shredded
8 ounces Colby cheese, cubed
8 ounces Monterey pepper jack cheese, cubed
2 teaspoons all-purpose flour
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
  • In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.

1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. 1 - 16 oz box of elbow macaroni or my favorite penne
1/2 cup butter
1/2 cup minced onion
4 cloves mince garlic
1-3 chipotle peppers in adobo sauce - finely minced
6 tablespoons flour
3 cups whole milk
2 cups sharp cheddar cheese
1 cup Monterey jack cheese
1 drained can corn (optional but so good in the mac and cheese)

Steps:

  • Preheat oven 350 degrees.
  • Put a pot of water on for the pasta. Cook pasta according to package directions. While water is coming to a boil begin making the cheese sauce.
  • Melt butter in a large pot over medium heat, add in minced onion and cook until onion is almost done.
  • Stir in minced garlic and minced chipotle peppers in adobo sauce. Cook two minutes stirring constantly.
  • Whisk in six tablespoons of flour. Cook two minutes whisking constantly.
  • Whisk in milk a little at a time. When mixture starts to thicken, add in more milk, repeat until all the milk is added in.
  • Turn down the heat a little and whisk in cheddar and Monterey jack cheeses. Stir to combine as cheese melts.
  • Taste the cheese sauce for salt and black pepper.
  • Turn off heat, stir in cooked drained pasta, and a drained can of corn (optional).
  • Transfer spicy macaroni and cheese into a 9" x 13" pan sprayed with non-stick cooking spray.
  • Tightly cover macaroni and cheese with foil.
  • Bake at 350 degrees for 45 minutes.
  • Remove cover and bake an additional 15 minutes or until mac n cheese is browned to your liking.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. This recipe came from what my mom referred to as the 'spice' cookbook. I grew up with it and am happy to share it. It's pretty simple to make. Make a roux, add to pasta. It is a favorite at potlucks but can be altered for smaller groups. You can make it as spicy as you like. I usually make a SPICY half and a not so spicy half.

1 lb sharp cheddar cheese
1 lb monterey jack pepper cheese
9 tablespoons butter
8 tablespoons flour
2 teaspoons dry vegetarian chicken base (tastes better)
1 teaspoon onion powder
1/2 teaspoon white pepper
4 teaspoons Season-All salt
1/2 teaspoon dry mustard
1 dash cayenne (as much as you want)
1 dash nutmeg
4 cups milk
2 (8 ounce) packages macaroni
1 dash sweet paprika

Steps:

  • Grate cheese and set aside.
  • Cook macaroni following directions on package and set aside.
  • For the roux Melt butter, remove from heat.
  • Mix flour, seasoned stock base and seasonings.
  • Slowly add mixture to butter.
  • Cook over low heat. stirring, until mixture is smooth and bubbly. Do not allow to brown.
  • Remove from heat and slowly stir in milk.
  • Bring to a boil, stirring, and cook until sauce thinkens.
  • Add 2 cups of the cheese and stir unil melted.
  • Place half the macaroni in a buttered 13 x 9 x 2 inch baking dish.
  • Sprinkle with half of remaining cheese.
  • Pour half of sauce over all.
  • Top with layer of macaroni and the rest of the cheese.
  • Pour remaining cheese sauce over all. Sprinkel with paprika.
  • Bake in 350 oven 30 to 40 minutes.
  • Serve hot from baking dish.

1 pound dried macaroni
3 cups whole milk
3 tablespoons all-purpose flour
4 1/2 to 5 cups shredded cheese (about 20 to 24 ounces), preferably a combination of Monterey Jack and sharp yellow Cheddar
1/4 teaspoon ground white pepper

Steps:

  • Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
  • Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
  • Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
  • Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
  • Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
  • Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
  • Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.
