1 package (7 ounces) macaroni
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
8 ounces process cheese (Velveeta), cubed
1 tablespoon chopped onion
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
2 tablespoons seasoned bread crumbs

Steps:

  • Cook macaroni according to package directions; drain. Place in a greased 2-qt. baking dish; set aside. , In a saucepan, melt butter over medium heat. Stir in flour until well blended. Gradually add milk; bring to a boil. Cook and stir for 2 minutes; reduce heat. Add cheese, onion, Worcestershire sauce, salt, pepper and mustard; stir until cheese melts. , Pour over macaroni and mix well. Sprinkle with bread crumbs. Bake, uncovered, at 375° for 30 minutes.

2 cups uncooked elbow macaroni
1 1/2 teaspoons salt
4 large eggs, lightly beaten
2 cups milk
1/4 teaspoon pepper
4 cups (16-oz.) shredded New York sharp Cheddar cheese

Steps:

  • Preheat oven to 300°F. Lightly grease a 13-by-9-inch baking dish.
  • Cook macaroni according to package directions, adding 1 tsp. salt; drain well. Combine eggs, milk, pepper, and remaining 1/2 tsp. salt in a large bowl; add cooked macaroni, and stir well.
  • Spoon half of macaroni mixture into prepared dish. Sprinkle with half of cheese. Repeat layers with remaining macaroni mixture and cheese, ending with cheese.

2 cups elbow macaroni
2 cups heavy whipping cream
1 ¼ cups milk
1 cup shredded Gruyere cheese, divided
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until halfway cooked, about 4 minutes. Drain.
  • Combine heavy cream, milk, and Gruyere cheese in a large bowl. Add elbow macaroni and mix well; season with salt and pepper. Cover bowl with plastic wrap and refrigerate for 24 hours.
  • Bring the macaroni mixture to room temperature, 30 minutes to 1 hour. Pour into a 2-quart baking dish. Sprinkle remaining Gruyere cheese on top.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden and crispy, 15 to 20 minutes.

4 cups dried macaroni
1 whole egg
1/2 stick (4 tablespoons) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 heaping teaspoons dry mustard (more if desired)
1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
Salt
Seasoned salt
1/2 teaspoon ground black pepper
Optional spices: cayenne pepper, paprika, thyme
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the macaroni until still slightly firm. Drain and set aside.
  • In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
  • Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
  • Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

This is a recipe that I got from one of my husband's Marine friend's Mother. She came up to Virginia to visit him, and she cooked everyone a Southern Feast! My husband fell in love with the macaroni and cheese, so I asked her for the recipe, and, here it is! NOTE: This recipe is really just made by feel. 2 cups elbow macaroni
1 tablespoon butter
6 -8 slices American cheese
1/4 cup evaporated milk
salt and pepper

Steps:

  • Boil 4 cups of salted water and add the macaroni; cook 8 minutes, or until done; Drain macaroni and set aside.
  • In a medium saucepan, melt butter over LOW heat.
  • Add cheese slices, one by one, until all are melted through, and cheese is smooth.

1 (1 lb) box long macaroni, uncut
1 (48 ounce) can tomato juice
2 (10 ounce) cans condensed tomato soup
5 big yellow onions
1 (2 lb) package sharp cheddar cheese
salt
pepper
olive oil
1/4 cup milk

Steps:

  • Cook the long macaroni al dente and set aside.
  • Dice the onions or put in food processor until finely chopped.
  • In a large saucepan, heat the olive oil, add the onions and cook until tender.
  • Add the tomato juice, tomato soup (do not add water), salt and pepper and let cook for about 5 minutes (until the flavors blend).
  • Spread out the cooked macaroni in 2 (13 x 9) dishes and pour the tomato and oignon mixture over the macaroni.
  • Make sure that everything is well coated.
  • Cut the block of cheese in 1 inches squares (grate some for the top) and insert randomly in the mixture (push each square in the macaroni with your fingers).
  • Put the reserve grated cheese on top of the dishes and pour a little milk over the cheese (that's how my grandmother did it).
  • Bake at 350 for about 45 minutes until bubbly.

1 tablespoon butter
1 medium onion, chopped
1 tablespoon flour
1/4 cup milk
1/2 teaspoon seasoning salt
pepper
1 1/2 cups shredded cheddar cheese or 1 1/2 cups pasteurized processed cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 cup dry breadcrumbs
1/2 cup shredded cheddar cheese or 1/2 cup pasteurized processed cheese
3 tablespoons butter

Steps:

  • Cook the macaroni according to package directions.
  • Drain.
  • Melt the 1 T butter in a saucepan;
  • stir in the onions and saute until they are translucent.
  • Stir in the flour and cook a minute or so, stirring.
  • Slowly add the milk, stirring constantly.
  • When all the milk is in and the sauce is smooth and creamy, stir in the salt, pepper, the 1 and 1/2 c cheese, the worcestershire and dry mustard.
  • Reheat a bit if necessary to melt all the cheese.
  • Stir in the cooked macaroni.
  • Now comes the au gratin part:.
  • Turn the macaroni and cheese into a greased 2 quart casserole.
  • Combine the bread crumbs and the 1/2 c cheese and sprinkle over the surface of the M&C.
  • Melt the 3 T butter in a small pan and drizzle over all.
  • Bake at 350 for 10 minutes or so (unless the mixture had gotten cold before it went into the oven, in which case make it 20 or 30 minutes), And run it under the broiler quickly at the end to brown the top.
