MAC AND CHEESE IN A POTATO



Mac and Cheese in a Potato image

This is My very own twist on a great comfort dish. If you love potato's and Mac and cheese, then this is for you.

Number Of Ingredients 14

4 tablespoons butter
2 tablespoons flour
1 cup chicken broth
1/2 cup cream
1 cup sharp white cheddar cheese
1 cup monterey jack cheese
1/2 cup of aged parmesan cheese
2 1/2 cups uncooked pasta macaroni
1 teaspoon salt
1 teaspoon black pepper
4 russet potatoes
2 tablespoons garlic powder
2 tablespoons onion powder
1/4 cup olive oil

Steps:

  • Combine olive oil, garlic or garlic powder, salt and pepper into a bowl. Brush on or rub onto potatoes. Bake at 375°F for an hour and a half.
  • Boil water for macaroni.
  • In a separate pot, add 2 tablespoons of butter. When melted, add the flour and keep stirring. Once the Roux gets a golden brown color, Add in chicken broth (keep stirring) then add in cream. At this time you should have the macaroni almost cooked and ready to strain. Now start to add the cheese into the roux one small Handle full at a time. Make sure cheese is completely melted before adding another handful.
  • Now shut off the flame to your cheese sauce and drain your macaroni. Add macaroni slowly into Sauce. Sit a side and let cool.
  • Take potatoes out of oven and let cool. Slice in halves and core out middle of potatoes. Take remaining Butter and place into center of potato skins.
  • Now, scoop macaroni into Potatoes and sprinkle cheese on top of potatoes. Bake for 10 minutes on 350°F Then move to broiler and broil tops of potatoes until golden brown.
  • Let cool, Garnish with parsley or chives and serve.
  • Remember, Mac and cheese should be enjoyed, not devoured. Good Luck!

6 tablespoons butter
1/2 cup all-purpose flour
4 cups milk, warm
1 teaspoon dry mustard
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cayenne pepper
Dash salt and freshly ground black pepper
Dash hot sauce
Dash Worcestershire sauce
3 cups shredded Cheddar
1 pound cavatappi pasta, cooked al dente
1 cup crushed potato chips
5 slices cooked bacon, crumbled
1/2 cup freshly grated Parmesan, for topping

Steps:

  • Heat oven to 350 to 375 degrees F.
  • Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour and cook, stirring, for 1 minute. Whisk in the warmed milk and bring to a boil, continue to whisk constantly. The mixture will thicken as the heat increases. Continue to stir while adding the dry mustard, nutmeg, cayenne, salt, pepper, hot sauce and Worcestershire. Stir in the 3 cups of Cheddar until it melts.
  • Pour the cheese sauce over the pasta and add to a 3 quart casserole dish.
  • Sprinkle the chips, bacon and Parmesan on top and bake for 35 minutes.

OLD SCHOOL MAC N' CHEESE



Old School Mac n' Cheese image

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

1 ¾ pounds whole-wheat macaroni
¾ cup butter
¾ cup all-purpose flour
6 cups milk, divided
1 tablespoon Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese, divided
3 (8 ounce) packages shredded American cheese
1 (8 ounce) bag potato chips (such as Lay's®), crushed
1 cup shredded Cheddar cheese
⅓ cup grated Parmesan cheese
butter-flavored cooking spray

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.
  • Reduce heat to low. Cook sauce, whisking frequently, until it begins to thicken, about 10 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
  • Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
  • Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
  • Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

1 loaf (32 oz. box) VELVEETA™ Original Cheese, cut into large cubes
1/4 cup butter
4 cups whole milk
1 package (16 oz) elbow macaroni
2 cups shredded sharp Cheddar cheese (8 oz)
2 cups small cherry tomatoes
1 bag (9 oz) fresh spinach
1 lb bacon, crisply cooked, crumbled
1 cup Progresso™ plain or Italian-style panko crispy bread crumbs

Steps:

  • In large microwavable bowl, place cheese cubes, butter and milk. Microwave uncovered on High 8 to 10 minutes. Stir with whisk; microwave on High 4 minutes longer. Stir again; repeat microwaving until all cheese is melted and mixture can be stirred smooth, a total of about 15 minutes.
  • Heat oven to 350°F. Cook macaroni in boiling salted water 3 minutes less than directed on box (macaroni should be firm). Drain; place in 15x10-inch (4-quart) glass baking dish. Pour melted cheese sauce over macaroni; mix well. Stir in shredded cheese, tomatoes and spinach.
  • Cover dish with foil; bake 30 minutes. Uncover; sprinkle bacon and bread crumbs evenly over top. Bake 5 minutes longer or until top is lightly browned. Cool at least 10 minutes before serving.

1/2 lb elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon dry mustard
3 cups milk
1/4 cup yellow onion, diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar cheese, shredded (I like using both Vermont white cheddar and Wisconsin extra-sharp cheddar cheese)
1 teaspoon salt
fresh cracked black pepper
crushed kettle cooked potato chips (i use cape cod 40% reduced fat, like it matters with this recipe!)

Steps:

  • Preheat oven to 350°F.
  • In a large pot of boiling salted water cook the pasta to al dente.
  • While the pasta cooks, in a separate pot, melt the butter.
  • Whisk in the flour and mustard and keep it moving for about 5 minute Make sure it is free of lumps.
  • Stir in milk, onion, bay leaf and paprika. Simmer for 10 minute and remove bay leaf.
  • Temper in the egg.
  • Stir in 3/4 of the cheese.
  • Season with salt and pepper.
  • Fold the macaroni into the mix and pour into a 2 quart baking dish.
  • Top with remaining cheese and potato chips.
  • Bake 30 minute Let stand for 5 minutes before serving, then bask in the compliments during dinner!

1 12-ounce russet potato, peeled, cut into 1/2-inch pieces (about 2 cups)
8 ounces small elbow macaroni
2 tablespoons (1/4 stick) butter
1 pound onions (about 3 medium), sliced
3/4 cup whipping cream
3/4 cup milk (do not use low-fat or nonfat)
1 1/2 cups grated Swiss cheese (about 6 ounces)

Steps:

  • Preheat oven to 350°F. Butter 8 x 8 x 2-inch baking dish. Cook potato in large pot of boiling salted water until tender, about 10 minutes. Using slotted spoon, transfer potato to large bowl. Add macaroni to same pot of boiling water; cook until just tender but still firm to bite. Drain macaroni. Add to bowl with potato.
  • Meanwhile, melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add sliced onions and sauteé until tender and brown, stirring often, about 15 minutes.
  • Add onions, cream, milk and cheese to potato mixture and mix well. Season to taste with salt and pepper. Transfer to prepared dish. Bake until heated through and cheese melts, about 20 minutes. Let cool 5 minutes; serve hot.
